ARTICHOKE AND BLACK BEAN NACHOS



Artichoke and Black Bean Nachos image

1 (9-ounce) bag red or blue corn tortillas
1 (15-ounce) can black beans, drained and rinsed
1 (12-ounce) jar marinated and quartered artichoke hearts
1 (8-ounce) bag pre-shredded Monterey jack
5 plum tomatoes, seeded and diced
1 cup sour cream
1/2 bunch scallions, cut into 1/4-inch thick slices

Steps:

  • Preheat the broiler.
  • On a heatproof serving platter, layer the tortillas to cover the surface of the platter. Top with 1/3 of the black beans. Place 1/3 of the artichokes on top of the black beans. Sprinkle some of the cheese and tomatoes on top of the artichokes. Repeat the layers 2 more times. Place under the broiler until the cheese melts. Garnish with dollops of sour cream and the chopped scallions.

I use the minute rice brown rice cups you can prepare in the microwave. They make these burritos even easier! As for the toppings, you can really add anything you'd like, these are just my suggestions!

1 cup cooked brown rice
4 flour tortillas, burrito size
1 cup lettuce

Steps:

  • Combine the black beans, salsa, and the rice in a saucepan and simmer for 5 minutes.
  • Remove from heat, cover, and let sit for 5 minutes.
  • In an ungreased skillet (or microwave), heat a tortilla until warm.
  • Spread a line of the bean mixture down the center.
  • Top with lettuce, tomato, avocado, and more salsa if desired.
  • Roll up and enjoy!

1 pound ground beef
1/4 cup chopped onion
1 can (15 ounces) black beans, rinsed and drained
1 cup salsa
16 corn or flour tortillas (6 to 8 inches)
2 cups shredded cheddar or Monterey Jack cheese
Sour cream and sliced ripe olives, optional

Steps:

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans and salsa; mix well. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Warm the tortillas; spoon 1/4 cup of the beef mixture off-center on each. Sprinkle with cheese. Top with sour cream and olives if desired. Fold the sides and ends over filling and roll up. Serve immediately.

1 medium onion, diced

Love this burrito from Cooking Light. Easy and tasty and can be made up 8 hours in advance. I double this recipe for my family. If doubling and you don't like spicy, stick with 1 chili. Also if doubling use 2 baking dishes. Burritos shouldn't touch each other while baking, it tends to make it mushy v/s crispy.

1 chipotle chile in adobo (from a 7-ouncecan )
1/2 cup reduced-fat sour cream
1 (15 ounce) can black beans, rinsed, drained, and divided
1 cup frozen whole kernel corn, thawed
4 (8 inch) flour tortillas
cooking spray
1 cup bottled salsa
1/2 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 350°.
  • Remove one chile from can. Chop chile. Combine sour cream and chile in a medium bowl; let stand 10 minutes.
  • Place half of beans in a food processor; process until finely chopped.(You can also add a can of refried beans and a can of black beans if doubling) Add chopped beans, remaining beans, and corn to sour cream mixture.
  • Spoon 1/2 cup bean mixture down the center of each tortilla. Roll up tortillas; place, seam side down, in an 11 x 7-inch baking dish coated with cooking spray. Spread salsa over tortillas; sprinkle with cheese. Cover and bake at 350° for 20 minutes or until thoroughly heated.

1/2 lb bulk Italian sausage, crumbled
2 tablespoons olive oil
1/2 cup chopped onion
1 garlic clove, minced
1 jalapeno, seeded and minced
1 large tomatoes, diced
2 cups trimmed cooked and diced artichoke hearts (not marinated)
salt and pepper, to taste
3 large eggs
8 medium flour tortillas
2 cups grated monterey jack cheese or 2 cups cheddar cheese

Steps:

  • In a skillet over medium heat, cook sausage until done; drain grease.
  • Add olive oil to sausage. Add onion, garlic and jalapeno; cook until onion is soft. Add tomatoes and artichokes; cook, stirring occasionally, for 3-4 minutes. Season with salt and pepper. Add eggs and cook, stirring until eggs are done.
  • Heat tortillas (on a griddle, if possible). Fill middle of each tortilla with artichoke mixture. Sprinkle with cheese. Fold ends, then roll up tortilla.

1 lb beef round steak
16 ounces black beans, canned
4 large tomatoes
1/2 cup onion
4 ounces green chilies
3 tablespoons cilantro
1 garlic clove
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon sage
1/2 teaspoon cayenne pepper

Steps:

  • Thinly slice the beef round, then cube into 1/4 inch cubes.
  • Rinse and drain the black beans.
  • Prepare the salsa fresca by blending the remaining ingredients in a food processor.
  • Take 1/4 of the salsa fresca and mix it with the cubed meat.
  • Take 1/4 of the salsa fresca and mix it with the black beans.
  • Allow the meat and beans to marinate for 45 minutes.
