1 cup butter, softened
3/4 cup packed brown sugar
1 large egg, separated
2 cups all-purpose flour
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolk. Gradually add flour until blended. , Shape into 1-in. balls. In a small bowl, beat egg white. Dip balls in egg white, then roll in pecans. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake at 375° for 8-12 minutes or until edges are lightly browned. Remove from pans to cool on wire racks.

My good friend, who is from Northern Europe, shared this recipe with me. The outside of these light cookies are crusted with chopped pecans.

Number Of Ingredients 5

1 cup butter, softened
3/4 cup packed brown sugar
1 egg, separated
2 cups all-purpose flour
1/2 cup finely chopped pecans

Steps:

  • Cream the butter, sugar, and egg yolk together until well combined.
  • Gradually stir in the flour.
  • Beat the egg white until frothy.
  • Roll the dough into 1in. balls. Dip into the egg white, the roll in the chopped pecans.
  • Place 2 inches apart onto ungreased baking sheets; flatten slightly.
  • Bake at 375*F (190*C) for 9-12 minutes or until the edges are lightly browned. Remove to wire racks to cool.

1/2 cup broken pecan nut meats

Steps:

  • Preheat oven to 350 degrees F. Cream together sugar and butter. Stir in 1 egg and add other ingredients. Drop from a teaspoon onto parchment-lined cookie sheets at least 3 inches apart. Bake for 8 to 10 minutes. Cookies will spread, will be thin and subject to sticking. Remove carefully while still a little warm.

Steps:

  • Preheat oven to 350.
  • Mix all ingredients together at once.
  • Form into balls.
  • Press down with glass dipped in sugar and top with nuts or candied cherry or dip balls in crushed nuts and press cherry into top. Bake at 350 degrees for 10-12 minutes.

Cardamom is a much-loved spice used in Scandinavian baking. These cookies make good use of it. Bake up a batch now to enjoy with your favourite ice cream or alone, with a glass of milk.

1 cup softened butter
3/4 cup sugar
1 egg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon ground cardamom
3 cups all-purpose flour
sugar, for dusting tops

Steps:

  • Preheat oven to 350°F.
  • Beat the butter until creamy. Beat in the sugar until well blended.
  • Stir in the egg, then the salt, cardamom, vanilla extract, and almond extract.
  • Slowly add the flour, blending well.
  • Refrigerate the dough for 30-90 minutes. Take out only enough to work with at one time.
  • Roll to 1/8" thickness on a lightly floured board. (Flour the rolling pin lightly, too, or use a rolling pin cover.) Cut the dough with floured cutters.
  • Place cookies on ungreased baking sheets (optional: use parchment paper). Leave a little room between cookies. Dust with the sugar of your choice and bake at 350°F for 11-15 minutes until lightly browned at edges. Remove cookies from baking sheets after 1-2 minutes and let them cool.
  • These cookies may be frozen. You can refrigerate the dough or even freeze it for later use.

And at his New York restaurant Aquavit, the deliciously chewy, spicy treats have been handed out as Christmas gifts. Adapted from Mom's Secret Recipe File, edited by Chris Styler. Number Of Ingredients 15

1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon cardamom, ground
1/4 teaspoon ground cloves
3 1/2 cups all-purpose flour
1 tablespoon baking soda
1 teaspoon salt
1/2 teaspoon white pepper
10 tablespoons unsalted butter, at room temperature
1 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
3/4 cup molasses
100 g candied citron peel, finely chopped (about 1/2 cup)
icing sugar (optional)

Steps:

  • Line 2 baking sheets with parchment.
  • Toast ginger, cinnamon, cardamom and cloves in small skillet on medium heat, stirring frequently, until fragrant, 1 to 2 minutes then remove from heat.
  • Sift flour, toasted spices, baking soda, salt and pepper into medium bowl.
  • In large bowl, cream butter and sugars until fluffy, 2 minutes using electric mixer on medium speed.
  • Beat in eggs one at a time, blending well.
  • Beat in molasses scraping bowl as needed.
  • On low speed, beat in flour mixture until moistened and clumped.
  • Stir in citron.
  • Scoop rounded tablespoons of dough and dollop onto prepared sheets, spaced at least 3 inches apart. (For tidier cookies, briefly toss each dollop in lightly greased hands to form an uneven round and return to sheets.).
  • Bake on racks just above and below centre of preheated 350F oven until tops look dry, about 10 minutes, switching pans on racks at halftime. Remove from oven.
  • Sit pans on cooling racks for 2 minutes.
  • Gently transfer cookies to racks to cool completely.
  • Repeat with remaining dough.
  • Arrange cookies on serving platter and dust with icing sugar (if desired).

1 cup cake flour
¼ teaspoon salt
⅛ teaspoon baking powder
½ cup butter, softened
½ cup white sugar
1 teaspoon vanilla extract
24 whole pecans

Steps:

  • Sift cake flour, salt, and baking powder into a medium bowl.
  • Combine butter, sugar, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add dry ingredients and mix thoroughly. Shape dough into a 1-inch diameter log, wrap with plastic wrap, and place in the refrigerator until firm, 1 hour to overnight.
  • Preheat the oven to 275 degrees F (135 degrees C). Line 2 cookie sheets with parchment paper.
  • Remove dough from the refrigerator and slice into 24 slices. Place on the prepared cookie sheets and press a pecan firmly into each slice.
  • Bake in the preheated oven until edges are golden, about 40 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1 cup vegan margarine, room temperature (recipe's author uses Earth Balance)
1/2 cup confectioners' sugar
1 tablespoon water
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup pecans, chopped

Steps:

  • Cream earth balance vegan margarine with 1/4 cup powdered sugar, add water and vanilla and mix.
  • Add flour and mix well.
  • Finally mix in pecans. (The batter will appear dry!).
  • Form into 1-inch diameter balls, place on an ungreased cookie sheet and chill for one hour.
  • Bake in a slow oven (roughly 300 degrees Fahrenheit) for 20 minutes or until lightly browned.
  • While still hot, roll in remaining confectioners' sugar.
  • Store in an airtight container.
