2/3 cup/140 g butter
1 teaspoon sugar
1/2 teaspoon salt
1 egg
2 cups/250 g flour
Crushed dill seed
Crushed fennel seed
Crushed coriander seed with 5 spice
Paprika and cayenne pepper
Poppy seeds
Sesame seeds
Mixed peppercorns
Crushed cumin seed and cayenne pepper
Parmesan and herbes de Provence
Fleur de sel, for sprinkling

Steps:

  • Heat the oven to 400 degrees F/200 degrees C.
  • Put the butter, sugar, salt, 2 to 3 tablespoons cold water and egg in a bowl and mix well. Add the flour and mix quickly only until it holds together. Do not overwork. Roll the dough out to 1/16 of an inch/2 mm thick. Cut into squares. Sprinkle over some fleur de sel and the topping(s) of your choice on each. Transfer to a baking sheet. Bake until puffed, crisp and golden, about 10 minutes.

1 pinch salt
1/2 cup butter
2/3 cup milk
1 egg, lightly beaten

Steps:

  • Topping sufficient for a 9 x 13 inch pan.
  • Bake cobbler at 350 degrees until hot and bubbly.
  • make topping just before you are ready to put it on: Mix together dry ingredients and cut in butter until resembles coarse meal (can be done in food processor).
  • Whisk egg into milk.
  • Stir in milk and egg until just blended.
  • Spoon topping on in dollops.
  • Return to oven until biscuits are done.

3/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 tablespoon lemon juice
1 teaspoon almond extract
1 1/2 tablespoons butter
1 cup biscuit mix (Bisquick or similar product)
1/2 cup mild cheddar cheese, grated
1/2 tablespoon butter, melted
1/3 cup milk

Steps:

  • Preheat the oven to 400 degree F.
  • Place the peaches in a greased baking pan.
  • Mix the sugar, cornstarch and salt, then sprinkle over the peaches.
  • Sprinkle the lemon juice, almond extract over the peach mixture.
  • Place the baking pan in the preheated oven and bake for 15 minutes.
  • Meanwhile, make the biscuits by combining all of the biscuit ingredients and stirring well.
  • Remove the baking pan and drop the dough onto the hot peach mixture and bake for an additional 20 minutes or until the biscuits are done.
  • Serve warm with whipped topping or ice cream.
