HAMBURGER POTATO CASSEROLE
This is a recipe that my Grandmother used to keep me and my finicky cousins well fed! It is very kid friendly, and adults like it too!

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium skillet over medium heat, brown the ground beef; drain fat.
- In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
- Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

One dish meal that is really good. I made this for a meal while visiting my daughter & her family in Germany. Everyone loved it, even my 2 & 4 year old Granddaughters!

Steps:
- Brown hamburger, chopped onion and pepper together in a skillet.
- Wash and slice the potatoes with the skins left on.
- Stir together all the soups & corn in a large casserole pan.
- Add browned hamburger and potatoes to the soup mixture and stir well.
- Bake at 375 degree oven for approximately 2 to 2 1/2 hours.
- Stir a couple times during baking.
- I usually have it covered the 1st hour, then leave it uncovered the remaining time.
- This is one of those recipes that I never had a recipe to follow, I just knew the ingredients from my mom making it when I was a child. The hamburger amount could vary from 1 to 2 lbs & the potatoes could be anywhere from 4-8 depending how much you want to make. Also could add an extra can of cream corn if making a larger amount of hamburger & potatoes.
- I have also made it in my crock pot; starting out the 1st hour in the oven, then finishing it off in the crockpot on low for 3-4 hours because I brought it to work for a potluck.

BEST HAMBURGER POTATO CASSEROLE RECIPE

- Preheat the oven to 350 F (176 C).
- Heat a large nonstick skillet over medium heat, add the ground beef and onion, and cook until the beef is no longer pink (about 10 minutes). Once it's finished cooking, remove the beef from the pan, discard any grease, and wipe out the skillet.
- Return the skillet to the stove on medium heat, and add the butter. Once the butter is melted, add the garlic and saute for about 2 minutes (or until it's aromatic).
- Turn the heat down to medium-low and whisk in the flour (mix until the flour and butter have combined and reached an even texture). In a large bowl (or large liquid measuring cup), mix together the milk and chicken broth, then whisk the liquid into the butter and flour roux, about 1/3 cup at a time at a time. In between each addition of liquid, whisk until the sauce has reached a smooth consistency. Continue until all the liquid is incorporated into the sauce.
- Once all the liquid has been added and the sauce is smooth, whisk in the parsley, thyme, salt, and pepper. Bring sauce to a light boil over medium-high heat for about 1 minute to thicken, then stir in 1 cup of the shredded cheese.
- Lightly grease an 13 x 9 casserole dish and lay 1/3 of the potatoes evenly along the bottom of the pan. Sprinkle the potatoes with salt and pepper, then spread 1/3 of the sauce and 1/3 of the ground beef evenly over the potatoes.
- Repeat this step two more times, creating 3 layers. Add the rest of the shredded cheese to the top layer. Cover the casserole with aluminum foil (make sure that the foil isn't touching the casserole so that the cheese doesn't stick to it), and bake for 1 hour.
- After 1 hour, remove the foil from the dish, and bake for another 15 minutes. Finish it off by broiling it for 3 - 4 minutes (or until the cheese is bubbling and golden brown in some areas).
- Carefully remove the casserole from the oven and allow it to rest for 15 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11-inch baking pan.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Mix 1 can cream of mushroom soup, mushrooms, 3/4 cup milk, seasoned salt, and black pepper in a bowl; fold in potatoes.

- Slice potatoes in rounds (like potato chips), then boil about 15 min or until slightly tender.
- While potatoes boil, cook hamburger in skillet, and heat up soup (reason to heat soup is that its less lumpy when mixed).

KITTENCAL'S SCALLOPED POTATO AND GROUND BEEF CASSEROLE
Sliced potatoes in a delicious creamy sauce on the bottom then topped with a ground beef mixture --- instead of layering the potatoes you can just mix them with the sauce in a large bowl transfer to the baking dish then top with the ground beef mixture either way is fine but the potatoes will cook a little faster if mixed with the sauce --- feel free to throw in some cooked chopped green beans, mushrooms, corn niblets to the ground beef mixture or whatever you wish, I also like sprinkle some grated cheddar cheese over the potato mixture before topping with the ground beef and then again after the casserole has been cooked, this casserole is very versatile and you don't have to worry about the exact amounts --- to save time you may cook the ground beef mixture a day ahead and refrigerate, all ingredients may be reduced to half if desired to yield 4-6 and baked in a smaller baking dish--- NOTE some of the reviewers are stating that the potatoes are taking a long time to cook so you may want to pop them in the microwave first just to soften slightly,

- In a skillet cook the ground beef with onion, bell pepper and chili flakes (if using) until no longer pink; drain fat over a colander.
- Return to pan and add in garlic, season salt and black pepper; cook stirring with a wooden spoon until the meat is lightly browned (I usually add in about 1-2 tablespoons bacon fat that I keep frozen in my freezer to the meat while browning for added flavor and it also helps to brown the meat) set aside.
- For the sauce; in a medium bowl mix together the undiluted soup with onion, milk, sour cream, Parmesan cheese, garlic powder, seasoned salt and black pepper to taste; mix well to combine.
- In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top.
- Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills.
- Bake covered with foil for about 1 hour at 350 degrees F.
- Uncover and continue baking for another 20-30 minutes or until the potatoes are tender (baking time will vary depending on the thickness of your sliced potatoes).
- Remove from oven then sprinkle with grated cheddar cheese; return to oven for 4-5 minutes or until the cheese has melted.
