2 cup unshifted all purpose flour
3/4 cup water ( , 1/2 hot boiling water + 1/4 cold water)
1 tbsp. vegetable cooking oil
1 tbsp. cooking oil
2 cup chopped scallion ( , use green part only)
1/2 tsp. salt
1 tbsp. Chinese five spice powder
1 tbsp. light soy sauce
1 tsp. oyster sauce (, optional )
1/2 tbsp. sesame oil
1/4 tsp. salt
1 tbsp. chili oil
chopped green onion and coriander

Steps:

  • Mix salt with all purpose flour.
  • Prepare a large mixing bowl. Dig a small hole in center and then pour the hot water in. Wait for 10 minutes and then stir in the cold water and vegetable oil. Grasp everything to form a ball, cover and rest for 5 minutes and then knead until very smooth (around 3-5 minutes ). The dough should be quite soft. Cover the rest for 20 to 30 minutes.
  • After resting, the dough should be quite easy to roll out. Divide the large dough into 4 pieces and roll each piece into a large around circle. Brush some oil, sprinkle Chinese five spice power and chopped scallion (leave the 1 cm of the edge empty).
  • Roll up the circle into a cylinder. And further roll into the shape of a snail. Cover with wet cloth and rest for 10 to 15 minutes.Roll the snail out to another thin circle.
  • Brush some cooking oil on the pan and move the circle into the pan. Use middle fire to pan-fry until the surface becomes brown around 2-3 minutes. And turn over to fry for another 1 to 2 minutes. Use a spatula to press the circle from time and time especially the central part to ensure the circle is evenly fried.
  • Remove the circle out and cut into wedges.

1½ cups all-purpose flour
½ cup warm water
3 tablespoons peanut/vegetable oil
3 each scallions
1 teaspoon salt

Steps:

  • Oil a large mixing bowl and set aside.
  • In a separate large bowl, mix together flour and water until a smooth dough forms. If the dough is sticky, add more flour and mix again.
  • Roll out the dough on a lightly floured surface and knead for 5 minutes. Place the dough in the greased mixing bowl and turn until it is lightly covered with oil. Cover the dough with a damp towel and let it rest for 30 minutes.
  • Flour your work surface again and roll out the rested dough. Divide the dough in half, then roll each half into a 1" thick cylinder. With a pastry scraper or knife, slice the dough into 2" segments. Dust your rolling pin with flour and roll out each segment into a 5" circle.
  • Lightly brush the top of each circle with peanut oil, about 2 tablespoons total for all the pancakes. Sprinkle with scallions and salt.
  • Roll up each circle into another cylinder, making sure the scallions stay in place.
  • Coil the dough so that it resembles a snail.
  • With the rolling pin, flatten again into disks about ¼ inch thick. Place the rolled-out pancakes on a plate and repeat with the remaining dough. Can freeze the dough for future use.
  • Heat a nonstick saute pan over high heat and add 1 tablespoon oil. Working in batches, pan-fry the pancakes until golden brown. Press down puffed up sides or middle with the spatula, if necessary.
  • Transfer the pancakes to a plate, cut into wedges, and serve with chili sauce, soy sauce or vinegar on the side.

The textures in this delicious recipe for pajeon, traditional Korean scallion-based pancakes, are manifold: meaty from the squid, crunchy yielding to soft from the fried bits of batter, juicy from the scallion. It came to The Times from Hooni Kim, the chef at Hanjan in Manhattan. One of the secrets to this pancake is waiting for the oil to heat up before mixing the batter. That way, the batter doesn't sit around and turn gluey. Eat them as hot as you can without burning your fingers. The risk is worth it.

6 teaspoons rice wine vinegar
1 tablespoon plus 1 teaspoon mirin

1 egg yolk
Grapeseed or vegetable oil, for frying
200 grams rice flour (about 1 1/3 cups)
150 grams all-purpose flour (about 1 cup)
4 grams baking powder (about 1/2 teaspoon)
1 pound squid, cleaned and cut into 1/2-inch rings
2 bunches whole scallions, trimmed and cut into 1-inch pieces

Steps:

  • In a small bowl, prepare the dipping sauce. Whisk together 2 tablespoons of the soy sauce, 2 teaspoons of the rice wine vinegar and mirin. Set aside.
  • In another small bowl, combine the remaining 2 tablespoons soy sauce, the remaining 4 teaspoons rice wine vinegar, denjang or miso paste, garlic, ginger, egg yolk, 1 cup of water and mix well.
  • Heat a 10-inch skillet over medium-high heat with 1/4-inch grapeseed or vegetable oil. The oil should be hot, but not smoking, about 325 degrees.
  • In a large bowl, mix the rice flour, all-purpose flour and baking powder. Add the squid and scallions and toss to combine. Pour in the denjang mixture and stir until just combined, taking care not to overmix.
  • Carefully spoon half of the batter into the hot pan and fry until the bottom is golden and crispy, about 3 to 4 minutes. Flip and fry for another 3 to 4 minutes until crispy and cooked through. Transfer to a rimmed baking sheet lined with paper towels so oil can drain. Repeat with the second half of the batter. Cut pancakes in quarters and serve with the dipping sauce.

1/2 bunch fresh cilantro, leaves and stems
1 large egg

Steps:

  • For the dipping sauce: Combine all the dipping sauce ingredients in a bowl and let it sit while you make the pancakes. Remove the ginger and cilantro before serving.
  • For the pancakes: Put the egg, water, sesame oil, and salt into a blender and blend well. Add the flour and blend until smooth, it should be the consistency of heavy cream. Stir in the cilantro, scallion, and sesame seeds. Heat a large nonstick skillet over medium high heat; add 1 teaspoon peanut oil and spread it around the pan with a paper towel. Pour in half the batter, swirling and tipping the pan to get one thin layer over the bottom of the pan. Cook until set, about 2 minutes. Flip the pancake with a spatula and cook on the other side for about 1 minute. Place the scallion pancake on a platter and make another pancake with the remaining batter. Pajeon, which literally translates to green onion/scallion pancakes, are Korean pancakes that can easily be customised to your liking. For my version, I drew inspiration from Haemul Pajeon which are Seafood and Green Onion Pancakes. But of course since this is a vegan pajeon, I used king oyster mushrooms to mimic the texture of squid since it has a rubbery texture. I also added some extra vegetables such as carrot and onion for that extra crunch. I also made my own dipping sauce to pair with this vegan jeon or pancake.

Instead of, or in addition to, the scallions, you can fill pajeon with garlic chives, ramps, small squid, shrimp, thin slices of Korean chile, or julienned carrots. To get the pancakes as crispy as possible, make sure the batter is very cold and the pan smoking hot and slicked with plenty of oil.

  • Make the pancakes:.
  • In a medium bowl, combine the flour, cornstarch, baking powder, sugar, salt, and pepper; stir to blend.
  • In a separate small bowl, add the soy sauce, garlic, doenjang, and egg yolks; whisk to combine. Add this mixture and the club soda into the dry ingredients. Whisk about 10 times, then transfer to the freezer and let rest 10 minutes (this will help any remaining clumps incorporate).
  • Meanwhile, make the dipping sauce: In a medium bowl, whisk the soy sauce, mirin, rice vinegar, and sesame oil. Set aside.

1 1/2 cups (200 g) all-purpose flour
1 teaspoon salt
1/2 teaspoon chicken bouillon powder, optional
1/2 cup (125 ml) water
3 - 4 stalks scallion or green onion, green parts only, trimmed and cut into small rounds, to yield about a tightly packed 1/3 cup or more
2 tablespoons oil, for brushing
Extra all-purpose flour, for dusting and rolling
Oil, for frying

Steps:

  • Sift the all-purpose flour into a big bowl and then add the salt and chicken bouillon powder (if using) into the flour. Combine well and set aside.
  • Heat the water to a boil. Slowly add the water to the flour and knead the dough until it becomes soft, no longer sticky and the surface becomes smooth and shiny, about 15 minutes. If the dough is too dry, add 1 to 1 1/2 tablespoons of water to the dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
  • Add the scallions into the dough and combine well.
  • On a flat and floured surface, divide the dough into 8 small dough balls, as pictured.
  • Working with one dough ball at a time, roll it to a thin disc using a rolling pin. Dust the rolling pin with some all-purpose flour as you go. Brush the surface of the pancake with the oil.
  • Roll the dough into a cylinder.
  • Coil it up like a snail.
  • Dust the rolling pin with the flour and roll the snail-shape dough until flat, measuring about 6 inches (15cm) in diameter. Set the dough aside on a baking sheet. Repeat the steps above for the rest of the dough balls.
  • Add about 1/4 inch (6 mm) of oil into a stir-fry pan or skillet over moderately high heat. Transfer a piece of the pancake onto the pan or skillet.

Steps:

  • For the pancakes: Divide dough into 8 equal parts. Roll into a rough circle, 1/4-inch thick. Paint with sesame oil. Flavor with scallions, chiles, sesame seed, salt and pepper.
  • Roll each into a cigar then coil into a rough circle again. Roll each pancake now 1/2-inch thick. Hold, divided by waxed paper, until ready to cook.
  • For the sauce: Saute ginger and garlic in sesame oil. Add all other ingredients and simmer until reduced and flavorful. Season to taste.
  • For the squid: Heat oven to 400 degrees. Heat a large saute pan and add a little soy or canola oil.

1-1/2 to 2 cups assortment of seafood (squid, shrimp, mussels, oysters, clams, etc., cut into bite sizes)
1 tablespoon sesame oil
1 or 2 bunches scallions
1 red chili pepper - optional
1 egg (lightly beaten - optional)
1 cup Korean pancake mix, buchim garu, 부침가루 ((or all purpose flour or gluten free flour with 1/2 teaspoon salt - See note))
1 tablespoon soy sauce
2 to 3 teaspoons vinegar
1 tablespoon water
pinch of black pepper
pinch of gochugaru (Korean red chili pepper flakes)
1/2 teaspoon sugar - optional
1 tablespoon chopped scallion - optional
1 tablespoon Diced onion - optional

Steps:

  • Prepare the seafood, scallions and optional pepper, draining excess water. (Wet ingredients will make pajeon soggy.) Cut the scallions in half crosswise. Cut the white part of the scallions lengthwise if thick. Mix the seafood with the sesame oil.
  • In a large bowl, mix the pancake mix with 3/4 cup icy cold water. You may need a couple more tablespoons but add one tablespoon at a time. The batter should be thinner than a Western breakfast pancake batter and thicker than a crepe batter. (For a crispy pajeon, the batter should be relatively thin.) Mix in 1/2 of the seafood.
  • Heat 3 to 4 tablespoons of vegetable oil in a non-stick pan over medium high heat, ladle 1/2 of the mixture into the pan and spread it evenly into a thin round shape.
  • Arrange the scallions in a single layer on top of the batter, pressing them down into the batter. Add 1/2 of the remaining seafood and a few slices of the optional pepper.
  • Spoon one half of the optional lightly beaten egg on top. Cook until the bottom is golden brown (3 - 4 minutes). Reduce the heat to medium if the pancake is browning too fast.
  • Turn it over, adding more oil (2 to 3 tablespoons) around the edges. Cook for another 3 - 4 minutes. Repeat the process with the remaining batter and ingredients. Serve hot off the pan with dipping sauce.

PAJEON (파 전 / SCALLION PANCAKES)

While this recipe features scallions, Korean pancakes can be filled with almost anything: garlic chives, ramps, chrysanthemum leaves. If you want something a little more substantial, add squid or shrimp cut into bite-sized pieces.

2 cups all-purpose flour
½ cup cornstarch
2 teaspoons baking powder
2 teaspoons sugar
1 teaspoon doenjang (Korean fermentedsoybean paste)
½ teaspoon freshly ground black pepper
2 cups ice-cold club soda
1 medium egg yolk
2 teaspoons minced garlic
3 large bunches scallions, cut into 2-inch batons (if the scallions are thick, cut the white parts lengthwise in half before cutting into batons)
About 5 tablespoons grape seed or canola oil, for frying
Pajeon Sauce

Steps:

  • To make the batter, combine the flour, cornstarch, baking powder, sugar, doenjang, and pepper in a medium bowl and mix well to blend. Add the club soda, egg yolk, and garlic and mix gently using a whisk. Do not whisk too much, or extra gluten will form in the batter, making it too thick and doughy. Whisk about 10 times, then let the batter rest for 10 minutes in the freezer so any remaining small clumps of flour can dissolve and blend into the mixture by themselves.
  • When you're ready to make the pancakes, line a sheet pan with paper towels and set aside. Place scallions in a medium bowl and fold in just enough cold batter to hold the scallions together.
  • Set a 10-inch nonstick sauté pan over high heat and add about 1 tablespoon of the oil. When the oil begins to shimmer and just barely smoke, add 1 cup of the scallion batter to the center of the pan. Using a spatula, spread it out to form a 7-inch pancake. (You don't want the pancake to touch the sides of the pan, or the edges may burn before the center is cooked through.) Reduce the heat to medium and cook for 4 to 5 minutes, until the bottom of the pancake has set. Once it has set, gently slide your spatula under the edges of the pancake and lift them, tilting the pan, so some of the hot oil runs underneath the pancake. Then cook for 2 to 3 minutes more, until the bottom is a deep golden brown and crisp. You can check the color by gently lifting an edge of the pancake with your spatula. Flip the pancake and cook on the other side for 3 to 4 minutes, until it is golden brown on the second side and cooked through. Transfer to the prepared sheet pan to drain. Wipe out the pan, set it back over high heat, add another tablespoon or so of oil, and repeat until all of the pancakes are cooked. The finished pancakes can be kept in a low (200°F) oven on a clean sheet pan while you cook the remaining batches, but it's best to eat them right away.
  • Cut each pancake into quarters and serve with small bowls of the Pajeon Sauce and ice-cold makgeolli (Korean rice wine).

Stir together with a fork until you get a shaggy mass. Wipe the goopy flour off the fork and knead the mass into an elastic dough, which should take about 3 to 5 minutes. Put the dough into a plastic bag or wrap it in plastic wrap and let the dough sit for 30 minutes to 2 hours.
  • Take the dough out and cut it into four pieces. Put three of them back into the plastic bag. For a work surface, I use a baking sheet flipped over that I've lightly oiled with vegetable oil. Roll out the piece of dough into a roughly rectangular shape; it doesn't need to be precise.
  • Paint the dough with the sesame oil, then sprinkle with about a half teaspoon of salt. Sprinkle minced scallions over the dough generously, leaving about 1/2 inch free space on all sides of the dough.
  • Roll the dough into a tight log starting from the longer side of the rectangle. Slice the log in half and pinch close the ends of the log to keep the scallions from spilling out. Take one half of the log and roll it tightly into a snail. Flatten the snail with the palm of your hand.

  • To make the sauce, combine the water, vinegar, soy sauce, chile flakes, garlic, ginger, and sesame oil. Taste and add extra water by the ½ teaspoon, if the flavor is too strong. Use right away or refrigerated up to 2 weeks in the fridge. Return to room temperature and shake or stir up before serving.
  • For the batter, in a medium bowl whisk together the flour, cornstarch, baking powder, sugar, baking powder, and pepper. Make a well in the center, add the club soda, bean paste, egg yolk, and garlic, then mix gently with a whisk. Do not whisk too much, or extra gluten will form in the batter, making it too thick and doughy. Whisk about 10 times, then let the batter rest for 10 minutes in the freezer so any remaining small clumps of flour can dissolve and blend into the mixture by themselves.
  • When you’re ready to make the pancakes, line a sheet pan with paper towels and set aside. Fold the scallions into the cold batter. Set a 10-inch nonstick skillet over high heat and add about 1 tablespoon of the oil. When the oil begins to shimmer and just barely smoke, add 1 cup of the scallion batter to the center of the pan. Using a spatula, spread it out to form a 7-inch pancake. (You don’t want the pancake to touch the sides of the pan, or the edges may burn before the center is cooked through.)
  • Reduce the heat to medium and cook for 4 to 5 minutes, until the bottom of the pancake has set. Once set, gently slide your spatula under the edge of the pancake and lift them, tilting the pan, so some of the hot oil runs underneath the pancake. Let cook for 2 to 3 minutes more, until the bottom is deep golden brown and crisp. You can check the color by gently lifting an edge of the pancake with your spatula. Now flip the pancake and cook on the other side for 3 to 4 minutes, until it is golden brown on the second side and cooked through. Transfer to the prepared sheet pan to drain. Wipe out the pan, set it back over high heat, add another tablespoon or so of oil, and repeat until all the pancakes are cooked. You should have 4 or 5 pancakes total. The finished pancakes can be kept on a clean sheet pan while you cook the remaining ones, but it’s best to eat them right away. (See the main post for reheating tips.)
