ARTICHOKE AND BLACK BEAN NACHOS
Steps:
- Preheat the broiler.
- On a heatproof serving platter, layer the tortillas to cover the surface of the platter. Top with 1/3 of the black beans. Place 1/3 of the artichokes on top of the black beans. Sprinkle some of the cheese and tomatoes on top of the artichokes. Repeat the layers 2 more times. Place under the broiler until the cheese melts. Garnish with dollops of sour cream and the chopped scallions.
SUPER EASY BLACK BEAN BURRITOS
I use the minute rice brown rice cups you can prepare in the microwave. They make these burritos even easier! As for the toppings, you can really add anything you'd like, these are just my suggestions!

- Combine the black beans, salsa, and the rice in a saucepan and simmer for 5 minutes.
- Remove from heat, cover, and let sit for 5 minutes.

- Top with lettuce, tomato, avocado, and more salsa if desired.
- Roll up and enjoy!

- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans and salsa; mix well. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. BLACK BEAN BURRITOS
Love this burrito from Cooking Light. Easy and tasty and can be made up 8 hours in advance. I double this recipe for my family. If doubling and you don't like spicy, stick with 1 chili. Also if doubling use 2 baking dishes. Burritos shouldn't touch each other while baking, it tends to make it mushy v/s crispy.

- Preheat oven to 350°.
- Remove one chile from can. Chop chile. Combine sour cream and chile in a medium bowl; let stand 10 minutes.
- Place half of beans in a food processor; process until finely chopped.(You can also add a can of refried beans and a can of black beans if doubling) Add chopped beans, remaining beans, and corn to sour cream mixture.
- Spoon 1/2 cup bean mixture down the center of each tortilla. Roll up tortillas; place, seam side down, in an 11 x 7-inch baking dish coated with cooking spray. Spread salsa over tortillas; sprinkle with cheese. Cover and bake at 350° for 20 minutes or until thoroughly heated.

- In a skillet over medium heat, cook sausage until done; drain grease.

- Thinly slice the beef round, then cube into 1/4 inch cubes.
- Rinse and drain the black beans.
- Prepare the salsa fresca by blending the remaining ingredients in a food processor.
- Take 1/4 of the salsa fresca and mix it with the cubed meat.
- Take 1/4 of the salsa fresca and mix it with the black beans.
- Allow the meat and beans to marinate for 45 minutes.
- Cook the meat in a skillet over a high heat, until the meat is no longer pink and all the liquid has evaporated.
- Microwave the beans for 1 minute on high, or until hot.
- Serve with warm tortillas.
