BAKED MOSTACCIOLI

A delicious one-dish meal with baked pasta, tomato sauce, cheese and sausage. Great for potlucks and as a freezer meal!

1/2 pound dry mostaccioli (, penne or ziti)
15 ounces whole milk ricotta cheese
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1/4 cup parmesan cheese (, shredded)
1 1/2 cups marinara sauce*
3 cloves garlic (, minced)
1 small white onion (, chopped)
3-4 cups cooked sausage** (, drained and cut into bite-size pieces)
2 cups mozzarella cheese (, grated and divided)
Cooking spray

Steps:

  • Preheat oven to 350°F and coat a large casserole dish with cooking spray.
  • Cook the pasta al dente according to package instructions, drain and set aside. If you are making the pasta ahead of time, toss with 2 teaspoons olive oil to prevent sticking and drying out.
  • In a large mixing bowl, stir together the ricotta cheese, egg, garlic powder, onion powder, salt, pepper and parmesan cheese.
  • To the ricotta mixture, add the cooked pasta, sausage and 1 cup of the mozzarella cheese. When combined, pour into prepared casserole dish.
  • Top with remaining 1 cup mozzarella cheese.
  • Bake, uncovered, for 25-30 minutes or until top cheese is melted and bubbly.
  • Remove and serve hot or wait until fully cooled before covering and refrigerating or freezing.

1 cup mostaccioli, uncooked
1/2 lb. lean ground beef
1 small green pepper, chopped
1 small onion, chopped
1 can (14.5 oz.) diced tomatoes, undrained
1/2 cup water
1 can (6 oz.) tomato paste
1/4 tsp. black pepper
1 lb. (16 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Heat oven to 350ºF.
  • Cook pasta as directed on package, omitting salt. Meanwhile, brown meat with green peppers and onions in large skillet. Add tomatoes, water, tomato paste and black pepper; mix well.
  • Layer half each of the pasta. meat sauce and VELVEETA in 13x9-inch baking dish; repeat layers.
  • Bake 30 min. or until heated through.

1 lb lean ground beef
5 potatoes, sliced in rounds
2 cups frozen corn
1 large onion, sliced
1 (8 ounce) can cream of mushroom soup
1 (8 ounce) can cream of chicken soup
1/2 cup milk
salt and pepper

Steps:

  • Brown beef in a frying pan and season with pepper and salt- drain all the fat.
  • Butter a casserole dish.
  • Layer the beef, potatoes and corn and onion, alternating the ingredients in each layer (beef, potatoes, corn,onion, beef, potatoes, corn, etc) until you reach the top of the casserole dish.
  • Mix the two soups together with the milk until creamy and pour over the casserole. MAKE SURE TO GET THE SOUPS TO SIFT THROUGHT THE CASSEROLE - MAKING LITTLE HOLES FOR IT TO GET TO THE BOTTOM.
  • COVER THE CASSEROLE WITH TIN-FOIL.
  • Bake at 350F for one hour or until the potatoes are done.

1 pound ground beef
1 package (8 ounces) wide egg noodles
1 tablespoon olive oil
2 cups shredded Colby cheese, divided
2 cans (15 ounces each) tomato sauce
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) Italian stewed tomatoes
1 can (10-3/4 ounces) condensed tomato soup, undiluted
2 teaspoons Italian seasoning
2 teaspoons dried parsley flakes
1/8 teaspoon each onion salt, garlic salt and pepper
2 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Meanwhile, cook noodles according to package directions; drain. In a large bowl, combine the beef, noodles, oil, 1-1/2 cups Colby cheese, tomato sauce, beans, tomatoes, soup and seasonings., Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 30 minutes. Sprinkle with Parmesan cheese and remaining Colby cheese. Bake, uncovered, for 5-10 minutes longer or until cheese is melted.

1 lb ground beef
8 ounces wide egg noodles
8 ounces shredded monterey jack cheese
2 (15 ounce) cans tomato sauce
2 (15 ounce) cans great northern beans, drained and rinsed
14 1/2 ounces diced tomatoes
1 (10 1/2 ounce) can tomato soup
2 teaspoons italian seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 tablespoons parmesan cheese

Steps:

  • Brown ground beef, drain and rinse under hot water to degrease.
  • Cook noodles as directed and drain.
  • Combine the beef with remaining ingredients 13 x 9 pan, leaving out 1/2 cup of the Jack cheese and the 2 tablespoons of Parmesan. Cover and cook at 350 degrees for 30 minutes. Uncover and sprinkle top of casserole with the Parmesan and remaining Jack cheese. Bake 5 to 10 minutes more, uncovered, to melt the cheese topping.

  • Make the creamy sauce: Cut 1 stick butter into a few big pieces and transfer to a small heatproof bowl. Microwave until butter is melted, about 1 minute. Let cool slightly. Whisk 8 large eggs and ½ cup sugar in a large bowl until sugar is dissolved and eggs are frothy, 1–2 minutes. Add 1 lb. full-fat cottage cheese, 1 lb. full-fat sour cream, 2 tsp. vanilla extract, 1 tsp. ground cinnamon, and remaining 2 tsp. salt to egg mixture. Whisk vigorously to combine.
