All-purpose flour, for rolling
1 sheet frozen puff pastry, thawed
2 tablespoons melted unsalted butter
6 tablespoons grated Parmesan
Ground pepper

Steps:

  • Preheat oven to 375 degrees, with racks in upper and lower thirds. Lightly flour a work surface and rolling pin; roll out puff pastry to a 10-by-18-inch rectangle. Brush with 1 tablespoon butter, sprinkle with 3 tablespoons Parmesan, and season with pepper. Gently roll over dough to adhere. Flip dough and repeat with more butter, cheese, and pepper.
  • Cut dough in half lengthwise, then cut each piece into 1/2-inch-wide strips. Arrange in a single layer on two parchment-lined baking sheets and bake until pastry is golden and puffed, about 7 minutes, rotating sheets halfway through. Let cool completely.

These parmesan puff pastry breadsticks are a quick and easy which makes them the perfect appetizer or snack for any occasion.

1 Puff Pastry, thawed (1/2 pound/250 grams), see note 1
2 tablespoons Extra Virgin Olive Oil, see note 2
Salt, to taste
Black Pepper, to taste
1 tablespoon Parmesan Powder, see note 3
1 teaspoon Dried Rosemary, finely chopped

Steps:

  • Preheat oven to 400 Fahrenheit (200 Celsius).
  • Unfold the puff pastry and roll it out thin (if not using ready-rolled).
  • Brush it with olive oil and sprinkle with salt, pepper, Parmesan powder and rosemary. Press it down lightly with a rolling pin.
  • Cut it into thin slices (0.5-inch/1.5-centimetre). Mine were 8-inch/20-centimetre long, but you can cut them into any length you like. Transfer them onto a baking sheet lined with baking parchment, leaving small gaps between them.
  • Bake in a preheated oven at 400 Fahrenheit (200 Celsius) for 8 minutes or until puffed and golden brown (see note 5).

DEEP-FRIED SAFFRON-PARMESAN STICKS



Deep-Fried Saffron-Parmesan Sticks image

Number Of Ingredients 6

1/2 teaspoon tightly-packed saffron threads
1/2 pound good-quality young Parmesan cheese, such as Parmigiano-Reggiano or Grana Padana, less than 3 years old
4 cups sunflower oil, for deep-frying
1 egg yolk
1 1/2 cups ice water
1 1/2 cups sifted flour, plus extra for coating

Steps:

  • In a small saucepan, bring 1 cup water to a boil. Add saffron and boil 2 minutes. Let cool to room temperature. Use a sharp knife to cut Parmigiano-Reggiano into thin slices. Cheese will not cut evenly, but any shape 2 to 3 inches long and no more than 1/4 inch thick will work well. In a small bowl combine cheese with saffron liquid and marinate 6 hours.
  • In a deep-fryer heat oil to 365 degrees. In a bowl beat egg yolk; add water, stirring lightly to blend. Add 1 1/2 cups flour all at once and stir gently with a fork or chopstick until just blended. Do not overblend; batter will be lumpy. Piece by piece, coat cheese pieces with extra flour; dip pieces thoroughly in batter, then quickly toss in hot oil (don't wait for extra batter to drip off). Cook 2 to 3 minutes, turning occasionally, until golden and crisp. Using a slotted spoon, scoop up cheese and drain on paper towels. Keep warm while you fry remainder. Sprinkle with salt and serve immediately.

1 (17 ounce) package puff pastry sheets, frozen (thawed)
1 cup parmesan cheese, freshly grated
1 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 cup butter, melted

Steps:

  • Preheat oven to 400 degrees F.
  • Unfold pastry sheets on a lightly floured surface.
  • Cut each sheet into 13 strips, (about 3/4 of an inch by 10-inches each).
  • Combine cheese, basil, and garlic in a long shallow pan or dish.
  • Brush melted butter on pastry sticks.
  • Roll pastry in cheese mixture to coat each side evenly.
  • Gently twist the pastry sticks, and place on a lightly greased baking sheet.
  • Bake for 12 minutes.
  • Remove to wire racks to cool.
  • Serve with your favorite soups, salad, on the side of any meal or as an appetizer with dipping sauces.
