CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

I found the original recipe on allrecipes.com, but I didn't have some of the ingredients, so I added my own flair and came up with this one. It was great! My fiance' would concur! (My picture is a double recipe so the slices are huge.)

1 egg white
1 c fat free milk
3/4 c panko bread crumbs, plain
1/2 c onion, finely chopped
1 tsp louisiana hot sauce (or as much or little as you'd like)
1 tsp lawry's seasoned salt
1/4 tsp black pepper
1 lb lean ground beef
1/2 c ketchup
1/4 c bbq sauce of your choosing
1/2 Tbsp water
2 Tbsp brown sugar
2 Tbsp apple cider vinegar
1 Tbsp worcestershire sauce

Steps:

  • 1. Mix first 8 ingredients in a bowl. Move to 11" x 7" x 2" baking dish (I used a covered stoneware dish) & shape into a loaf.
  • 2. Mix remaining ingredients in another bowl until well blended. Pour over meat loaf.
  • 3. Bake in 325 degree oven for 1 hour - 1 hour 15 minutes or until meat is no longer pink or thermometer reading is 160F when inserted in the middle of the loaf. (If microwaving, will take 45 minutes-1 hour depending on wattage of microwave. Mine is 1100 watts and took about 50 minutes to cook the meat loaf.) Let stand 10 minutes before slicing.

2 teaspoons canola oil
2 large eggs, lightly beaten
1/3 cup 2% milk
2 teaspoons Worcestershire sauce

1/2 teaspoon pepper
1/2 teaspoon dried thyme
1-1/2 pounds ground beef
1/2 pound ground pork
3/4 cup ketchup
1/4 cup packed brown sugar

Steps:

  • Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. Crumble beef and pork over mixture and mix well. Shape into a loaf; place in a greased 11x7-in. baking dish., Bake, uncovered, at 350° for 1 hour. Combine ketchup and brown sugar; spread half of sauce over meat loaf. Bake 15-20 minutes longer or until no pink remains and a thermometer reads 160°. Let stand for 10 minutes before slicing. Serve with remaining sauce. Freeze option: Bake meat loaf without sauce. Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf and place in a greased shallow baking pan. Prepare sauce as directed; spread half of sauce over meat loaf. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Serve with remaining sauce.

1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped cremini mushrooms
1/2 cup pitted prunes, chopped
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
1 clove garlic, minced
1 medium onion, grated
1/2 cup ketchup
Kosher salt and freshly ground black pepper
2 tablespoons apricot preserves

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.

Got this out of a Betty Crocker book. It is a very good meatloaf. My husband loves it. Give it a try and let me know what you think. Personally, I don't like to bite into hard onions so I sautee my onions before putting them into the mixture. Hope that is a good tip for you.

This is by far my favorite meatloaf recipe. It is moist and savory, and has always been a big hit anytime I've made it. If you want to lighten it up, you can substitute ground turkey, and it still turns out great!

2 lbs ground beef (I usually use 90/10)
1 medium onion, finely chopped
2 eggs
2 teaspoons minced garlic, plus more
garlic, to taste
2 teaspoons thyme
2 teaspoons rosemary
1 1/2 tablespoons parsley
2 1/2 teaspoons Dijon mustard or 2 1/2 teaspoons spiced mustard
1 1/2 teaspoons barbecue sauce
1/2 teaspoon Worcestershire sauce
1/2 cup ketchup
2/3 cup seasoned bread crumbs

  • mix all ingredients well, add additional salt and pepper if you like.

1 c onion, chopped
1/2 bell pepper, any color
1 c seasoned bread crumbs
1 Tbsp brown sugar
1 c evaporated milk (pet or store brand works)
2 large eggs, slightly beaten
1 tsp seasoned salt
1/4 tsp lemon pepper
2 tsp dry mustard
SAUCE FOR PICANTE TOPPING :
3 Tbsp brown sugar
1/4 tsp nutmeg
1/2 c ketchup

Steps:

  • 1. Meat loaf: Combine all ingredients in meat loaf; mix well and put in a well sprayed loaf pan. Bake in 350^ oven for 1 hour. While this is baking: combine the picante topping ingredients, mixing well . After meatloaf has baked for 40 minutes remove from oven and drain any collected grease carefully so as not to burn yourself. Now Pour some of the Picante topping over top of meatloaf and place back in the oven to continue baking until done. Note : I have made this in the microwave several times using a glass loaf dish and it comes out great and needs only about 20 minutes to cook.--- This is so good with the topping- that I often make extra to serve with the meat slices.

SAVORY SPICY MEATLOAF AND SAUCE

I modified this recipe from my mom's original. This recipe uses steak sauces, so it's more flavorful than regular versions, I think. And the sauce uses the same ingredients as the meatloaf recipe, so you just need to get everything out once! Feel free to adjust the spices to your tastes, and the measurements are what I guesstimate them to be. I just eyeball it, and you can too. I'd say this yields about 5-6 slices, or 2-3 servings for 2 people. This is the first recipe I've posted, so sorry if it's a little disorganized. Enjoy!

  • Bake at 350 degrees for 25 minutes.
  • Meanwhile, combine all sauce ingredients in a small saucepan.
  • Bring contents to a boil, then reduce to a simmer while the meatloaf cooks.
  • After the 25 minutes, brush meatloaf with sauce and bake 5 more minutes.

Another favourite Campbell's Soup recipe. For years, I thought this soup was no longer on the market and I was so sad because this is the best meat loaf I've ever tasted. Just for the heck of it, I recently asked my mom to look for it in the big city and guess what? It IS still available, just not out in the boonies where we live! I was so excited. You can bet this will be a regular in our home once again, now that I've seriously stocked up on Golden Mushroom Soup!!!! For a slightly different flavour, substitute 1/4 cup of the water for Burgundy or other dry red wine.

2 (10 3/4 ounce) cans Campbell's Golden Mushroom soup
1 1/2 lbs ground beef
1/2 cup dry breadcrumbs
1/4 cup finely chopped onion
1 tablespoon Worcestershire sauce
1/8 teaspoon pepper
1 egg, beaten
6 medium potatoes, quartered
6 medium carrots, cut into 2-inch pieces
3/4 cup water
fluted fresh mushrooms (optional)
fresh rosemary sprig (optional)

Steps:

  • In a large bowl, mix thoroughly HALF A CUP of soup, beef, bread crumbs, onion, Worcestershire sauce, pepper and egg.
  • In a 3-quart oblong baking dish, firmly shape meat into 8x4-inch loaf. Arrange potatoes and carrots around meat loaf.
  • Bake at 375°F for 45 minutes. Spoon off fat.
  • Meanwhile, in a small bowl combine remaining soup and water. Pour soup mixture over vegetables and meat loaf.
  • Bake 30-45 minutes longer or until vegetables are fork-tender and meat loaf is no longer pink. (160-170°F internal temp.).
  • To serve, arrange meat loaf with vegetables on platter. Spoon some sauce over meat loaf; pass remaining sauce.
  • Garnish with fresh rosemary and mushrooms, if desired.
