1 kg prepared fresh tortellini
125 g thinly sliced prosciutto
1 tablespoon olive oil
1 onion, finely chopped
1 garlic clove, crushed
2 cups vegetable stock, heated
150 g Philadelphia Cream Cheese, cubed and softened
2 zucchini, cut into ribbons using a vegetable peeler
100 g blue cheese, crumbled
shaved parmesan cheese, to serve

Steps:

  • Cook tortellini in a large saucepan of boiling water according to packet directions. Drain. Return to saucepan.
  • Place prosciutto on a lined baking tray and bake at 180°C for 5-8 minutes, until crisp. Remove and break into pieces.
  • Heat the oil in a large non-stick frying pan over medium heat. Add onion and garlic and sauté for 3 minutes or until softened. Gradually whisk the stock into the Philly* until smooth. Add to the frying pan along with the zucchini and simmer for 5 minutes or until sauce has thickened. Remove from heat. Stir through blue cheese and half the prosciutto. Pour cheese sauce over tortellini and toss to coat. Divide mixture amongst serving plates and top with remaining prosciutto and Parmesan.

1 (10 ounce) package frozen chopped spinach, thawed and drained
cherry tomatoes, halved

Steps:

  • Cook tortellini according to package directions.
  • Heat butter in a large skillet over medium heat. Stir in onion; cook until soft and translucent. Mix in cream cheese, parmesan, milk, mushrooms, and spinach.
  • Gently mix in tortellini and cherry tomatoes with skillet contents; warm through, and serve.

2 tablespoons garlic, minced
1/4 teaspoon thyme
1/2-1 teaspoon lemon pepper
1 (16 ounce) package cheese tortellini
2 teaspoons cornstarch
2/3 cup heavy cream
1 bunch asparagus, trimmed and thinly sliced diagonally in 1 1/2 inch pieces (3/4 pound)
3/4 cup grated parmigiano-reggiano cheese

Steps:

  • Boil broth with garlic, thyme and lemon pepper in a large heavy skillet until reduced to about 1 cup, about 6 minutes or so.
  • Meanwhile, cook tortellini in a pasta pot of boiling salted water (1 1/2 tablespoons salt for 4 quarts water) according to package directions. Drain.
  • Stir cornstarch into cream, then whisk into broth. Bring to a simmer, whisking, then continue to simmer 1 minute. Add asparagus and simmer until crisp-tender, about 2 minutes. Stir in cheese and tortellini and cook, gently stirring, until heated through.

This is a super easy dish, and adds a little spice to the usuals maranara or bolognese sauce by using taco seasoning instead. I'm a big fan of creamy sauces, as well, so of course this is a hit. Try using fetuccini or ravioli or any other type of pasta if you'd like.

1 (12 ounce) bag tortellini (or pasta of choice)
1 tablespoon olive oil
1 lb chicken breast
2 minced garlic cloves
1/4 cup of chopped onion
1 1/4 ounces taco seasoning
1 cup whipping cream
1/4 cup parmesan cheese

Steps:

  • Cook tortellini as directed on package; drain.
  • In 12-inch skillet, heat oil over medium-high heat until hot. Add chicken; cook 4 to 5 minutes, stirring occasionally, until chicken turns white.
  • Stir in garlic and taco seasoning mix. Cook 1 minute.
  • Stir in cream. Reduce heat to low; cook 3 to 5 minutes, stirring constantly, until thoroughly heated.
  • Stir in 1/4 cup cheese.

This is an amazing, creamy, savory pasta dish. NOT for those on a diet. The virginia sweet ham with the parmesan cheese make a great pair. You can substitute any flavor stuffed tortellini for the cheese that I use. I use the filled Buitoni tortellini in the refridgerated section.

4 slices ham, diced
24 ounces heavy whipping cream
530 g cheese tortellini

Steps:

  • Boil tortellini according to packages.
  • Melt butter in large high sided skillet over medium high heat.
  • Add ham to pan and cook through.
  • Add heavy whipping cream and heat for 7-8 minutes stirring regularly.
  • Sprinkle two dashes of nutmeg and add parmesan cheese and stir inches.
  • Reduce heat to low and cook for another 4-5 minutes.
  • Add drained tortellini to sauce before serving.

1 tablespoon minced parsley
1/4 teaspoon pepper

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a large saucepan, combine marinara sauce and cream. Gradually add flour and water until smooth. Bring to boil; cook and stir for 2 minutes or until thickened.
  • Add artichoke, thyme, and oil. Reduce heat; simmer, uncover for 3-4 minutes or until heated throughly.
