This is a recipe that my Grandmother used to keep me and my finicky cousins well fed! It is very kid friendly, and adults like it too!

1 pound lean ground beef
3 cups peeled and thinly sliced potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped onion
¾ cup milk
salt to taste
freshly ground pepper, to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, brown the ground beef; drain fat.
  • In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
  • Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

1 1/2 lbs hamburger
1/4 cup chopped onion
1/4 teaspoon pepper
6 medium potatoes
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1 (15 ounce) can creamed corn

Steps:

  • Brown hamburger, chopped onion and pepper together in a skillet.
  • Wash and slice the potatoes with the skins left on.
  • Stir together all the soups & corn in a large casserole pan.
  • Add browned hamburger and potatoes to the soup mixture and stir well.
  • Bake at 375 degree oven for approximately 2 to 2 1/2 hours.
  • Stir a couple times during baking.
  • I usually have it covered the 1st hour, then leave it uncovered the remaining time.
  • This is one of those recipes that I never had a recipe to follow, I just knew the ingredients from my mom making it when I was a child. The hamburger amount could vary from 1 to 2 lbs & the potatoes could be anywhere from 4-8 depending how much you want to make. Also could add an extra can of cream corn if making a larger amount of hamburger & potatoes.
  • I have also made it in my crock pot; starting out the 1st hour in the oven, then finishing it off in the crockpot on low for 3-4 hours because I brought it to work for a potluck.

If you love scalloped potatoes, this easy hamburger potato casserole is the meal for you! It takes beef and potatoes to a new level!

1 pound lean ground beef
1 medium onion (finely diced)
1/4 cup butter
2 medium cloves garlic (minced)
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup chicken broth
1 teaspoon dried thyme leaves
1 teaspoon fine sea salt (plus more to taste)
1/2 teaspoon dried parsley
1/2 teaspoon ground black pepper (plus more to taste)
3 pounds russet potatoes (sliced into rounds about 1/4" thick - to stop them from browning keep them submerged in a bowl of water until you're ready to assemble the casserole, about 8 - 9 medium size potatoes) *
1 1/2 cups freshly shredded sharp cheddar cheese (divided)

Steps:

  • Preheat the oven to 350 F (176 C).
  • Heat a large nonstick skillet over medium heat, add the ground beef and onion, and cook until the beef is no longer pink (about 10 minutes). Once it's finished cooking, remove the beef from the pan, discard any grease, and wipe out the skillet.
  • Return the skillet to the stove on medium heat, and add the butter. Once the butter is melted, add the garlic and saute for about 2 minutes (or until it's aromatic).
  • Turn the heat down to medium-low and whisk in the flour (mix until the flour and butter have combined and reached an even texture). In a large bowl (or large liquid measuring cup), mix together the milk and chicken broth, then whisk the liquid into the butter and flour roux, about 1/3 cup at a time at a time. In between each addition of liquid, whisk until the sauce has reached a smooth consistency. Continue until all the liquid is incorporated into the sauce.
  • Once all the liquid has been added and the sauce is smooth, whisk in the parsley, thyme, salt, and pepper. Bring sauce to a light boil over medium-high heat for about 1 minute to thicken, then stir in 1 cup of the shredded cheese.
  • Lightly grease an 13 x 9 casserole dish and lay 1/3 of the potatoes evenly along the bottom of the pan. Sprinkle the potatoes with salt and pepper, then spread 1/3 of the sauce and 1/3 of the ground beef evenly over the potatoes.
  • Repeat this step two more times, creating 3 layers. Add the rest of the shredded cheese to the top layer. Cover the casserole with aluminum foil (make sure that the foil isn't touching the casserole so that the cheese doesn't stick to it), and bake for 1 hour.
  • After 1 hour, remove the foil from the dish, and bake for another 15 minutes. Finish it off by broiling it for 3 - 4 minutes (or until the cheese is bubbling and golden brown in some areas).
  • Carefully remove the casserole from the oven and allow it to rest for 15 minutes before serving.

2 (10.75 ounce) cans condensed cream of mushroom soup, divided
4 (4 ounce) cans sliced mushrooms, drained
1 cup milk, divided
½ teaspoon seasoned salt
ground black pepper to taste
4 cups peeled and thinly sliced potatoes
½ cup shredded Cheddar cheese
¾ cup French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11-inch baking pan.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Mix 1 can cream of mushroom soup, mushrooms, 3/4 cup milk, seasoned salt, and black pepper in a bowl; fold in potatoes.
  • Spread half the potato mixture into the prepared baking pan; top with Cheddar cheese. Spoon 1/2 the ground beef over cheese layer. Top ground beef layer with remaining potato mixture; layer with remaining ground beef.
  • Mix remaining 1 can cream of mushroom soup with 1/4 cup milk; pour mixture over ground beef layer.
  • Bake in the preheated oven until casserole is bubbling, about 1 hour 20 minutes. Sprinkle French-fried onions over casserole; return to oven for 5 more minutes.

4 -5 medium potatoes
1 lb hamburger (cooked untill crumbly)

  • Slice potatoes in rounds (like potato chips), then boil about 15 min or until slightly tender.
  • While potatoes boil, cook hamburger in skillet, and heat up soup (reason to heat soup is that its less lumpy when mixed).
  • In 9x13 pan pour small amount of soup, then all of the potatoes and hamburger, top with remaining soup.
  • Bake 15 min @ 375, top with shredded cheese, serve and enjoy!
  • Very good with a side salad or french-style green beans.

1 medium onion, chopped
1 small green bell pepper, seeded and chopped (optional)
4 garlic cloves, finely chopped (or to taste)
1/2 teaspoon dried chili pepper flakes (adjust to taste) (optional)
1 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
1/2 teaspoon fresh ground black pepper (or to taste)
5 -6 russet potatoes (peeled and sliced thinly, or use as many as desired)
2 cups shredded cheddar cheese (or to taste)
2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted (using any other flavor of soup will not be as good)
1 small onion, chopped (about 1/3 cup)
3/4 light cream
1/2 cup sour cream
1/4 cup grated parmesan cheese
1 teaspoon garlic powder

Steps:

  • In a skillet cook the ground beef with onion, bell pepper and chili flakes (if using) until no longer pink; drain fat over a colander.
  • Return to pan and add in garlic, season salt and black pepper; cook stirring with a wooden spoon until the meat is lightly browned (I usually add in about 1-2 tablespoons bacon fat that I keep frozen in my freezer to the meat while browning for added flavor and it also helps to brown the meat) set aside.
  • For the sauce; in a medium bowl mix together the undiluted soup with onion, milk, sour cream, Parmesan cheese, garlic powder, seasoned salt and black pepper to taste; mix well to combine.
  • In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top.
  • Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills.
  • Bake covered with foil for about 1 hour at 350 degrees F.
  • Uncover and continue baking for another 20-30 minutes or until the potatoes are tender (baking time will vary depending on the thickness of your sliced potatoes).
  • Remove from oven then sprinkle with grated cheddar cheese; return to oven for 4-5 minutes or until the cheese has melted.

2 pounds uncooked extra lean ground beef or ground round (90% lean)
4 pounds potatoes, peeled and sliced 1/4 inch thick
1 large onion, sliced
1/2 teaspoon pepper
1 low-sodium beef bouillon cube
1 cup hot water
1 can (28 ounces) diced tomatoes, undrained
Chopped fresh parsley, optional

Steps:

  • In a Dutch oven, layer half of the meat, potatoes and onion. Sprinkle with half of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. , Cover and cook over medium heat for 45-50 minutes or until potatoes are tender. Garnish with parsley if desired.
