Apple Pancakes with Apple Syrup image

These Apple Pancakes with Apple Syrup are so good. This is a recipe you will want to keep!

Number Of Ingredients 21

1/2 cup whole wheat flour
1 cup all-purpose flour
3/4 cup oats, uncooked ( (you can use the quick-cooking oats or the rolled oats in this recipe))
1/4 cup brown sugar
1 egg
2 teaspoons vanilla extract
2 tablespoons cooking oil
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 1/4 cups buttermilk ((can use regular milk))
1 cup grated apple or about 1 large apple, grated
1/2 cup nuts of your choice (Optional (I used walnuts))
1/2 cup raisins (Optional)
Butter or oil for cooking
1 1/4 cups 100% pure apple juice or could use apple cider
2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter or margarine
1/2 cup brown sugar
1 teaspoon lemon juice

Steps:

  • Combine all the ingredients and cook on griddle or in skillet until brown. I use about 1/4 cup batter to a pancake. You can add more milk if you want your batter thinner. This batter is thick.

4 pounds apples (about 8 large), peeled and chopped
3/4 to 1 cup sugar
1/4 cup water
3 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 cup creamy peanut butter

Steps:

  • In a greased 5-qt. slow cooker, combine the first 7 ingredients. Cook, covered, on low 8-10 hours or until apples are tender., Whisk in peanut butter until apple mixture is smooth. Cool to room temperature. Store in an airtight container in the refrigerator.

Number Of Ingredients 12

1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
2 eggs
3/4 cup sugar
1/3 cup canola oil
3 tablespoons milk
1-1/2 cups diced peeled apples
1 cup chopped walnuts
3/4 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened. , Fill 18 greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack.

Add a little zest and crunch to your favorite tasty treat with our Nutty Apple Dumplings that include delicious chopped chili lime peanuts.

1 pkg. (14.1 oz.) ready-to-use refrigerated pie crust (2 crusts)
4 small baking apples, peeled, cut in half and cored
1/4 cup chopped chili lime peanuts, divided
1-1/2 tsp. apple pie spice, divided
1 cup maple-flavored or pancake syrup
1 cup thawed COOL WHIP LITE Whipped Topping

Steps:

  • Heat oven to 400°F.
  • Place 1 pie crust on lightly floured surface; roll out to 10-1/2-inch round. Cut into 10x8-inch rectangle. Repeat with remaining pie crust. Discard pastry scraps or reserve for use in decorating tops of dumplings. (See tip.) Cut each rectangle into 4 smaller rectangles.
  • Place 1 apple piece in center of each pastry rectangle. Sprinkle evenly with 3 Tbsp. nuts and 1/2 tsp. apple pie spice. Gather 4 corners of each pastry rectangle over apple; pinch seams and points together to seal. Place on baking sheet sprayed with cooking spray.
  • Bake 30 to 35 min. or until golden brown. Cool slightly.
  • Cook syrup with remaining nuts and apple pie spice in saucepan on medium heat 5 min. or until heated through, stirring frequently. (Do not let mixture come to boil.) Drizzle over warm dumplings just before serving; top with COOL WHIP.
