THE BEST SAVORY CHEESE SPREAD APPETIZER
This is the very best savory cheese spread appetizer you will ever eat! Creamy, delicious, and full of flavor, texture, and a hint of heat. You can serve this recipe as is or with a side of jam or jelly to make it sweet and savory. Seasoned with a tiny pinch of cayenne pepper to add a surprising note of heat. You can also omit this from the recipe entirely. This cheese spread will quickly become a go-to for any party or event you are hosting. Steps:
- Grate extra sharp white cheddar. You'll need 2 cups. You can use a food processor or a hand grater to accomplish this. I have done it with both. The food processor just makes the process faster.
- Wash and chop 1 full bunch of green onions.
- Measure and set aside 1 cup of mayonnaise.
- Chop the pecans (to desired piece size). You'll need 3/4 cup chopped pieces. Tip: you can find small bags of pieces already chopped in the baking aisle of most grocery stores if you don't want to buy a large bag. I prefer to buy bulk bags since I do a lot of baking.
- Measure out 1/2 teaspoon cayenne pepper and set aside.
- Add 2 cups grated extra sharp white cheddar to a large mixing bowl or stand mixer. I prefer to mix mine in my kitchen-aid stand mixer, but by hand works just as well.
- Combine 1 cup mayonnaise to shredded cheese and mix until mostly incorporated.
- Add chopped pecans and mix again.
- Incorporate cayenne pepper to taste. 1/2 teaspoon is recommended and doesn't offer extreme heat.
- Plate for immediate serving or cover and refrigerate for later.
- Enjoy!
CHEDDAR SPREAD
From Vegetarian Times, September 2002. This is great served on crackers, wheat or rye bread, pitas, and bagels. It is also good for making a veggie wrap by spreading it on a tortilla, topping with chopped tomatoes, shredded lettuce and sprouts, and rolling it all up. Prepare 24 hours in advance and refrigerate. Serves 6.

- All the ingredients should be at room temperature before starting this recipe.
- Whip slowly, in a medium mixing bowl, with the mixer until the mixture is fluffy. I also have mixed it well by hand, but room-temp ingredients are KEY to do that.
- Spread on bread slices. (Rye, Sourdough or regular French Bread are great.) Toast under the broiler until hot.

SAVORY COBBLER WITH CHEDDAR BISCUIT TOPPING
Why should summer fruits have all the fun? A bounty of seasonal vegetables are baked under a blanket of biscuits, making the perfect dish for meatless Monday or to accompany meat or fish off the grill.

- For the vegetables: Position an oven rack in the lower third of the oven and preheat to 350 degrees F. Grease a 9-by-13-inch baking dish with 2 tablespoons olive oil.
- Stir together the Parmesan, parsley, rosemary, thyme, 2 teaspoons salt and 1/2 teaspoon pepper in a medium bowl.
- Spread the eggplant in a single layer on the bottom of the prepared baking dish, cutting rounds in half or overlapping slightly if necessary. Scatter 1/4 cup of the Parmesan mixture over the top of the eggplant. Top with a single layer of tomato slices, then scatter the corn kernels in an even layer over the tomatoes and follow with another 1/4 cup of the Parmesan mixture. Add a single layer of the yellow squash slices, then break the onions into rings and scatter over the top. Layer over the bell pepper, then another 1/4 cup of the Parmesan mixture; top with a layer of zucchini slices and finish with an even sprinkling of the remaining Parmesan mixture. Drizzle the remaining 2 tablespoons olive oil over the top.
- For the biscuit topping: Whisk together the flour, baking powder, sugar, baking soda, 1 teaspoon salt and 1/4 teaspoon pepper in a large mixing bowl. Grate the cold butter on the large holes of a box grater and stir into the flour mixture so all the butter pieces are coated with flour. Stir the Cheddar and scallions into the flour mixture. Make a well in the center, then add the sour cream and milk to the well and stir with a wooden spoon just until the ingredients are moistened. Using a cookie scoop or large serving spoon, drop scant 1/2-cup mounds evenly spaced over the top of the vegetables.
- Bake until the biscuits are deep golden brown, the filling is bubbling along the edges and the vegetables give easily when pierced with a knife, about 1 hour. Brush the tops of the biscuits with the melted butter and let rest for 20 minutes before serving.
