3/4 lb bacon, sliced
6 eggs
2/3 cup half-and-half
1 1/2 tablespoons flour
1 tablespoon dill, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chives, sliced

Steps:

  • Fry bacon until nearly crisp. Remove and drain on paper towels. Reserve 1 T bacon grease.
  • Whish together eggs, half and half, salt and pepper.
  • Heat bacon grease in skillet. Add eggs and reduce heat to very low.
  • Let eggs cook until a firm custardy consistency. It will take about 20 minute.
  • Don't let the bottom burn.
  • Lay bacon strips across top or chop bacon and sprinkle around top.
  • Sprinkle with dill and chives or you can use sliced green onion tops.
  • Cut in wedges to serve.

Three 8-ounce packages cream cheese, at room temperature
1 packet ranch seasoning
1 1/4 cups mayonnaise
1 large country white boule
2 tablespoons Dijon mustard
4 thin slices Cheddar
4 ounces thinly sliced deli ham
4 ounces thinly sliced deli turkey
2 cups shredded iceberg lettuce
4 strips cooked bacon
1 medium tomato, sliced
1 cup potato chips
1/2 cup prepared chicken salad
1 bunch radishes, very thinly sliced on a mandoline
1 cucumber, very thinly sliced on a mandoline

Steps:

  • In a stand mixer (or with an electric hand mixer), beat together the cream cheese, ranch seasoning and 1 cup of the mayonnaise until easily spreadable. Put one-third of the mixture into a piping bag with a star tip.
  • With a serrated knife, trim the sides of the boule until it is an even cylinder. Cut the cylinder across the radius into four 1-inch slices. Choose a serving platter and place a slice of bread in the center for the bottom layer. Position 4 squares of parchment underneath the bread to keep the serving platter clean once you begin icing.
  • Spread 1 tablespoon of the mustard onto the top of the bread. Top with the Cheddar, then the ham and turkey. Add half of the lettuce on top of the turkey. Spread the remaining 1 tablespoon mustard on one side of another slice of bread, then place it mustard-side down on top of the lettuce.
  • Spread the top of the bread with 2 tablespoons mayonnaise. Top with the bacon, tomato and remaining shredded lettuce. Spread the remaining 2 tablespoons mayonnaise on a third slice of bread, then place it mayonnaise-side down on top of the lettuce. Next, cover the top of the bread with the potato chips in a single layer. Top the potato chips with the chicken salad and then the last slice of bread.
  • With a knife or offset spatula, spread the cream cheese mixture along the top and sides of the cake evenly. Pipe rows of stars onto the top and bottom edge of the cake.
  • Decorate the cake using radish and cucumber slices in a ring around the top and bottom of the cake. Shape the remaining radish and cucumber slices into roses and press into the top of the cake.
  • Serve chilled or at room temperature. Can be made ahead and refrigerated for 1 to 2 hours.

1/4 to 1/2 cup buttermilk
Juice of 2 limes
2 avocados
1 rotisserie chicken, shredded
4 slices cooked bacon, chopped
3 tablespoons chopped fresh chives
3 scallions (white and green parts), sliced
Kosher salt
Pimento Cheese:
2 cups grated Cheddar
1/2 cup mayonnaise
3 tablespoons chopped pimento
Ham Salad:
1 pound deli ham, processed in food processor
2 tablespoons Dijon mustard
6 bread and butter pickles, minced
2 stalks celery, minced
2 scallions (white and green parts), minced
1 small red onion, minced
1 pickled jalapeno, seeded and minced
Kosher salt and freshly ground pepper
Ranch Frosting:
3 pounds cubed cream cheese
1/2 to 3/4 cup buttermilk
1 tablespoon white wine vinegar
1 clove garlic, grated on a rasp
1 tablespoon grated onion
1 pain de mie, crusts removed and sliced horizontally into 4 pieces
Toppings: sliced radishes, cucumber flowers, carrot flowers, sliced hard-boiled eggs, tomato flowers, parsley leaves, dill leaves, chives, etc.

Steps:

  • For the avocado chicken layer: Add the buttermilk, lime juice and avocados to a bowl. Mash the avocado until everything is combined. Fold in the chicken, bacon, chives and scallions. Season with salt and set aside.
  • For the pimento cheese layer: Add the Cheddar, mayonnaise and pimento to a bowl and stir to thoroughly combine. Set aside.
  • For the ham salad layer: Add the ham, mayonnaise, Dijon mustard, pickles, celery, scallions, onion, jalapeno and some salt and pepper to a bowl. Stir to combine and set aside.
  • For the ranch frosting: In the bowl of a stand mixer fitted with a paddle attachment, or using an electric hand mixer, mix the cream cheese until the cubes have combined. Add the buttermilk, white wine vinegar, garlic and grated onion and stir to combine.
  • To assemble: Add desired layers between each bread layer. Spread a crumb coat of the ranch frosting to seal the cake, then add another layer of frosting to cover the cake. Decorate as desired with various toppings.

1 (12 ounce) can evaporated milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large skillet over medium heat, fry bacon pieces until crisp; remove to paper towels. Reserve half of bacon drippings, and set aside. Return skillet to stove; stir onions, and cook until soft and translucent.
  • In a large bowl, stir together reserved drippings, bacon, onion, and potatoes. Mix in flour, evaporated milk, and eggs. Season with salt and pepper to taste.
  • Pour into baking dish, and bake in a preheated oven until top is nicely brown, about 1 hour. Cut into squares, and serve with sour cream, if desired.

Steps:

  • Preheat oven to 375°F.
  • Cut 4 slices of bacon in half.
  • Cut remaining bacon into 2" pieces.
  • Place all bacon in a 10" oven-proof skillet and cook until crisp.
  • Drain on paper towels, shaping the 8 large pieces into curls.
  • Tilt frying pan to coat with fat.
  • Drain excess fat.
  • Line pan with small pieces of bacon.
  • Beat eggs with flour, 3 teaspoons chives, salt and pepper.
  • Beat in milk.
  • Pour over bacon in pan.
