SAVORY SWEET POTATO CASSEROLE
This savory sweet potato casserole recipe is made with a creamy garlicky mashed filling, and sprinkled with the most irresistible maple rosemary walnut topping. See notes above for possible ingredient variations.

- Place the sweet potatoes in a large stockpot. Fill the pot with cold water, enough that the water line sits about 1 inch above the potatoes. Stir the garlic and 1 tablespoon sea salt into the water. Turn the heat to high and cook until the water comes to a boil. Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking the potatoes for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance. Carefully drain out all of the water.
- Meanwhile, as the sweet potatoes are boiling, heat the butter, milk, smoked paprika, and an additional 1.5 teaspoons of sea salt together either in a small saucepan or in the microwave until the butter is just melted and warm. (You want to avoid boiling the milk.) Set aside until ready to use.
- After draining the water, immediately return the sweet potatoes to the hot stockpot, place it back on the hot burner, and turn the heat down to low. Using two oven mitts, carefully hold the handles on the stockpot and shake it gently on the burner for about 1 minute to help cook off some of the remaining steam within the potatoes. Remove the stockpot entirely from the heat and set it on a flat, heatproof surface.
- Using your preferred kind of potato masher (I recommend this one in general, or this one for extra-smooth), mash the sweet potatoes to your desired consistency. Pour the melted butter mixture over the potatoes, and fold it in with a wooden spoon or spatula until potatoes have soaked up the liquid. Give the mixture a taste, and season with extra salt, pepper, and/or smoked paprika as needed, to taste. Set aside.
- In a separate small bowl, stir together the maple rosemary walnut topping ingredients until evenly combined.
- Heat oven to 350°F and grease a 9×13-inch pan with baking spray. Spread the mashed sweet potatoes in an even layer in the pan, and sprinkle evenly with the walnut topping. Bake for 20 minutes, or until the walnuts are toasted and fragrant (but not burnt) and the potatoes are warmed through. Transfer baking pan to a wire rack.
- Then serve warm, garnished with fresh chives, extra black pepper, or any extra toppings that sound good!

- Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking dish.
- Arrange 1/3 of the sweet potato slices in the bottom of the prepared baking dish. Spread 1/2 of the broccoli over top and sprinkle with 1/2 cup Cheddar cheese. Repeat layers once more. Layer remaining sweet potatoes on top.

This is sort of a gourmet version of the baked potato but it's quite an easy process. You end up with a potato skin so delectable that you feel compelled to eat it (which is where lots of the vitamins are.) I like to use baking-sized Russets for this recipe but you can use whatever you have. If you're baking smaller potatoes, just cut back on the time a bit. It's important that all the potatoes be about the same size to insure uniform doneness. Also, I use extra virgin olive oil because it comes from the first pressing and it's pure, not extracted by the use of chemicals as in the case of cheaper olive oils.

- Preheat the oven to 400-degrees F.
- Scrub and dry the potatoes.
- Use a fork to poke each potato a half dozen places about 1/2" deep -- this will prevent them from blowing up in the oven which can happen sometimes!
- Rub each potato all over with olive oil and lay them out on a baking pan. Then sprinkle the kosher salt over them and rub it all over each potato. Not all of it will cling to the potato but that's okay.
- Bake the potatoes on the baking pan on the lower-middle oven rack for one hour and then check one for tenderness by inserting a sharp knife into the center. It should insert very easily and smooth. If you hit a solid center, give them 10 more minutes and check them again.
- After the potatoes come out of the oven, you can brush off as much of the salt as you wish (I leave it on and that way I don't have to salt my potato.).
- Top the potatoes with any or all of the following condiments unless you prefer it vegetarian-style: crisp and crumbled bacon, butter, sour cream and chives, sharp cheddar cheese. (Vegetarians may want to sprinkle on a little Mrs. Dash garlic blend seasoning.).

- Because of the various stages of this recipe (boiling, baking, baking), make sure you know what you're doing and where you're going next so read the recipe in full, before beginning!
- To a large stockpot, add the sweet potato chunks, cover with water, and bring to a boil. Boil over high heat until sweet potatoes are fork tender, about 20 minutes. Drain well and transfer to a large bowl.

- Preheat the oven to 425°F (220°C).
- Place the sweet potatoes on a baking sheet and poke each one a few times with a fork. Bake for 40-50 minutes, or until very soft. Remove from the oven and let cool until easy to handle. Reduce the oven temperature to 350°F (180°F).
- Meanwhile, cook the bacon in a medium skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.

- Cover the baking dish with foil and bake for 30 minutes, until heated through. If desired, remove the foil and broil on high until the topping is lightly browned, 1-2 minutes. Keep an eye on the casserole so it does not burn.
