Baked Apple Breakfast Treat (Sugar Free) image

I have been making this so long, I don't remember where I got it from. Be careful of the Almond Extract - too much will make it bitter

1 apple (your favorite type)
1/3 cup low fat cottage cheese
2 tablespoons Splenda sugar substitute
1/8 teaspoon almond extract
1/2 teaspoon apple pie spice
1/4 teaspoon cinnamon, ground or 1/4 teaspoon apple pie spice

Steps:

  • Cut the apple into 8 even slices, removing the core and seeds.
  • Arrange the slices in a microwave safe bowl, sprinkling with 1 Tablespoon Splenda and the apple pie spice.
  • Cover and cook 1 1/2 - 2 minutes on high in the microwave.
  • While apple is cooking, stir the almond extract and the other tablespoon of Splenda into the cottage cheese.
  • After removing apple from the microwave, spoon the cottage cheese on top of the apple. Sprinkle cinnamon on the cottage cheese.

An old recipe that I just stumbled over again. Tastes great on homemade biscuits. With some grits and eggs and you have a real "southern" breakfast treat.

1 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
4 -5 large cooking apples (such as Granny Smith)
2 tablespoons water
1/4 cup butter

Steps:

  • Combine sugar, cinnamon and nutmeg.
  • Pare apples and chop into bite sized pieces.
  • Put in a 4 C measure and sprinkle with cinnamon and sugar as you add the apples.
  • When you have 4 cups, put apples, water and butter into a saucepan.
  • Cover and cook over low to medium heat, stirring once or twice, for 15-20 minutes or until apples are tender.

2 pork chops or 2 pork steaks
2 medium apples
cinnamon
butter
honey

Steps:

  • Brown pork chops (or pork steaks) in a fry pan.
  • Peel, core, and slice apples. Place them into the bottom of a small casserole dish.
  • Sprinkle the apples with cinnamon and dot with a small amount of butter (butter is optional since the meat probably contains sufficient fat).
  • Drizzle with apples with honey.
  • Lay the meat on top of the apples.
  • Bake covered at 400 degrees F (220 C) for 20 minute
  • Remove top and bake until pork is done but still moist (approx. 30 additional minutes).

A PRETTY DISH to have with any meal or for guests. Cinnamon, brown sugar and butter enhance these apples and make a good autumn harvest side dish. To give color use craisins instead of raisins. Kids enjoy eating apples this way.

4 apples
4 tablespoons raisins (or craisins)
4 tablespoons brown sugar
1/2 teaspoon cinnamon
4 teaspoons butter

Steps:

  • Remove core and seed from each apple. Cut top peeling off each apple. Poke a knife in the side of each apple several times. As the apples bake this keeps the apples from breaking apart and gives an air vent.
  • Arrange apples in a baking dish and stuff each core with raisins.
  • Mix brown sugar and cinnamon and spoon over raisins. Dot each with a teaspoon of butter.
  • Cover with a foil "tent" and bake in a 375 degree oven for 35 to 40 minutes.
  • Note: Before baking a teaspoon of maple syrup (breakfast type) could be added to each core and let ooze down.
