This spice blend is all you need to add color and flavor to your favorite dishes.

1/4 cup kosher salt (reduce to 2 tablespoons if using MSG (see note))
2 tablespoons granulated garlic
1 1/2 tablespoons granulated onion powder
1 tablespoon ground annatto
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon ground turmeric
1/2 teaspoon ground black pepper (optional)

Steps:

  • In a mortar and pestle, grind the salt until fine. This breaks the salt down to the same size as the ground spices.
  • In a mixing bowl, combine the salt, garlic powder, onion powder, annatto, cumin, coriander, turmeric, and black pepper (if using).
  • Whisk the spices together until blended well.
  • Transfer the sazón to a jar with a tight-fitting lid. Store in a cool, dark place for 6 months or less.
  • Use as desired; 1 1/2 teaspoon equals one packet of sazón, while a portion size is 1/2 teaspoon.

Cumin-heavy sazón is among the most commonly used spice blends in Puerto Rican cooking, and is also popular throughout Latin America. This seasoning is an incredible cheat, and is typically found in the international section of most supermarkets. Commercial brands are flavor bombs pumped with monosodium glutamate - MSG - that can make almost anything taste better. While I'm not MSG-phobic, I do prefer making my own blends to control both the flavor and the salt content. This is my take on sazón, minus the MSG, and with turmeric added along with the standard annatto to imbue dishes with a golden hue. Adaptation is encouraged based on preference, and if you can't find ground annatto then sweet paprika is a perfect substitute. It will keep in an air-tight container for years.

1/4 cup cumin seed
2 tablespoons white peppercorns
2 tablespoons black peppercorns
3/4 cup salt
1 1/2 cups garlic powder
1/4 cup dried oregano

Steps:

  • In a small, dry skillet, combine cumin seeds and both kinds of peppercorns.
  • Roast over medium heat for 3 minutes, or until lightly toasted & fragrant. Transfer to small bowl to cool.
  • In a spice mill or with a mortar and pestle, grind the roasted spices until they are a fine powder.
  • Stir in salt, garlic powder and oregano.
  • Store sazon in airtight containers in cool, dark place.

This is a copycat version of sazon, which I always use in Puerto Rican dishes. Other versions of this recipe call for only paprika or turmeric. I find adding both achieves the reddish-orange color without affecting flavor. The salt in this recipe can be reduced or omitted as many dishes call for additional salt. I prefer to omit and just add salt as needed to dishes while I'm cooking. I hope you will enjoy it!
