- Heat a skillet or griddle over medium heat, and coat with cooking spray. Spread 1 tablespoon of peanut butter onto one side of each slice of bread. Place banana slices onto the peanut buttered side of one slice, top with the other slice and press together firmly. Fry the sandwich until golden brown on each side, about 2 minutes per side.

- Spread each bread slice with 1 Tbsp. peanut butter. Top 1 of the bread slices with banana slices. Cover with second bread slice.
- Cut sandwich diagonally in half.

PEANUT BUTTER AND BANANA SANDWICH
Steps:
- Spread peanut butter side to side, evenly on 1 side of each piece of bread. Slice banana in 3/4-inch slices and place on 1 piece of bread with peanut butter. Banana slices should be close together, and cover 1 side completely (usually 9 slices). Top with the other slice of bread.
- Heat butter in saute pan on medium heat. Place sandwich in pan and brown for approximately 3 to 5 minutes or until golden brown. Add 2 ounces of butter to the pan and flip sandwich to other side and continue cooking for 2 to 5 minutes or until golden brown and peanut butter is melting. Cut into quarters and serve very hot.
BANANA ABANDJ SANDWICH
Steps:
- For the sandwich: Take the bread slices and arrange them on a large plate or cutting board. Slather the almond butter, using 1 tablespoon per slice of bread. Layer the banana slices on top of the almond butter. Then shake a few goji berries on top and sprinkle with a pinch of cinnamon. Leave each sandwich open-faced (without a slice of bread on top).
- For the spread: Process the cherries, vinegar, lemon juice, cayenne, salt, apples and chipotle in a food processor until slightly smooth with a bit of chunky texture, 15 seconds. Drizzle the spread on top of the open-faced sandwiches in an artful fashion. Serve immediately.
BANANA FRENCH TOAST SANDWICHES

- Whisk the eggs, milk, vanilla, cinnamon, and salt together in a wide bowl until thoroughly combined. Warm a tablespoon of butter in a pan or griddle over medium heat.
- Cut each of your french bread slices into half, creating 8 halves total. Use a fork to dip the bread into your egg-milk mixture long enough to be fully immersed and coated, but not so long that it starts to disintegrate and fall apart. Gently transfer the bread onto the pan to fry.
- Work with 2 bread halves at a time. Fry each side for approx. 1-1/2 minutes, or until golden brown. Once both halves have been fried, set them aside on a plate.
- Now, dip 2 new bread halves into the egg-milk mixture, but this time, fry only one side of each piece of bread. Before flipping to fry the other side, assemble your sandwiches: Add 2 of the banana slices you've cut up to the completely fried toast halves that were initially made. Then top the sandwiches with the half-fried slices of bread that are in the pan, making sure the non-fried sides are facing up. Gently transfer these sandwiches back into the pan and place the non-fried side of the sandwich down on the pan. Repeat this step for the remaining sandwiches to-be made.
- Serve with a dusting of powdered sugar and warm maple syrup if you like.

- Keep all the ingredients ready. Peel and slice bananas.
- Mash the bananas well with a fork and keep it ready. Heat ghee in a pan (preferably non stick), add cashews. Saute it until it turns golden brown.
