SCOTCH BROTH (SCOTCH SOUP)

A super hearty, traditional Scottish soup made with lamb, lots of vegetables and barley.

Number Of Ingredients 11

one or two (85 g) lamb neck bones (use beef if you don't like lamb, but lamb is authentic)
1/2 cup (85 g) pearl barley (omit if making for a gluten free diet)
1/2 cup (85 g) dried split peas (soaked overnight, or boil for 5 minutes and let soak for 1 hour)
1 medium onion, diced
2 medium carrots, sliced
1 small rutabaga, diced (in the US) turnip (if you're in the UK)
1 small leek, cleaned and sliced
2 cups of shredded cabbage, about half of a small head (I like Savoy. Use kale if you don't like cabbage)
sea salt (or Diamond Crystal Kosher salt)
freshly ground black pepper
3 Tbsp chopped parsley, preferably fresh or frozen

Steps:

  • Put the lamb bones into a Dutch oven or large soup pot and add 8 1/2 cups (2 liters) of water, barley, split peas and 2 teaspoonfuls of salt.
  • Bring to a boil, then simmer over low heat for one hour, removing any scum which comes to the surface. Just in case you're not familiar with scumming a soup, this is what you want to remove and throw away.
  • While the broth is simmering, you can prepare the vegetables.
  • After an hour, the broth, barley and peas will look like this.
  • Add the chopped carrot, onion, leek and rutabaga to the broth and stir. Add another teaspoonful of salt and bring to a boil. When the soup begins boiling, lower the heat and let the soup simmer for another half an hour, stirring occasionally.
  • Chop/shred the cabbage while the soup is simmering.
  • At this point, the broth looks like this.
  • After simmering for half an hour, remove the lamb and add the shredded cabbage and continue to simmer for 15 minutes.
  • This is what a vegetarian/vegan Scotch broth will look like. However, if you've used lamb, remove the meat from the bones, shred into small pieces and add it back into the soup. Add the chopped parsley and remove from heat.
  • Stir well; taste and adjust seasoning. Ground black pepper is optional. Ladle into bowls while hot and serve immediately.

1 lamb shank (about 1 pound)
2 teaspoons canola oil
4 cups water
2 cans (14-1/2 ounces each) reduced-sodium beef broth
2 whole cloves
1 medium onion, halved
1 medium carrot, halved
1 celery rib, halved
1 bay leaf
1/4 cup minced fresh parsley
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1/4 teaspoon whole peppercorns
SOUP:
1/3 cup medium pearl barley
1-1/2 cups julienned peeled turnips (1-inch pieces)
1 cup coarsely chopped carrots
1 medium leek (white portion only), thinly sliced
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a Dutch oven, brown lamb shank in oil on all sides; drain. Stir in water and broth. Insert cloves into onion. Add the onion, carrot, celery and seasonings to the pan. Bring to a boil. Reduce heat; cover and simmer for 2 hours or until meat is very tender., Remove shank from broth; cool slightly. Remove meat from bone; cut into small pieces. Discard bone. Strain broth, discarding vegetables and seasonings. , Skim fat from broth. In a large saucepan, bring broth to a boil. Stir in barley. Reduce heat; cover and simmer for 40 minutes. , Add the turnips, carrots, leek, salt and pepper. Return to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Add lamb; heat through.

8 cups water
6 whole peppercorns
1-1/2 teaspoons salt

2 tablespoons extra-virgin olive oil
2 pounds boneless lamb shoulder in one piece, plus its bones
2 large yellow onions, peeled and quartered
3 celery stalks, coarsely chopped
3 medium carrots, peeled and coarsely chopped
2 medium leeks, washed and trimmed, white and light-green parts cut on the bias into 2-inch pieces, trimmings reserved
1/2 teaspoon whole black peppercorns
Coarse salt
12 parsley stems, plus 1/2 cup leaves, finely chopped
2 medium turnips, peeled and halved (about 1 pound)
1/2 cup pearl barley
1 1/2 pounds English peas, shelled, or 1 1/2 cups frozen peas

Steps:

  • Swirl oil into a large, heavy pot over medium-high. Add lamb, bones, and onions; cook until bottom sides of bones turn dark brown, 8 to 10 minutes. Flip, reduce heat to medium, and add celery and carrots. Continue cooking, turning occasionally, until lamb and vegetables are deep brown on all sides, 20 to 25 minutes. Add 12 cups water, leek trimmings, peppercorns, and parsley stems; season with salt. Bring to a boil; skim foam. Reduce heat and simmer, partially covered, until meat is fork-tender, about 1 1/2 hours. Remove from heat and let stand, uncovered, until fat begins to rise to surface, about 2 hours. Skim fat; strain stock through a fine-mesh sieve, reserving lamb. When lamb is cool enough to handle, trim excess fat, then cut into bite-size pieces and reserve, discarding bones.
  • Place stock in a clean pot; add turnips and barley. Bring to a boil, then reduce heat and simmer, partially covered, until barley is just tender and turnips are easily pierced with the tip of a sharp knife, about 20 minutes; transfer turnips to a cutting board. Add leeks to pot and simmer until tender, 5 minutes. Meanwhile, slice turnips lengthwise into 1/2-inch moons and return to pot, along with lamb and peas. Simmer until heated through. Serve, with chopped parsley alongside.

About 1 3/4-pounds lamb bones with most of the fat removed
3 quarts cold water
1 cup pearl barley
1 large carrot cut into 1/2-inch pieces (about 1 1/2 cups)
1 white or yellow turnip cut into 1/2-inch pieces (about 2 cups)
1 leek cleaned and cut (green leaves incuded) into 1-inch pieces (about 2 cups)
2 ribs celery cut into 1-inch pieces (about 1 1/2 cups)
1 onion peeled and cut into 1-inch pieces (about 1 1/2 cups)
12 ounces of cabbage cut into 2-inch pieces (about 5 cups)
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
Worcestershire sauce, for garnish (optional)

Steps:

  • Place the bones and water in a large saucepan or stockpot and bring to a boil over high heat. At the boil, skim off and discard any residue that rises to the surface of the water and continue to do so for the next 5 minutes. Then reduce the heat to low, cover and cook for 1 hour.
  • Skim again and discard any surface fat and scum. Add the barley and bring to a boil. Cover and cook over low heat for 45 minutes.
  • Using tongs or a skimmer, remove the bones from the pot and set them aside. Add the remaining ingredients to the pot and bring the mixture to a boil. Boil gently, covered, for 30 minutes. Meanwhile, when the reserved bones are cool enough to handle, pick any meat from them and add it to the pot.
  • Serve the soup in large bowls, sprinkling each serving with a little Worcestershire sauce, if desired.

This is what I consider the ultimate beef soup. Great on a frosty day. For beef stock, I use 2 1/2 quarts water and 6 teaspoons beef base. Also, use inexpensive red wine. No need for the good stuff here, and cheaper actually works better! Try with leftover pot roast.

1 tablespoon vegetable oil
1 ½ cups chopped onion
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
10 cups beef stock
¾ cup barley
1 bay leaf
3 sprigs fresh thyme, chopped
½ cup red wine
2 cups cubed potatoes
2 cups diced cooked beef
1 teaspoon browning sauce
1 ½ cups chopped cabbage
salt and pepper to taste

Steps:

  • In a large pot over medium heat, combine the oil, onions, celery, carrots, and garlic. Saute for 5 minutes, or until tender. Add the beef stock, barley, bay leaf and thyme and simmer until barley is softened but not mushy. Add the wine, potatoes and beef.
  • Add the browning and seasoning sauce now if you want your soup to have more of a brown color. Simmer another 15 minutes and add the cabbage. Allow to simmer another 15 minutes, or until all vegetables are tender. Salt and pepper to taste.

A leg of lamb bone, cracked (with meat on it)
2 or 3 medium onions, whole
6 stalks of celery, diced
6 carrots, diced
1 garlic clove
1/2 cup pearl barley
salt, pepper, parsley, and some celery leaves

Steps:

  • Wash barley first. Put in kettle and add other ingredients. Cover with water. Cook slowly at least four hours. Soup should cook down until quite thick. Refrigerate for at least four hours. Add water when reheating to serve. Correct seasoning at that time and remove meat bone and celery leaves before serving.

I grew up eating Campbell's Scotch Broth soup but when I tried it as an adult it was lacking. So I came up with my own version. This is a hearty soup for a cold day. Note: I usually make this soup ahead of time so I can refrigerate it and skim off any fat from the lamb.

2 lbs lamb stew meat, with bones (neck bones)
2 cups water
5 cups beef broth
1 bay leaf
1 1/2 stalks celery, 1/2-inch dice
1 large carrot, peeled and cut into 1/2-inch dice
1 turnip, peeled and cut into 1/2-inch dice
1 onion, diced
1 leek, white and light green part only, cut into 1/4-inch slices
1/4 teaspoon dried thyme
1/2 cup barley
salt
pepper
garlic powder

Steps:

  • Season the lamb with salt, pepper and garlic powder.
  • Place the lamb in a baking pan and brown both sides of the lamb under the broiler.
  • Put the beef broth, water, bay leaf and lamb into a soup pot.
  • Bring to a boil, reduce heat and simmer, covered, for 1 hour.
  • Remove the bay leaf and lamb from the pot, allow to cool slightly and remove the meat from the bones. Discard the bones and bay leaf.
  • Return the meat to the pot and add the vegetables, barley and thyme.
  • Cover and simmer for 1 hour.
  • Add salt and pepper to taste.

Old Thyme Turkey Scotch Broth With Barley, Beans and Lentils image

A fabulous and hearty way to serve the leftovers from your celebration turkey! A light Scotch broth style soup with added pearl barley, swede (rutabaga), potatoes and assorted beans and lentils. You can add any vegetables that you have available; leeks and celery are also great in this broth. I use a special dried pulses mixture that I buy in the UK called Soup and Broth Mix - this is made up of mixed dried peas, mixed dried beans, mixed lentils, mixed dried vegetables and pearl barley. This broth can be frozen, but ONLY if the turkey was fresh and not frozen before roasting - and once defrosted, it can only be reheated once. I have used a high proportion of pulses to broth ratio in this recipe, as we like it very thick and chunky - please adjust the pulses to your own requirements and preferences.

leftover whole cold roast turkey
4 pints water
1 bunch fresh thyme
2 onions, peeled and diced
2 large carrots, peeled and diced
1 small swede or 1 small rutabaga, peeled and diced

6 ounces mixed dried pulses, such as split peas, dried beans, red lentils, green lentils, and brown lentils
2 ounces pearl barley
thyme
salt and pepper
1 large leek, cleaned and cut into small pieces (optional)
1 stalk celery, cleaned and diced (optional)

Steps:

  • THE NIGHT BEFORE:.
  • Soak ALL of your dried pulses, beans, lentils and pearl barley overnight. The next morning/day or just before making the broth - discard the water and rinse the pulses well; set to one side until needed.
  • TO MAKE THE TURKEY STOCK.
  • Cut up the turkey in small pieces, place in a large stockpot or saucepan with the thyme and add to the water.
  • Simmer slowly until the bones are quite clean.
  • Take the bones out, discard the skin, and put all the turkey meat to one side; then work the stock through a sieve, making sure there are no small bones left in the stock.
  • When cool, skim the fat of the top.
  • You will be left with turkey stock and chunks of turkey meat.
  • TO MAKE THE BROTH.
  • Place the turkey stock back into a large stockpot or saucepan, then add the turkey meat, and any other cold cuts of turkey you may have.
  • Add the diced onion, diced carrots, diced swede (rutabaga), diced potatoes and all the soaked pulses and the pearl barley. Mix well.
  • Simmer for about 45 minutes to 1 hour, or until the vegetables are soft and the pulses are cooked and do not have a "bite" to them.
  • Add the fresh thyme, then the salt and pepper to taste; simmer for a further 10 to 15 minutes or until piping hot, but NOT boiling.
  • Serve with dumplings, fresh crusty bread, crackers or assorted bread rolls.
