Mediterranean Shrimp Recipe with Bell Peppers image

Easy shrimp recipe, coated in Mediterranean spices and skillet-cooked in a light white wine and olive oil sauce with shallots, bell peppers and tomatoes. Ready in 25 minutes or less!

1 1/4 lb large shrimp (or prawns, peeled and deveined (if frozen, be sure to thaw first))
1 tbsp all-purpose flour
1 to 2 tsp smoked Spanish paprika
1/2 tsp each salt and pepper
1/2 tsp ground coriander
1/4 tsp cayenne
1/4 tsp sugar
1 tbsp butter (I prefer to use ghee clarified butter)
3 tbsp Extra virgin olive oil
1/2 red onion, (thinly sliced)
4 garlic cloves, (chopped)
1/2 green bell pepper and 1/2 yellow bell pepper, (cored and sliced)
1 cup canned diced tomato
1/3 cup chicken or vegetable broth
2 tbsp dry white wine
2 tbsp fresh lemon juice
1/3 cup chopped parsley leaves

Steps:

  • Pat the shrimp dry and place it in a large bowl. Add the flour, smoked paprika, salt and pepper, coriander, cayenne, and sugar. Toss until the shrimp is well-coated.
  • In a large cast iron skillet, melt the butter with the olive oil over medium heat. Add the shallots and garlic. Cook for 2-3 minutes, stirring regularly, until fragrant (be sure not to burn the garlic.) Add the bell peppers and cook another 4 minutes or so, tossing occasionally.
  • Now add the shrimp. Cook for 1 to 2 minutes, then add the diced tomatoes, broth, white wine and lemon juice. Cook for a couple more minutes or until the shrimp turns bright orange.
  • Finally, stir in the chopped fresh parsley and serve!

1 ½ tbsp dry oregano
1 tsp ground cumin
1 tsp ground coriander
½ tsp sweet paprika
1 lb large shrimp (prawns, peeled, and deveined)
2 tbsp Extra virgin olive oil
½ medium red onion (thinly sliced)
5 garlic cloves (minced and divided)
1 bell pepper (cored and sliced into sticks)
1 to 2 zucchini (halved length-wise, sliced into ½ moons (you can use 1 zucchini and 1 yellow squash))
1 cup cooked chickpeas (from canned chickpeas, drained)
1 ½ cups cherry tomatoes (halved)
Pinch kosher salt
Pinch black pepper
1 large lemon (juice of)
Handful fresh basil leaves (torn or sliced into ribbons (you can use a different herb, depending on what's available to you))

Steps:

  • In a small bowl, combine the spices (oregano, cumin, coriander, and paprika.)
  • Pat shrimp dry and season with kosher salt and 1 ½ tsp of the spice mixture. Set aside briefly or refrigerate till later. (Reserve the remaining spice mixture for the vegetables.)
  • In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium heat. Add onions and ½ the amount of garlic and cook for 3 to 4 minutes, tossing regularly till fragrant (do not allow the garlic to burn.)
  • Add zucchini, bell peppers, and chickpeas. Season with salt and pepper and the remaining spice mixture. Toss to combine. If needed, raise the heat just a bit and cook the veggies until tender, tossing regularly (about 5 to 7 minutes.)
  • Transfer the veggies to a large plate for now. Return the skillet to the heat and add a little bit of extra virgin olive oil. Add the seasoned shrimp and remaining garlic. Cook over medium-high heat, stirring occasionally, until shrimp is totally pink (about 4 to 5 minutes).
  • Add the cooked vegetables back to the skillet with the shrimp. Add cherry tomatoes and lemon juice. Give everything a good toss. Finish with the fresh basil.

3 tablespoons olive oil
1 1/2-2 tablespoons minced garlic
1 cup red onion, chopped
1 cup scallion, sliced diagonally 1/2-inch pieces (both white and green)
1 1/2-2 cups tomatoes, peeled, seeded and diced
3 tablespoons dry white wine
1/2-2/3 cup feta cheese
8 -10 ounces bow tie pasta
1 1/2 lbs medium shrimp, peeled
1/3 cup kalamata olive, chopped (save a few whole olives for garnish)
1 tablespoon butter
fresh ground black pepper

Steps:

  • Heat 2 TBSP of the olive oil in a large nonreactive skillet.
  • Add the garlic, onions, and scallion; saute over medium heat for 2 minutes, stirring frequently.
  • Stir in tomatoes: cook over high heat for 5 minutes.
  • Stir in the wine and cook 1 minute longer.
  • Remove from heat and scrape into a large bowl.
  • Stir in half of the feta cheese and set aside.
  • Meanwhile, Cook bowtie pasta according to package directions, al dente.
  • Remove from heat and drain.
  • In the same pan the sauce was prepared, heat the remaining TBSP olive oil.
  • Add shrimp, and saute over medium-high heat until cooked through, about 2 minutes.
  • Add chopped olives ans the sauce.
  • Lower the heat and cook 1 minute.
  • Stir in remaining feta cheese, the butter and the freshly ground black pepper.
  • Toss the sauce with the pasta and garnish with remaining whole olives.

1 cup cooked fresh shrimp
3 Roma tomatoes (chopped)
2 avocados (chopped)
1/2 cup red onion (chopped or sliced)
1 tablespoon olive oil

fresh cilantro to taste (I used 1/3 cup chopped leaves)

Steps:

  • Prepare your Shrimp- I know that shrimp can come in a can, but please do not use canned shrimp for this salad. I buy fresh shrimp right at the Seafood counter of my local grocery and in this case, to make it easy, buy the peeled and deveined shrimp. Toss a little bit of olive oil and about a 1/2 a tablespoon of butter right in your pan and saute your shrimp till cooked. The shrimp turn the glossy uncooked color to white once ready. Do not overcook. My shrimp took approximately 6 minutes to saute. [mv_img id="7412"]
  • Put shrimp in fridge to cool down
  • Chop your veggies - First you need to peel your avocados and then chop down your avocados and tomatoes into bites. You can really adjust the level of bite you like to tiny bits or large chunks. I like to change it up depending on what I am serving this salad for. If its a side salad, i like the smaller bits of veggies but if I am serving as a meal, I like bigger bites[mv_img id="7413"]
  • Pull your shrimp out of fridge and remove tails. You can easily slide tails off if you pay attention with how they are on and this reserves a lot of shrimp meat. If you cut the tales off, you are missing extra shrimp. It doesn't take too long to take the tails off, just a few extra minutes.
  • Chop your shrimp down into bites, I usually cut each shrimp into 3 pieces[mv_img id="7414"]
  • In a separate bowl, add your lemon juice, olive oil and spices
  • Combine your veggies and shrimp into one bowl
  • Pour your olive oil mixture of your salad and stir
  • Add optional fresh cilantro- I would not add dried herbs to this salad

1 small Sweet Onion (like OSO or Walla Walla), thinly sliced
2-4 Cloves Garlic, minced
4-6 ozs fresh thinly sliced mushrooms, canned and drained ok
1 LB linguine
1 LB Shrimp, large 40 count, cooked, or raw
3 ozs Goat Cheese
4 ozs Plain No-Fat Yogurt
3 oz Sun-dried tomatoes, or 1 sm. can diced tomatoes, drained
2 TBL Lite Sour Cream
8 lge leaves Fresh Basil sliced, or 1 TBL dried and crushed
Salt and Black Pepper to taste

Steps:

  • 1. Cook linguine in boiling salted water, when done a la dente, drain, set aside. 2. In saute or fry pan, using med-high heat, saute minced garlic in olive oil, add sliced onions. When onions are translucent, add mushrooms. 3. After 5 minutes total cooking time, add sun-dried tomatoes for another minute. Add salt and pepper to taste. Now add goat cheese, yogurt, and sour cream. 4. Within another minute or two, add raw shrimp. One minute more while stirring, as shrimp 'pinks', simmer one last half-minute. If shrimp is already cooked, please add only in the last half-minute to sauté mixture. 5. Pour mixture over individual plates of linguine. Sprinkle with fresh or dried Basil. 6. Optional: Serve with a simple romaine and arugula (or plain romaine) salad with campari (or other) tomatoes, little crumbled goat cheese using olive oil and red wine vinegar with a splash of balsamic vinegar, add pieces of pecans or walnuts, if desired.

Add garlic and saute for 15 seconds until you get a good whiff of its aroma.
  • Add liquid ingredients and peas, half of mint and basil leaves and simmer for a minute or two just until the shrimp are cooked through and the vegetables are tender but still crisp.
  • Taste and season and transfer to a bowl; serve over rice, garnish with remaining mint, basil and green scallions rounds.

¾ teaspoon kosher salt (divided)

1 small red onion (chopped)
2 cloves garlic (minced (about 2 teaspoons))
1 14.5-ounce can fire roasted diced tomatoes in their juices

1 tablespoon red wine vinegar
1 14-ounce can artichoke hearts (drained and quartered)
½ cup pitted Kalamata olives

Steps:

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Pat the shrimp dry, place in a mixing bowl, and sprinkle with ½ teaspoon salt and ¼ teaspoon black pepper. Toss to coat, then set aside.
  • In a large, ovenproof skillet over medium heat, heat the olive oil. Add onion and sprinkle with the remaining ¼ teaspoon salt and ¼ teaspoon black pepper. Cook, stirring occasionally, until softened, about 5 minutes. Reduce the heat as needed so that the onion softens but does not brown. Add the garlic and cook just until fragrant, about 30 seconds.
  • Add the tomatoes, oregano, and red pepper flakes. Reduce the heat to medium-low and let gently simmer for 10 minutes. Stir in the red wine vinegar and honey. Remove from the heat.
  • Scatter the artichokes and olives over the top, then arrange the shrimp on top in a single layer. Sprinkle with the feta.
  • Bake for 10 to 12 minutes, until the tomatoes are bubbling, cheese has browned slightly, and the shrimp are cooked through. Squeeze the lemon juice over the top and sprinkle with parsley. Enjoy hot.
