Savoury Turkey Sloppy Joes, an Easy Weekend Meal image

2 Tbsp. oil
1 lb. ground turkey (or chicken)
1 red pepper, diced
1 onion, diced
2 cloves garlic, minced
1 tsp. chili powder
¼ tsp. smoked paprika
¼ tsp. salt
1 cup crushed tomatoes
¼ cup ketchup
¼ cup chili sauce (can substitute additional ketchup)
2 Tbsp. molasses
1 Tbsp. mustard (I use Dijon)
1 cup water
1 Tbsp. cider vinegar
1 tsp. Worcestershire sauce
Freshly ground black pepper, to taste

Steps:

  • Over medium heat, warm 1 Tbsp. of the oil in a large pot. Add the turkey and break it up with a wooden spoon. Saute until cooked, stirring often. Remove to a plate.
  • In the same pot, add diced onion, pepper, garlic, spices, and salt. Saute until soft but not browned (about 5 minutes).
  • Add tomatoes, ketchup, chili sauce, molasses, mustard, water, and cooked turkey. Bring to a simmer and cook, stirring often, 20 minutes.
  • Stir in vinegar and Worcestershire sauce and season with pepper. Cook five more minutes.
  • Serve over toasted buns or use as a taco filling.

1 ½ tablespoon olive oil
½ large sweet yellow or red onion, diced into ¼" pieces
1 lb ground turkey (preferably 93% lean)
2 minced garlic cloves
1, 15 oz. can tomato sauce
2 tablespoons tomato paste
2 tablespoons maple syrup (or honey)
1 tablespoon distilled white vinegar
2 teaspoons molasses
1 teaspoon Worcestershire sauce
½ teaspoon onion powder
½ teaspoon yellow mustard powder
¾ teaspoon smoked paprika
1 ½ teaspoon chili powder
½ teaspoon salt
6 hamburger buns, toasted
¾ cup shredded mozzarella cheese or 6 cheddar cheese slices (optional)

Steps:

  • Heat a large saute pan or electric skillet to medium or medium-high heat. Add the olive oil, onions, and ground meat and saute for 3 ½ -5 minutes, or until the meat is cooked through and the onions are starting to turn translucent.
  • Add the minced garlic to the pan and saute, stirring every 10 seconds or so, for 1 minute, or until the garlic is just getting fragrant.
  • Add the tomato sauce, tomato paste, maple syrup, vinegar, molasses, Worcestershire sauce, dried spices, and salt to the pan. Stir the mixture thoroughly or until the spices and molasses dissolve into the tomato sauce.
  • Cook the sloppy joes for 7-10 minutes, stirring every minute or so, or until the sauce has thickened up and started to turn a darker red. Note: if the sauce boils too hard or looks like it's starting to burn around the edges as it cooks, turn the heat down to medium-low.
  • Remove the pan from the heat and serve hot on toasted buns with shredded cheese or cheese slices on top!

1 medium onion, finely chopped
1 small green pepper, chopped
2 cans (8 ounces each) no-salt-added tomato sauce
1 cup water
2 envelopes sloppy joe mix
1 tablespoon brown sugar
10 hamburger buns, split

Steps:

  • In a large nonstick skillet coated with cooking spray, cook the turkey, onion and pepper over medium heat until meat is no longer pink; drain. Transfer to a 3-qt. slow cooker. , Stir in the tomato sauce, water, sloppy joe mix and brown sugar. Cover and cook on low for 4-5 hours or until flavors are blended. Spoon 1/2 cup onto each bun.

3/4 cup onion (diced)
1/2 cup celery (diced)
1/4 cup carrot (finely diced)
2 tablespoons garlic (diced)
1/2 teaspoon sage
1/2 teaspoon thyme
1/4 teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon red pepper flakes
gravy mix (one packet of your favorite brown gravy)

Steps:

  • In a skillet combine 1 tsp olive oil, garlic, onion, celery, and carrot sauté till tender. Add ground turkey and brown.
  • Add spices including salt and pepper. Add one packaged turkey gravy mix of your choice - including water as directed on the package.
  • Cook for 15 more minutes. Serve over roll, rice or potatoes.
