SCRUMPTIOUS GRILLED HONEY / MUSTARD PORK LOIN
This was one delicious pork loin...loved the marinade, such a wonderful flavor ...would be just as good on chicken... If you don't own a grill, I'm sure broiling would be just as great... Enjoy!

Steps:
- 1. Mix all ingredients together in a bowl. Reserve 1/4 cup. Rinse and remove silver skin from loins. Pat dry.
- 2. In a large zip lock bag, place loins.
- 3. Pour mustard mixture over loins and seal bag. Making sure all are coated, squish the bag around a little. Place in refrigerator for at least 4 hours.
- 4. When ready to grill, turn on only half of your burners and oil the grids on the half of grill not lit. You will be using indirect heat.
- 5. Remove the loins from the marinade and place on grids and close the lid to the grill. As meat cooks, continue basting as you turn. Mine took roughly 30 minutes or continue grilling until desired doneness. Last few minutes give the loins one last basting. Leave the loins rest for 5 minutes, then dig in.
- 6. Delicious!

- Trim the fat from the pork and salt and pepper the pork tenderloin. In a small bowl whisk together olive oil, dijon mustard, honey, and garlic. Brush half of the sauce on the pork.
- Preheat the grill to medium high heat. Add the pork to the grill. Cook for 5-6 minutes on each side or until the pork reaches an internal temperature of 145 degrees. Brush remaining glaze on top of pork and serve with chopped parsley if desired.

HONEY-GRILLED PORK LOIN
I wanted something different for a cookout. This is so good, if you're having company, you'd better fix two. It's butterflied, so it increases marinated flavor and shortens grilling time. Everyone I fixed this for has asked for the recipe. I marinate in the morning to have ready for dinner.

Steps:
- Trim fat, butterfly roast by cutting lengthwise to 1/2 inch of other side.
- Place in dish or large zip-loc.
- Combine soy sauce, ginger, and garlic, pour over roast.
- Refrigerate 3 hours or more.
- turning occasionally.
- Remove roast, discard marinade.
- Combine brown sugar, honey and sesame oil in a saucepan.
- Cook over low heat until sugar dissolves.
- Coat grill rack with cooking spray.
- Place roast over medium hot coals (350-400°F).
- Brush with mixture.
- Cook 20-25 minutes or until meat thermometer reaches 160°F.
- Baste frequently.

HONEY-MUSTARD GLAZED PORK TENDERLOIN WITH GRILLED VEGETABLES

- In a bowl, mix together the soy, garlic, ginger, scallions, honey, Dijon, wine and oil. Toss with pork to coat well and let marinate for at least 4 hours, refrigerated. Pull the pork out of the marinade. Place marinade in a small saucepan and bring to a boil and reduce by 25 to 30 percent. Meanwhile, in a large, hot saute pan coated lightly with oil, pan sear the pork until brown on all sides, about 10 to12 minutes total. Glaze the pork every 3 to 4 minutes with the reduced marinade. In a large bowl, mix together the eggplant, zucchini, pepper, onion, sweet potato and fennel. Toss lightly with oil, season and place on hot grill. Cook vegetables until done, chop into 1-inch pieces and check for flavor.
- PLATING: On a dinner plate using an o-ring mold (3-inch diameter by 2 inches tall or a tuna fish can) fill with grilled veggies. Cut each tenderloin into 3 petit fillets and drizzle with reduced marinade.

- Wash the pork loin under cold water and pat dry with a paper towel. Take a fork and poke holes all over the loin, even the ends.
- Mixing all the wet ingredients in a small bowl, set aside. In another bowl, mix all the dry ingredients making sure the loin is dry, shake the dry ingredients all over the loin the front,back and the ends. Rub the dry seasoning on the loin making sure it is well covered and worked all in the loin.
- With a brush spread the wet ingredients all over the loin. Put the loin in a plastic bag,casserole dish or baking roaster and put back into frig for a minium of 12 hours, 24 is even better.
- Grill on low to medium heat until the thick part of the loin reaches 170. In a oven bake at 350 until the thickest part of the loin is 170. enjoy.

A wonderful recipe for grilling a pork roast during the hot days of summer. I've made this several times and it is delicious and easy. A large pork roast will last us thru the 2nd day as well making wonderful sandwiches.

- In a resealable plastic bag, combine thoroughly the Dijon-style mustard, honey, soy sauce, brown sugar, water and Worcestershire sauce until well blended.
- Place the boneless pork roast in the resealable plastic bag; mix together; seal the bag and refrigerate for about 2 hours or as long as overnight.
- Preheat grill to medium heat. Remove the pork roast from the bag; discard any remaining marinade; place the pork roast on the grill grids over indirect heat; close grill hood and grill for about 1 hour and 15 Minutes until internal temperature reads 160°F
- Remove pork roast from the grill, let rest for 10 minutes before slicing to serve.

- 1. In a large bowl, whisk together apple cider vinegar, olive oil, honey, mustard, garlic, salt, red pepper flakes, and pepper. Pour mixture into a large zip-top plastic freezer bag. Add the pork tenderloin. Seal the bag and make sure the pork is covered in the marinade. Chill in the refrigerator overnight, turning occasionally.
- 2. Remove the pork from the refrigerator and let come to room temperature before grilling. Discard marinade. Preheat grill to medium-high heat. Grill tenderloin, covered with grill lid, 8 to 10 minutes on all sides or until a meat thermometer inserted into thickest portion registers 150° to 155°. Remove tenderloin from grill, and let stand 10 minutes before slicing.
- 3. To make the honey mustard sauce, whisk together honey and Dijon mustard. Slice pork and serve warm with honey mustard sauce, if desired.
