- Preheat oven to 350°F. Cook Ziti according to package directions until al dente, stirring often. Drain well, but DO NOT RINSE. Combine ricotta, Romano, 2 3/4 cups tomato sauce and pepper in large mixing bowl. Gently combine cooked ziti with cheese/sauce mixture. In a 13 by 9 by 2 inch pan, spread the ¼ cup reserved sauce. Add ziti. Top with mozzarella cheese. Cover loosely with aluminum foil and bake until mozzarella is thoroughly melted, about 12-15 minutes. Serve with garlic bread and additional sauce if desired.

- DO NOT RINSE OFF UNDER WATER!
- Combine ricotta, romano, tomato sauce (reserve 1/4 cup) and pepper in large mixing bowl.
- Gently combine cooked ziti with cheese/sauce mixture.
- In a 13"x9"x2" pan, spread the 1/4 cup reserved sauce.
- Add ziti and top with mozzarella cheese.
- Cover loosely with aluminum foil and bake until mozzarella is thoroughly melted.

EASY BAKED ZITI
This must be easy, since I make it almost every week. I replace regular pasta, with whole grain, such as Tinkiyada Brown Rice pasta, or Barilla plus. I used to add spinach for added nutrition, but hubby complained about having too much fiber in one dish, so I leave it out. This dish freezes very nicely, and is great for a repeat performance the following week.

- Boil water according package directions. Add pasta and olive oil to boiling water. Cook pasta till al-dente, drain.
- Combine Ricotta with with spinach and sprinkle with parmesan and garlic powder.
- Pour pasta into lasagna size baking pan. Combine most of mozzarella with Pasta, reserving a small amount of Mozzarella for top. Mix in Ricotta mixture. Spread tomato sauce over the top and mix in slightly, leaving some around the edges and top. Sprinkle remaining Mozzarella on top.
- Bake at about 375 for 30 minutes till bubbly.
BAKED ZITI
This is a great recipe for cold days when you crave something warm and delicious. It makes a ton but both the sauce and the pasta freeze well. I am a "dump cook" and don't have exact measures for my sauce recipe - the recipe below is my estimation of what I would use. My family loves it when I make this and the smell of the sauce simmering all afternoon is wonderful!!

- Begin by preparing sauce as follows: In a large dutch oven, saute onions and garlic in olive oil 1 or 2 minutes.
- Empty all four cans of crushed tomatoes into pot.
- Add basil, oregano, salt, crushed red pepper and brown sugar.
- Stir, bring to a boil and let simmer about 20 minutes.
- Stir sauce (this is when I usually will"taste adjust" any ingredients such as brown sugar and salt).
- Add meatballs that have just been browned and uncooked itailian sausage.
- Cover and simmer sauce for about 1 1/2- 2 hrs.
- About 10 minutes before sauce is done, mix ricotta cheese, eggs and parmesan cheese in a large bowl.
- Add about 2 1/2 cups of sauce to the cheese mixture and mix well.
- (Keep remaining sauce with meatballs and sausage warm).
- Toss cooked ziti with cheese/sauce mixture and spoon into a 9x13 inch baking pan.
- (you may need a larger pan or more than 1 pan).
- Sprinkle pasta with mozzarella cheese.
- Bake at 350 for 45 minutes to 1 hr.
- Serve pasta with the extra sauce, meatballs and sausage ladled over top of each serving.

- Preheat oven to 375 degrees F (190 degrees C). Butter a 2 quart ovenproof casserole dish; set aside.
- Cook pasta in a large pot of boiling salted water until al dente. Drain.
- Meanwhile, bring half-and-half, basil, and crushed red pepper to a simmer in a heavy, large saucepan over medium high heat. Add cheeses 1 handful at a time, stirring constantly until cheeses are melted and smooth. Remove from heat, and stir in egg yolks. Season with salt and black pepper to taste. Mix in pasta. Spoon into prepared dish.
- Bake until heated through, approximately 10 minutes. Serve hot.

- In a large mixing bowl combine spaghetti sauce with sour cream. Stir in broth.
- Add 1/2 cup Mozarella and 1/2 cup Parmesan cheese.
