VINEGAR-BASED BBQ SAUCE
It's not a proper Southern feast without a Vinegar-Based BBQ Sauce on the table. Most popular in eastern Carolina, this tasty condiment is typically made with just three simple ingredients: crushed red pepper, apple cider vinegar, and salt. But feel free to make it your own! Southern Living test kitchen director and host of BBQ&A, Robby Melvin, throws in a bit of brown sugar and hot pepper sauce for good measure. Add in a dash of cayenne pepper if your desired sauce packs a punch. Keep in mind vinegar-based sauce does not pair well with any form of BBQ beef. - Combine white wine vinegar, cider vinegar, brown sugar, cayenne pepper, crushed red pepper, hot pepper sauce, salt, and pepper in a jar or bottle with a tight-fitting lid. Shake until sugar is fully dissolved. Note: Making sauce days in advance will allow flavors to blend.

- Combine the bacon, beef stock, cider vinegar, white vinegar, brown sugar, ketchup, red pepper flakes, chile powder and 1 tablespoon salt in a medium saucepan. Bring to a boil, then reduce the heat to medium low and simmer until the bacon renders its fat, about 15 minutes. Remove from the heat; set aside to let the flavors develop, 20 minutes. Remove the bacon. Reheat the sauce before serving.

- Combine the vinegar, brown sugar, Worcestershire sauce, salt, black pepper, and red pepper flakes in a saucepan and bring to a boil over med-high heat.
- Squeeze the lemon juice into the pan and add the squeezed halves.

DRY RUBBED RIBS WITH VINEGAR BBQ SAUCE

- Combine all of the ingredients in a small jar or bowl.
- Coat the ribs generously with the rub and refrigerate it for at least 12 hours. It will be better if refrigerated for 24 hours.
- Preheat the oven to 300 degrees F.
- Arrange the ribs on a sheet pan. Pour 1 beer into the bottom of the pan and cover the pan with foil, trying not to have the foil touch the meat. Put the ribs in the preheated oven and roast for 2 hours. Check the ribs after 1 hour and turn them over. Add more beer, if needed. Rotate the pan.
- After 2 hours, remove the foil and roast for 30 minutes more. Remove from the oven and cool.
- Sauce: (This can be done while the ribs are roasting.)
- Combine all of the ingredients in a saucepan and bring to a boil over medium heat. Reduce the heat and simmer for 15 minutes. The sauce will not be thick but it should be a homogeneous mixture and very well flavored. Turn off the heat and let cool.
- Preheat the grill to a medium-high heat.
- Arrange the ribs, meat side down, on the grill and grill until they start to get a little brown and charred, then brush with the sauce. Turn the ribs over, brush with the sauce and grill for 4 to 5 minutes. Brush with the sauce and again turn the ribs over. Grill for another 4 to 5 minutes. At this point the ribs should be nicely browned and really well flavored. Remove them from the grill to a cutting board. Cut the ribs apart and arrange on a serving platter. Serve with lots of napkins.
WESTERN NORTH CAROLINA VINEGAR BARBEQUE SAUCE
This is a Southern vinegar barbeque sauce with a splash of ketchup. I transfer some of the sauce to a plastic squeeze bottle for serving, and keep the rest in a glass quart jar in the refrigerator. Be sure to let the sauce come to room temperature before serving (you can warm it in the microwave if you want.)

- Place the vinegar, sugar, ketchup, butter, hot pepper sauce, lemon juice, Worcestershire sauce, red pepper flakes, mustard powder, salt, and pepper into a saucepan. Bring to a simmer over high heat, then reduce heat to medium-low, and simmer 30 minutes longer, stirring occasionally. Remove from the stove and pour into a heatproof bowl. Cover, and refrigerate the sauce for 2 days.
- Strain the sauce through a mesh sieve to remove the red pepper flakes. Store the sauce in the refrigerator. Bring to room temperature before serving.

MUSTARD & VINEGAR BARBECUE SAUCE
Though the first time I made this sauce, I was hesitant -- I mean, just LOOK at how much VINEGAR is in it! After "The Hasenpfeffer Incident" about 15 years ago, I've been extremely cautious of recipes that call for more than a few tablespoonsful of the stuff. But the lack of tomato sauce and the large amount of mustard intrigued me. After a while, that is...I had this gem sitting in my database for at least a year before I mustered (HA!) up the courage to serve it to my unsuspecting family. As it turned out, I had no reason for concern. I used it to baste chicken as I cooked it. They asked for seconds immediately, and for thirds, but alas, there were none. I was ordered to make chicken with this sauce again. And again. Since I do not currently have a grill, I used my grill pan, and cooked it over medium heat, covered with whatever lid I could find lying around that would sort of cover it, mostly. An added bonus of the grill pan is the sauce which collects in the bottom and caramelizes. They fight over who gets the pan scrapings! Plus, I had to explain what "caramelization" means, so the kids got a cooking lesson as well!
