Pineapple casseroles are a popular side dish served in the South, but they're not always a good choice for a diabetic diet, which is why we created this lightened-up version. Our Lighter Pineapple Casserole is a dish that'll delight your whole gang!

1/3 cup margarine, softened
1/4 cup sugar substitute
2 eggs
2 egg whites
1 teaspoon vanilla extract
2 tablespoon all-purpose flour
1 (20-ounce) can crushed pineapple in juice, drained; reserve 1 cup liquid
5 slice sugar-free whole-wheat bread cubed

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart baking dish with cooking spray.
  • In a large bowl, beat margarine and sugar substitute until creamy. Beat in eggs, egg whites, and vanilla. Stir in flour, pineapple, and reserved juice; mix well. Add bread cubes and toss until evenly coated. Pour into baking dish.
  • Bake, uncovered, for 35-40 minutes, or until golden and knife inserted in center comes out clean.

So simple and so delicious you'll want to make an extra one for the next day. It's always the requested dish to bring to parties, from picnics to Thanksgiving. You don't know whether to eat it as a side dish or dessert, but it will be gone either way. My mom calls it 'white trash souffle' because it's best made with that long-lasting, favorite white bread! If desired, garnish with pineapple slices or maraschino cherries.

½ cup butter
1 cup sugar
4 eggs
5 slices white bread, cut into 1 inch cubes
1 (20 ounce) can crushed pineapple, drained
⅓ cup brown sugar, packed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 6x10 inch baking dish.
  • Cream the butter and sugar together in a mixing bowl until light and fluffy. Beat in the eggs one at a time. Stir in the bread cubes and pineapple until well blended. Pour the mixture into the prepared baking dish. Sprinkle brown sugar evenly over the top.
  • Bake in preheated oven until bread points on top are golden brown, 45 to 60 minutes. Cool before serving.

8 slices bread
3 eggs, beaten
¾ cup low-fat milk
1 cup butter, melted
2 cups white sugar
1 (20 ounce) can pineapple chunks, undrained
3 tablespoons powdered sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Cut the bread into 1 inch pieces and place on a baking sheet. Toast for 8 to 10 minutes, stirring occasionally, until lightly browned. Remove from oven and reserve.
  • Beat the eggs, milk, butter, and sugar in a large bowl until well combined. Stir in the undrained pineapple and the toasted bread cubes and toss until coated. Pour mixture into the prepared pan.
  • Bake until puffed and golden, about 45 minutes. Serve warm with a sprinkle of powdered sugar for garnish.

This turned out great. I would gladly eat it as a side dish - It would be great served alongside ham - but it is also sweet enough to make for a delightful dessert as well. Oh, and it's a snap to put together!

4 c bread cut into cubes
1/2 c butter, softened
2 1/4 c sugar
4 eggs, beaten
1 c milk
1 can(s) pineapple, crushed with juice 20 oz can

Steps:

  • 1. Mix butter, sugar, eggs and milk together in a large bowl
  • 2. Add large can of crushed pineapple and juice to mixture in bowl. Mix well.
  • 3. Fold in bread cubes untill all bread is coated.
  • 4. Pour mixture in buttered caserole dish. Slightly packing mixture inot dish
  • 5. Bake at 350 degrees 35-40 minutes or until golden brown.

This tasty recipe is something my grandmother introduced to me. Now i make it every year for thanksgiving & christmas or anytime i'm having ham. It sounds difficult, but really its so simple to make and doesn't take much time to make it.
