- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a mini-muffin pan with cooking spray.
- Mix turkey sausage, garlic, and sage in a skillet over medium-high heat; cook and stir until browned, about 6 minutes. Drain.
- Mix browned sausage mixture, quinoa, Cheddar cheese, Parmesan cheese, green onions, eggs, flour, and black pepper together in a medium bowl until well-blended. Spoon mixture into prepared muffin cups.
- Bake in the preheated oven until golden brown, about 20 minutes.

CHEESY QUINOA WITH TURKEY KIELBASA

- Preheat the oven to 400 degrees F. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the garlic and cook, stirring, until softened, about 1 minute. Add 1 cup water, the quinoa, chicken broth, tomatoes, 1/4 teaspoon salt and a few grinds of pepper; bring to a simmer, stirring. Reduce the heat to medium low, cover and cook until the quinoa is tender and the liquid is mostly absorbed, 12 to 15 minutes. Remove from the heat and stir in the cheese and parsley. Cover to keep warm.
- Meanwhile, toss the broccoli with the remaining 1 tablespoon olive oil on a baking sheet; season with salt and pepper. Add the kielbasa to the baking sheet. Roast until the broccoli starts browning and the kielbasa is hot throughout, 15 to 18 minutes. Let cool slightly, then slice the kielbasa. Serve the quinoa topped with the kielbasa, broccoli and more cheese.

TURKEY BREAKFAST SAUSAGE PATTIES
I combined different spices to achieve what tastes almost as good, if not better than regular sausage. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

Steps:
- Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
- If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.
- Form into patties and cook as needed, freezing leftovers.
- Don't overcook or they will dry out--remove from the heat as soon as they're no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking).

QUINOA WITH TURKEY SAUSAGE AND VEGGIES

- In a medium saucepan, cook quinoa according to package directions. Set aside.
- While quinoa is cooking, heat a large skillet over medium-high heat, spray with cooking spray, and add sausages in a single layer. Cook until browned on both sides, turning at lease once, about 4 to 5 minutes. Add ½ C chicken stock cover, and reduce heat to simmer until sausages are cooked through and ale has almost completely evaporated, 5 to 10 minutes. Remove sausages to a cutting board and cut into half- inch pieces.
- Return skillet to stove over medium-high heat and add olive oil. Add red chili, yellow peppers, onion and zucchini. Sauté, stirring occasionally, until soft and starting to brown, about 5 minutes. Add garlic and spices, stir to combine, and cook for 2 minutes. Add tomato and remaining ½ C chicken stock, simmer until ale is reduced by half.
- Add in quinoa and sausages. Mix and warm through.
