WONTON FILLING

Steps:
- Place half the shrimp and pork in a food processor, along with the ginger and all of the seasonings, then blend together. Chop the remaining shrimp and add it to the blended mixture, along with the scallions. Mix well. Put a teaspoon of the shrimp mixture into the middle of a wonton wrapper and close it tightly with your fingers, brushing the edges with a little water to help them stick if necessary. As you wrap each wonton, place it on a plate covered with a thin layer of flour to prevent sticking. Bring a pot of water or broth to a boil and cook the wontons in batches, for around 5 minutes. When they are cooked, they will float to the top of the pot. Your wontons are now ready to serve.

EASY WONTONS
I experimented with different wonton recipes, until I came up with this one. These are a favourite in my home & disappear very quickly! You can deep fry these if preferred. I buy my wonton wrappers from Asian supermarkets.

Steps:
- In a bowl mix together pork mince, cabbage, spring onions and chillies.
- Add garlic, ginger, hoisin sauce, oyster sauce and sesame oil; stir until well combined.
- Separate wonton wrappers and lay on a clean surface.
- Place 1- 2 teaspoons of mixture in centre of each wrapper; brush edges with water.
- Bring corners of wrappers together and pinch tightly to seal.
- Bring a saucepan of water to the boil, place a bamboo steamer lined with greaseproof paper on top.
- Place 5- 6 wontons in steamer and steam over simmering water for about 8 minutes, or until cooked.
- Serve with soy sauce or dipping sauce of choice.

WONTON FILLING

- In a medium bowl, toss cabbage with 1/2 teaspoon salt. Let stand 10 minutes. Wrap cabbage in a double layer of paper towels; firmly squeeze out excess liquid. Return cabbage to bowl; add pork, scallions, ginger, soy sauce, and sesame oil. Mix well with a fork. Refrigerate leftover filling up to 2 days.
MEAT FILLED WONTON SKINS
Steps:
- Mix pork with sesame oil and soy sauce. (Saute first if you wish). Add salt, pepper, egg and scallion. In a vegetable steamer, steam bean sprouts, cabbage, carrot and garlic for 5 minutes or until tender. Cool, squeeze out moisture and chop into a mince. Add to pork mixture. Filling is ready.;
BEEF WONTONS
Wontons with a juicy beef and cheese filling. Serve with sweet and sour sauce.

Steps:
- Heat 1 tablespoon olive oil in a pan over medium-high heat. Add onion and garlic; saute for 5 to 7 minutes. Add beef, cumin, salt, and pepper; cook and stir until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Pour beef mixture into a large bowl and add sour cream and Monterey Jack cheese. Mix well.
- Lay out wonton wrappers and add 1 teaspoon of filling to each. Wet your fingertips and seal wraps, folding ends diagonally and folding and pinching corners.
- Heat 1/2 inch of oil in a frying pan over medium heat. Deep-fry wontons in the hot oil, 2 to 3 minutes each. Drain on paper towels.

Steps:
- Combine pork, garlic, ginger, soy sauce, sesame oil, and vegetables in a bowl.
- Separate wonton skins.
- Place a heaping teaspoon of filling in the center of the wonton.
- Brush water on 2 borders of the skin, covering 1/4 inch from the edge.
- Fold skin over to form a triangle, sealing edges.
- Pinch the two long outside points together.
- Heat oil to 450 degrees and fry 4 to 5 at a time until golden.
- Drain and serve with sauce.
CREAM CHEESE WONTONS
These Easy Cream Cheese Wontons are the perfect side dish to any Asian-inspired meal.

- Fill a large pot over medium-high heat with vegetable oil until the oil is 2 inches deep. Oil should be around 350 degrees F.
- In a mixing bowl, combine cream cheese, garlic powder, sugar and green onion.
- Place wonton wrappers on a clean, flat surface.
- Drop a teaspoon of cream cheese mixture in the middle of each wonton wrapper.
- Beat egg and brush the edges of the wonton wrappers with egg.
- Pinch the corners of each wonton wrapper together in the center.
- Place 6-8 wontons at a time in the hot oil, turning them as needed, until evenly browned (about 3-5 minutes).
- Carefully remove wontons from hot oil and place on a plate covered with a paper towel to absorb excess oil.
- Serve with sweet and sour sauce.

- Mix chicken, egg, green onion, soy sauce, sesame oil, vegetable oil, and salt in a large bowl until evenly combined.
- Scoop about 1 teaspoon chicken mixture and place into the center of a wonton wrapper. Moisten 2 adjacent edges of the wrapper with water and fold into a triangle. Connect the two lower points of the wrapper and moisten to seal and make a hat shape. Repeat with remaining chicken and wonton wrappers.
- Bring a large pot of water to boil. Stir wontons into boiling water. Add 1/2 cup cold water and allow water to return to a boil. Repeat boiling with another 1/2 cup cold water. Wontons are ready when chicken is no longer pink in the center, about 5 minutes. Drain.
