PASTOR'S WIFE'S SCALLOPED PINEAPPLE
I have never made this, but I have eaten it and it is selicious. Our pastor's wife Carolynn makes it for church dinners.

Steps:
- Put pineapple and crumbs in a baking dish.
- Mix beaten eggs sugar and butter together.
- Pour over bread crumbs and pineapple.
- Bake at 350° for 30 minutes.
SCALLOPED PINEAPPLE
This turned out great. I would gladly eat it as a side dish - It would be great served alongside ham - but it is also sweet enough to make for a delightful dessert as well. Oh, and it's a snap to put together!

- 1. Mix butter, sugar, eggs and milk together in a large bowl
- 2. Add large can of crushed pineapple and juice to mixture in bowl. Mix well.
- 3. Fold in bread cubes untill all bread is coated.
- 4. Pour mixture in buttered caserole dish. Slightly packing mixture inot dish
- 5. Bake at 350 degrees 35-40 minutes or until golden brown.

SCALLOPED PINEAPPLE CASSEROLE
This recipe was given to me from a friend of mine. The ingredients may sound a little different, but it is really good and easy to make. We make this for holiday dinners such as Easter, Thanksgiving and Christmas. We don't like pineapple on the ham, but love this as the side dish to go with our ham.

- In mixing bowl, cream butter and sugar.
- Add eggs, one at a time, mixing well after each addition.
- Stir in pineapple, cheese and lemon juice (will look broken from the lemon juice).
- Fold in bread cubes.
- Place in buttered 2 qt baking dish.
- Bake uncovered at 350 for 40-45 minutes until top is light golden brown.
- Serve warm.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x10 inch casserole dish.
- In a medium bowl combine butter, sugar, pineapple, salt, pepper, cinnamon and nutmeg; mix well. Place bread cubes in the bottom of the casserole dish and pour pineapple mixture on top.
- Bake in preheated oven for 45 minutes or until golden brown and set throughout. If the top browns too fast, before the center is set, cover the dish with aluminum foil until it sets. Let stand 10 minutes before serving.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Cut the bread into 1 inch pieces and place on a baking sheet. Toast for 8 to 10 minutes, stirring occasionally, until lightly browned. Remove from oven and reserve.
- Beat the eggs, milk, butter, and sugar in a large bowl until well combined. Stir in the undrained pineapple and the toasted bread cubes and toss until coated. Pour mixture into the prepared pan.

SCALLOPED PINEAPPLE-GREAT SIDE DISH TO HAM!
