4 scallions, thinly sliced
1 1/2 cups long-grain rice
1 can (14.5 ounces) reduced-sodium chicken broth
Coarse salt and ground pepper
2/3 cup chopped (packed) fresh cilantro leaves

Steps:

  • In a large saucepan, heat olive oil over medium. Add scallions; cook, stirring occasionally, until fragrant, 3 to 5 minutes.
  • Stir in rice, chicken broth, and 1 cup water. Season with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Bring to a boil; reduce to a simmer. Cover; cook until rice is tender and has absorbed liquid, about 20 minutes. Remove from heat; let stand, covered, 10 minutes more.
  • Fluff with a fork; fold in cilantro.

1/2 cup packed fresh cilantro
1/4 cup packed fresh mint
2 scallions, chopped
1 garlic clove
1 tablespoon vegetable oil
1 cup jasmine rice
Coarse salt

Steps:

  • Puree water, cilantro, mint, scallions, and garlic in a blender until smooth.
  • Heat oil in a small saucepan over high heat. Add rice, and stir to coat. Cook until slightly toasted, 1 to 2 minutes. Add herb puree and 1 teaspoon salt. Bring to a simmer. Reduce heat to low, and cook, covered, for 20 minutes.
  • Remove from heat, and let stand, covered, for 10 minutes. Fluff with a fork before serving.

1 cup brown rice (white would be fine if you prefer)
2 tablespoons vegetable oil
2 1/2 cups chicken stock (2 c for white rice)
4 -5 scallions, sliced

Steps:

  • Place a medium-size pot with a lid over medium-high heat with about 2 tablespoons of oil.
  • Add the rice to the pan and cook it for a minute, then add the chicken stock.
  • Bring the liquids up to a bubble, then put the lid on the pot, reduce the heat and cook until the rice has absorbed all of the liquid, 40-45 minutes (18-20 minutes for white rice).
  • Fluff the cooked rice with a fork and stir in scallions.
  • Alternately you can cook this in your rice cooker, according to cooking directions. I have to presoak brown rice. Just skip the browning, oil is optional, and add scallions at the end. Fluff and serve.

1/3 cup finely chopped white part of scallion
1 tablespoon unsalted butter
1/4 cup thinly sliced scallion greens

Steps:

  • In a large saucepan bring 4 quarts water to a boil with the salt. Sprinkle in the rice, stirring until the water returns to a boil, and boil it for 10 minutes. Drain the rice in a large colander and rinse it. Set the colander over a large saucepan of boiling water and steam the rice, covered with a kitchen towel and the lid, for 15 minutes, or until it is fluffy and dry. In a small skillet cook the white part of the scallion in the butter over moderately low heat, stirring occasionally, until it is softened and in a bowl toss the rice with the scallion mixture, the scallion greens, and salt and pepper to taste.

1 cup rice wine vinegar
3/4 cup light soy sauce
3 1/2 tablespoons sugar
1 tablespoon toasted sesame oil
3 cups all-purpose flour, plus more for dusting
1 1/3 cups boiling water
4 teaspoons toasted sesame oil
8 scallions, chopped
Kosher salt
1/2 cup plus 1 tablespoon vegetable oil

Steps:

  • Make the dipping sauce: Combine the vinegar, soy sauce, sugar and sesame oil in a small bowl and whisk until the sugar dissolves; set aside.
  • Make the scallion pancakes: Put the flour in a large bowl, then add the boiling water and stir with a wooden spoon until the dough forms a ball.
  • Turn out the dough onto a lightly floured surface and knead until smooth, elastic and no longer sticky, 4 to 6 minutes. Transfer the dough to a large bowl, cover and let rest 30 minutes.
  • Preheat the oven to 200˚ F. Divide the dough into 8 pieces, then roll each into a thin 8-inch circle on a lightly floured surface. Brush each circle of dough with 1/2 teaspoon sesame oil and sprinkle with 1 heaping tablespoon scallions; season with 1/8 teaspoon salt. Roll up each circle of dough into a cigar; then, working from one side, roll each into a coil, tucking the ends underneath. Lightly flour the surface again and roll each coil to a 7-inch pancake (1/8 inch thick).
  • Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 1 pancake and cook until golden brown, 2 to 3 minutes per side. Remove to a baking sheet and keep warm in the oven. Repeat with the remaining pancakes, adding 1 more tablespoon vegetable oil to the skillet each time and reducing the heat to medium if the pancakes are browning too quickly. Slice the pancakes into wedges. Serve with the dipping sauce.

  • Fluff the rice and stir in the scallion greens. Divide among 4 plates and top with a piece of salmon. Sprinkle the fish with sesame seeds. Serve with lime wedges.

6 garlic cloves, sliced
1 small bunch basil, plus basil leaves, for serving
1 large chicken breast (about 12 ounces)

Steps:

  • Combine the broth, water, mirin, and the fish sauce in a large saucepan. Cut all but one scallion into 1-inch pieces and add to the broth with the mushroom stems, ginger, garlic and bunch basil. Bring to a simmer over medium-high heat and continue to simmer until reduced by half, about 45 minutes. Remove the solids from the broth using a strainer or slotted spoon and discard.
  • Add the chicken, sliced mushroom caps, and jalapeno to the broth; adjust heat to keep the broth at a gentle simmer and cook 12 to 14 minutes or until the chicken is just cooked through. Transfer the chicken to a cutting board and slice into 1-inch pieces.
  • Remove the broth from the heat; Stir in the edamame, jicama, and sliced chicken. Season to taste with salt. Scoop 1/2 cup of the cooked rice in each bowl and ladle some of the soup over it. Slice the reserved scallion on an angle and sprinkle over each bowl along with the basil leaves. Serve with lime wedges, if desired.

The sauce for these shrimp is made by simply tossing quickly sauteed tomatoes and shrimp in a bowl with what is known as compound butter: room temperature butter that has been flavored by mashing in something tasty like herbs or seasoning--in this case, lemon zest and hot sauce. You can make the butter and cook the shrimp and tomatoes in the time it takes to cook the rice.

6 tablespoons unsalted butter
3 scallions, sliced, whites and greens kept separate
1 cup medium-grain white rice
Kosher salt
1 bay leaf
1 lemon
2 to 3 teaspoons hot sauce, plus more for serving
1/4 cup lightly packed fresh parsley leaves, roughly chopped
1 pound large peeled and deveined shrimp, tails removed
Freshly ground black pepper
2 tablespoons olive oil
1 pint grape tomatoes (about 20)

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan over medium heat; add the scallion whites and cook, stirring occasionally, until soft and translucent, about 3 minutes. Add 1 1/2 cups water, the rice, 1/2 teaspoon salt and the bay leaf, increase the heat to medium high and bring to a simmer. Stir a few times, cover, reduce the heat to low and simmer until the rice is tender and the water is absorbed, about 17 minutes. Remove from the heat and set aside.
  • Meanwhile, zest the lemon into a large mixing bowl and add the remaining 4 tablespoons butter, the hot sauce and a pinch of salt. Stir until well combined. Gently stir in half of the parsley, reserving the remaining parsley for garnish. Cut the zested lemon into wedges and reserve.
  • Sprinkle the shrimp liberally with salt and pepper. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the tomatoes and some salt and cook, shaking the skillet frequently, until the tomatoes just start to pop, about 5 minutes. Transfer to the mixing bowl with the butter. Heat the remaining 1 tablespoon olive oil in the skillet. Add the shrimp and cook until the bottoms turn pink, about 1 1/2 minutes; flip and cook until just cooked through, about 1 minute more. Add the shrimp to the tomatoes and toss gently to coat everything with the butter and mush the tomatoes a bit more.
  • Fluff the rice and stir in the scallion greens. Divide the rice among 4 dinner plates, top with the shrimp, tomatoes and sauce, scatter the remaining parsley leaves over the top and put a lemon wedge on each plate. Serve immediately, with extra hot sauce.

Mad craving that came out insanely tasty. Ingredients are approximate because I didn't measure much which is why most things say 'to taste,' lol. I didn't include cooking or cooling time for the rice. Cooking time will depend on your method of cooking & cooling will depend as well. I set mine in my cool basement for 1/2 hour or so. I say 8-10 servings because my family of 4 each had 2nds. But each serving was probably 1c or more. ;)

2 cups white rice
3 cups water
4 tablespoons oil, divided
1 small onion, chopped
8 eggs, beaten
2 -4 tablespoons soy sauce, divided, to taste
1/2 teaspoon black pepper, to taste
sesame seeds, to taste
2 bunches scallions, chopped
1 tablespoon toasted sesame oil, to taste
salt

Steps:

  • Cook rice. I used a rice steamer. If you use a different method, the ratio may be different. When rice is cooked, spread it out on a large baking sheet & let cool completely.
  • Prep everything.
  • Chop onions & scallions.
  • Beat eggs, add 1TB soy sauce & pepper.
  • Heat wok until it is HOT. Add 1TB oil - vegetable/canola/sesame(NOT toasted!) & swirl to coat sides. Add egg mixture, swirl to coat sides. Scrape pan to cook it all quickly, scraping as you go. This will take 2-3 minutes. When all get is cooked, not just set, scrape into a bowl & set aside.
  • Add 2TB oil to hot wok. Add chopped onions. Cook until browned & softened, 3-5 minutes.
  • Add cooled rice. Every few minutes, scrape up from the bottom, so that the rice on the bottom & sides get a bit crispy. When it starts looking crispy, not burned, add soy sauce along top rim of rice & stir fry/stir up well. Keep turning up from bottom as you go along. I added another TB or so oil along the top rim of rice -- it goes down the sides coating the rice & helps to crisp it up. This will take 5 minutes or more. Take the time to let it cook & get a bit crispy.
  • Sprinkle on enough sesame seeds to make you happy & stir that in, continuing to stir up from the bottom.
  • Add 1TB (or more) toasted sesame oil to the top rim of the rice & continue to stir it from the bottom.
  • Chop up scrambled egg w/spoon & add to rice. Continue to stir from the bottom.
  • Add chopped scallions & continue to stir --.
  • Season with salt to taste, stirring well between each addition to check seasoning.
  • Add more soy sauce and/or sesame oil if it suits you. :).

DRIED SHRIMP AND SCALLION RICE ROLLS



Dried Shrimp and Scallion Rice Rolls image

Commonly sold on Styrofoam trays at Chinese and Southeast Asian markets, these opaque white rice rolls flecked with orange dried shrimp and green scallion are a terrific southern Chinese snack. Purchased ones are seldom as tasty as homemade because producers tend to be skimpy with the dried shrimp, which give the rolls their oomph. These steamed rolls can be eaten as is, dipped in sweet soy sauce. Or they can be panfried to a delicate crisp. When served with other dishes, a few rolls are all you will need. For a light main course with a salad, double or triple the recipe.

Yield makes 3 rolls, serving 4 to 6 as a snack or with 2 or 3 other dishes

2 tablespoons minced dried shrimp
2 scallions (white and green parts), finely chopped
1 1/4 cups Rice Sheet Batter (page 154)
1/4 cup Sweet Soy Sauce (page 217)
1 teaspoon toasted, hulled (white) sesame seeds (optional)
Chile Garlic Sauce, homemade (page 216) or store-bought (optional)

Steps:

  • In a small bowl, combine the dried shrimp and scallions. Set aside near the stove.
  • Follow the instructions in "How to Make Rice Sheets" on page 155 to prepare each rice sheet. After pouring the batter into the baking pan and spreading it out to cover the entire surface of the pan, let the batter set for 5 to 10 seconds. Then sprinkle one-third of the shrimp and scallion mixture on the surface. Cover and cook the rice sheet for 5 minutes, or until translucent and set.
  • Remove the pan from the steamer tray or pot, if poaching, and cool for 2 to 3 minutes on a rack, until cool enough to handle the rice sheet. Meanwhile, lightly oil a plate. Remove the rice sheet from the pan as directed on page 155 and place it on a work surface with the smoother bottom-side down. Gently roll up the rice sheet as you would a scroll of paper. If you roll it up too tightly, it will be too heavy, so leave it loose in the center. Aim for 1-inch-diameter rolls. Place the finished roll on the prepared plate, seam side down, before making another one, washing and drying the pan first. If you are not serving the rolls right away, lightly coat them with oil to prevent drying, cover with plastic wrap, and set aside at room temperature for up to 4 hours. They can be refrigerated but will harden, and the best way to revitalize them is by panfrying.
  • Serve the rolls at room temperature. Or, warm them by steaming them for about 2 minutes, if needed. Use a knife to cut them into 1-inch pieces and return them to their plate. Drizzle on the sweet soy sauce and finish with a sprinkling of the sesame seeds. Present with the chile garlic sauce.

1 1/4 teaspoons coarse salt, divided
1/2 teaspoon ground pepper
1 lime, zested and juiced
1 tablespoon toasted sesame seeds

Steps:

  • In a 3- to 4-quart saucepan or skillet, heat 1 tablespoon of sesame oil over medium heat. Add the scallion whites, 1/4 teaspoon of salt, and a pinch of pepper. Cook, stirring often, until tender but not browned, about 5 minutes.
  • Add the rice and cook, stirring often, until it begins to crackle, 2 to 3 minutes.
  • Add the chicken broth, lime zest, 1 teaspoons salt and 1/4 teaspoons pepper; bring to a boil. Cover and turn the heat down to low. Cook until the rice is tender and the liquid is absorbed, about 18 minutes. The trick to perfect is rice is not to lift the lid or stir during this stage. Leave it alone until all the liquid is absorbed.
  • Remove from the heat and using a fork, fluff the scallion greens, 1 tablespoon of sesame oil, and the lime juice into the rice. Let rest 5 minutes.
  • Sprinkle with toasted sesame seeds and serve.

  • Heat broth, salt, and garlic in a heavy saucepan to boiling.

  • Remove from heat and mix in the zest of one whole lemon and let stand for 5 minutes.

Steps:

  • Finely chop enough scallions to measure about 3 cups. Rinse bean sprouts and trim stringy root ends if desired.
  • Make seasoning liquid:
  • In a small bowl stir together seasoning liquid ingredients.
  • Spread rice in a shallow baking pan and separate grains with a fork.
  • In a deep 12-inch heavy non-stick skillet heat corn or safflower oil over moderately high heat until hot but not smoking and stir-fry scallions and gingerroot until fragrant, about 20 seconds. Add bean sprouts and rice wine or sake and stir-fry until sprouts begin to soften, about 1 minute. Add rice and cook, stirring frequently, 2 to 3 minutes, or until heated through.
