1 large onion, chopped
6 cloves garlic, minced
1 lb small shrimp or 1 lb medium shrimp, peeled
1 lb scallops, quartered
1 cup white wine
2 tablespoons fresh basil or 2 teaspoons dried basil
1/2 teaspoon red pepper flakes
1/4 cup chicken stock
1 teaspoon sugar
1/3 cup butter
1 lemon, juice of
salt
ground pepper
1/4 cup parsley, chopped
1/4 cup grated parmesan cheese

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add onions, and cook for 2 minutes.
  • Add garlic.
  • Cook for 1 minute more.
  • Add shrimp and scallops, and cook for 2- 3 minutes.
  • Add wine, basil, pepper flakes, chicken stock, and sugar.
  • Simmer about 4 minutes, until shrimp are pink and scallops opaque.
  • Add butter, lemon juice, salt and pepper.
  • Serve over pasta or rice.
  • Sprinkle with parsley and parmesan.

Seafood Pasta with Shrimp and Scallops (and Garlic!) image

A buttery garlic wine sauce pairs with shrimp and scallops in this easy dish. Add some pasta and dinner is served!

Number Of Ingredients 11

1 lb (454 g) scallops, fresh or thawed
Kosher salt
12 oz (340 g) good quality pasta
3 Tbsp extra virgin olive oil
8 large or 12 medium raw shrimp, fresh or frozen (and thawed) peeled, and deveined
3 or 4 cloves minced garlic
chopped Italian, flat leaf parsley
freshly ground black pepper
2 to 3 oz (57 g to 85 g) good quality butter
1/3 cup (80 ml) dry white wine (you can substitute seafood stock or broth if you'd like)
(lemon slices/wedges to serve)

Steps:

  • Soak the scallops for 10 minutes in a brine solution (3 Tbsp Kosher salt in 16 oz water.)
  • Remove after 10 minutes and place on a rack to dry.
  • Next, put a large pot of well salted water on to boil for the pasta. Once the pasta goes in, set a timer for 7 minutes before the pasta will be ready (according to package instructions.)
  • Make sure the scallops are dry. If they are not, pat them dry with a paper towel. When the timer goes off, put a large cast iron pan on high heat and add the extra virgin olive oil.
  • When the pan and oil are very hot, add the scallops and sear them for about 1 1/2 minutes before adding the shrimp, garlic, and parsley.
  • Cook for another 2 minutes, then turn the scallops and shrimp and cook for a further 1 1/2 minutes. Next, add the wine, scraping the bottom of the pan; turn the heat down just to keep it warm.
  • Add the butter and stir to melt. Add some freshly ground black pepper, if desired, then taste the sauce or a piece of seafood and add salt if needed.
  • Drain the pasta, which should be ready, but reserve a cup or so of pasta water. You will only need this pasta water if you want to add some after mixing everything together. Add the pasta directly to the seafood sauce in the pan.
  • Stir gently to incorporate all the ingredients together. Add some of the reserved pasta water, if desired, then top with a twist of lemon in the pan.
  • Serve immediately as this seafood pasta dish is best piping hot. Don't forget some crusty bread to mop up the buttery garlic and wine sauce at the end!

12 ounces spaghetti
1 tablespoon vegetable oil
1 pound sea scallops, tough muscles on the side removed, patted dry
4 tablespoons (1/2 stick) unsalted butter
5 cloves garlic, minced
Juice of 2 lemons (about 1/3 cup)
1/2 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions for al dente. Reserve 1/2 cup of the cooking water, then drain the pasta.
  • Heat the oil in a large skillet over medium-high heat. Sprinkle the scallops with salt and pepper. Add the scallops to the skillet, raise the heat to high and sear until golden brown and just firm, 1 to 2 minutes per side; transfer to a plate.
  • Return the skillet to medium-high heat, add the butter and garlic and cook, stirring constantly, until the garlic is lightly toasted, 2 to 3 minutes. Add the lemon juice and season with salt and pepper. Add the cooked pasta and parsley to the skillet and toss to combine. Add a little of the reserved pasta cooking water to help thin out the sauce so it evenly coats the pasta. Divide the pasta evenly into bowls and top each with some scallops.

½ pound angel hair pasta (reserve ½ cup pasta water)
15 to 18 (½ pound) shell-on shrimp
15 to 18 (½ pound) bay scallops
2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced
1 cup dry white wine
1 teaspoon salt, or to taste
1 teaspoon red pepper flakes
3 tablespoons chopped parsley
juice from 1 lemon

Steps:

  • Boil the pasta according to package directions, reserving ½ cup of the pasta water before draining. Drain and reserve pasta.
  • Peel the shrimp and reserve shell or tails, and de-vein, if necessary.
  • While the pasta is boiling, heat a thin layer of oil in a deep skillet (preferably cast-iron) over medium-high heat. Pat the scallops completely dry.
  • Once the oil is hot, add the dry scallops and sear them on each side until golden brown, about 1 to 2 minutes per side, then remove scallops and set aside.
  • Turn the heat down to medium-low and melt the butter with the remaining olive oil, then add the garlic and cook until fragrant, about 1 minute.
  • Add white wine, pasta water, shrimp shells, salt, and red pepper flakes, bring to a simmer, and cook until reduced by half. Shrimp shells will turn pink and wine will reduce, leaving about half of the liquid, or ¾ cup.
  • Remove the shrimp tails and add the shrimp, and cook the shrimp until just barely pink, about 1 to 2 minutes per side.
  • Add scallops back into the skillet and stir to combine.
  • Add lemon juice and parsley and stir to combine, then remove from the heat.
  • Add pasta into skillet and toss to combine with sauce.
  • If desired, serve with extra chopped parsley.

1 box spaghetti
8 scallops
2 lb shrimp
1/8 c parsely
1 dash(es) salt and pepper
1/4 stick butter, cold
1 Tbsp flour
1 clove garlic
2 c pinot grigio

Steps:

  • 1. Boil a pot of water and cook your pasta.
  • 2. In a Sauce pan add a 1 Tbsp of olive oil and cook your Scallops on Medium-High heat to get a nice caramel look on your scallops.
  • 3. Remove Scallops and lower the heat.
  • 4. Add your 2 cups of Pinot Grigio and Garlic.
  • 5. Take your 1/4 of butter and dunk it in the flour. When the Pinot Grigio starts to boil add your butter and parsley. Bring it down to low and add your uncooked shrimp. (Note: If you have cooked shrimp wait to the end to add it. - Literally the last-minute)
  • 6. Drain your pasta
  • 7. Turn off the heat on the saucepan and add your scallops.

8 scallops
shrimp, i used 2 pounds peeled and deveined (as much as you like)
1/8 cup parsley
1/8 cup butter
1 tablespoon flour
1 garlic clove (chopped)
2 cups pinot grigio wine
1 dash salt & pepper

Steps:

  • Boil a pot of water and cook your pasta.

1 pound linguini
4 tablespoons butter
4 tablespoons extra-virgin olive oil, plus more for drizzling
2 shallots, finely diced
2 cloves garlic, minced
Pinch red pepper flakes, optional
1 pound shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
1/2 cup dry white wine
Juice of 1 lemon
1/4 cup finely chopped parsley leaves

Steps:

  • For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta.
  • Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

1 lb linguine
12 jumbo shrimp, peeled and deveined
12 large sea scallops, tough foot muscles removed
fresh ground pepper
kosher salt
3 1/2 tablespoons unsalted butter
2 garlic cloves, minced
2 tablespoons fresh lemon juice, plus lemon wedges for garnish
1/2 cup dry white wine
1/4 cup torn fresh basil
2 tablespoons chopped fresh parsley

Steps:

  • 1. Bring a large pot of salted water to a boil. Add the liquine and cook as the label directs.
  • 2. Meanwhile, heat a large skillet over medium=high het. Pat the shrimp and scallop dry, then season with salt and pepper. Add 1/2 T. butter to the pan and cook the shrimp unti golden on one side, about 3 minutes. Turn the shrimp and add half of the garlic; cook until the garlic is fragrant, but the shrimp are still translucent, 1 to 2 more minutes. Transfer the shrimp to a plate.
  • 3. Add the scallops to the skillet and cook until golden on one side, about 3 minutes. Turn the scallops, add the remiaining garlic and cook 1 to 2 more minutes. Add the lemon juice and wine and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the sauce is reduced by half, about 3 minutes. Return the shrimp to the pan, then add the basil and the remaining 2 T. of butter; season with salt and pepper to taste.
  • 4. Drain the pasta and transfer to a large serving bowl. Toss with the shrimp, scallops and sauce; garnish with parsley and lemon.
