My ex-wife Jamie's been making this savory Brie en croute since way back before we were married. I think she must have gotten the idea from a magazine, but I've never seen the recipe... I just wing it. It can be made with either puff pastry sheets (quick and easy) or phyllo sheets (more work, flakier shell). Serve with fancy table crackers or digestive biscuits.

1 shallot, minced
2 cloves garlic, minced
¼ teaspoon white pepper
1 tablespoon dry vermouth
1 (8 ounce) round Brie cheese
3 sheets phyllo dough
2 tablespoons melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Stir the shallot, garlic, white pepper, and vermouth together in a small bowl; set aside. Cut the rind off the top of the brie cheese, leaving a 1/4-inch lip around the edge. Place the brie cheese onto a baking sheet, and spoon the shallot mixture over top. Fold the phyllo sheets in half to make square pieces. Wrap the brie with the phyllo squares, tucking the edges underneath of the brie cheese. Trim the corners if needed to avoid tucking too much pastry underneath. You want complete enclosure, but without too much overlap. Brush the top with melted butter to make the pastry brown in the oven.
  • Bake in the preheated oven until the phyllo has turned golden brown and the brie cheese is very soft, about 20 minutes. Serve warm.

Savory BakedBrie in Puff Pastry is an easy Mediterranean cheese appetizer stuffed with olives, roasted red peppers and artichokes en croute and baked until golden.

8 ounces puff pastry dough (thawed approximately 12 in x 12 inch sheet)
4 tbsp olives (mixture of pitted kalamata and Spanish green sliced (drained well and patted dry))
2 tbsp roasted red peppers (chopped (drained well and patted dry))
2 tbsp artichokes hearts (chopped (drained well and patted dry))
1 tsp Olive oil
1 tsp Sicilian Spice Mix (or mixture of dried Italian spices (basil, oregano, thyme) mix and garlic powder)
8 oz brie cheese (wheel)
1 egg (beaten)

Steps:

  • Preheat oven to 400 F or 204 C.
  • Take the puff pastry out of the freezer and out of the external and internal packaging to thaw for about 10 to 30 minutes. Do not leave out longer than 40 minutes at room temperature or it becomes extremely difficult to work with. Alternatively, you can microwave your pre-made frozen puff pastry sheets. Wrap with a towel and microwave for 15 seconds each side to soften. Add an extra 5 seconds as needed to be able to open the puff pastry dough without it cracking.
  • Roughly chop your olives (we used kalamata and Spanish green olives), roasted red peppers and artichokes. Drain well and dab with toweling to remove extra moisture. Feel free to add fresh herbs, sun dried tomatoes in oil or anything you desire. (Alternatively, you can put them in the food processor and let them do a quick one second blend to roughly chop.) Add a dash of Sicilian Spice Mix or a mixture of dried Italian herbs (like basil, oregano, thyme and garlic powder) and olive oil and mix. Set aside
  • Cut your brie wheel in half horizontally so you have 2 disks.
  • Roll out your puff pastry slightly so it is about 1/8 inch (3 mm) thick. We used one entire sheet of a puff pastry and it was about 12 inches x 12 inches (30 cm x 30 cm) in size. You can trim if you wish. Your goal is to make your puff pastry just big enough to fit around the puff pastry and tie at the top. Set aside.
  • Add your Mediterranean salsa to one half of the brie wheel with cheese side up and rind side down. Place the other half of the brie cheese wheel on top of Mediterranean salsa with the cheese side down and the rind side up. (If you do not like rind, please shave off first BEFORE starting this procedure. Then, just add the toppings right on top of the brie wheel instead of cutting in half. )
  • Place your puff pasty dough on a lined or greased baking sheet. Lay the Mediterranean stuffed wheel of brie on top of the puff pastry in the middle.
  • Brush egg wash along the edges of the puff pastry dough to help seal.
  • Take two edges of the puff pastry and close and squeeze. Take the other 2 edges of the puff pasty together and squeeze. Twist the ends to seal well at the top. It does not need to be perfect. As a matter of fact, it is even more artistic if it's a little messy. (Watch the video for a great visual on how to do this)
  • Brush the with egg and bake in over for about 20 minutes until the crust in flaky and golden brown. Remove from oven and let rest for about 15 minutes before serving.
  • Serve Holiday Mediterranean En Croute with crackers and a glass of bubbly and enjoy.
  • If desired, use a fork and gently carve designs in the pastry dough, being careful to not fully penetrate the dough. However, this step is completely optional.
  • Brush egg wash all over the exterior of the Savory Baked Brie in Puff Pastry.
  • Bake at 400degrees F (204 degrees C) Bake 20-30 minutes or until golden brown. If the decorative top of the pastry dough starts to brown faster than the rest of the brie en croute, put a little aluminum foil over the little section while the rest of the pastry dough gets deliciously golden brown. Sometimes your brie can slightly leak out of the sides, if this happens do not worry. Ours did not but we made sure that our puff pastry was at least 1/8 thick all around.
  • Let rest for at least 15 minutes but best to wait 45 minutes if you can hold out.
  • Serve with crackers, toasted crostini, fresh seasonal fruits, cured meats, nuts or whatever you desire. Enjoy!

Toasted slices of French baguette and fruit chutney, for accompaniment

Steps:

  • Remove pie crust from refrigerator; let sit at room temperature for at least 20 minutes before removing from wrapper. In a small bowl, mix together walnuts, 1 1/2 tablespoon butter, rosemary and cayenne; set aside. Unfold pastry dough on a greased baking sheet; spoon walnut mixture in center of crust and spread into a 5-inch circle. Place Brie in center of pastry on top of walnut mixture. Fold dough over Brie, starting at two opposite sides, bring to center and pinch to seal. Then, fold in remaining pastry ends, crimping as necessary, to center and press to seal pastry ends. Invert Brie on baking sheet and brush top with remaining melted butter. Bake at 400°F for 20 to 25 minutes or until pastry is browned. Cool to room temperature before serving. When Sex & the City was on HBO, I hosted a girls' get-together every Sunday night, complete with cosmopolitans and champagne. This baked brie got the most compliments and there were never leftovers. Note that this can be made in advance and put in the oven when your guests arrive - the house will smell good! The recipe is originally from Gourmet magazine.

1 small onion, minced to 1/2 cup
2 tablespoons unsalted butter
1/2 lb mushroom, finely chopped
1 tablespoon dry sherry
1/2 teaspoon nutmeg
1 (17 1/4 ounce) package puff pastry sheets, thawed according to package directions (find this in the frozen dessert section)
14 ounces brie round, chilled (Note this is a larger size, up to 17 oz, which is not available in all grocery stores)
1 large egg

Steps:

  • In a 9- to 10-inch heavy skillet, cook onion in butter over moderate heat, stirring, until softened.
  • Add mushrooms, sherry, nutmeg, and salt and pepper, to taste, and saute over moderately high heat, stirring, until the liquid that the mushrooms give off is evaporated.
  • Cool mushroom mixture.
  • On a lightly floured surface roll out 1 sheet of pastry into a 13-inch square and, using Brie as a guide, cut out 1 round the size of the Brie.
  • Cut out a mushroom shape from scraps for decoration, or use any cookie cutter shape.
  • Horizontally halve Brie.
  • Roll out remaining sheet of pastry into a 13-inch square and transfer to a shallow baking pan.
  • Center the bottom half of Brie, cut side up, on pastry square and spread mushroom mixture on top.
  • Cover mushroom mixture with remaining half of Brie, cut side down.
  • Without stretching pastry, wrap it snugly up over Brie and trim excess to leave a 1-inch border of pastry on top of Brie.
  • In a small bowl, lightly beat egg and brush onto border.
  • Top Brie with pastry round, pressing edges of dough together gently but firmly to seal.
  • Brush the top of pastry with some egg and arrange pastry mushroom on it.
  • Lightly brush mushroom with some egg, being careful not to let egg drip over edge of mushroom (which would prevent it from rising).
  • With back of a sharp small knife, gently score side of pastry with vertical marks, being careful not to cut through dough.
  • Chill Brie, uncovered, 30 minutes.
  • Brie may be made up to this point 1 day ahead and chilled, loosely covered.
  • Preheat oven to 425 degrees F.
  • Bake Brie in middle of oven until pastry is puffed and golden, about 20 minutes.
  • Let Brie stand in pan on a rack 15 minutes and transfer with a spatula to a serving plate.
  • Serve Brie with French baguettes or crackers.

1/2 cup apricot preserves
seedless raspberry jam
1/3 cup dried cranberry
1/4 cup toasted sliced almond
1 (13- to 16-ounce) Brie cheese round
1 package (13 ounces) Pepperidge Farm® Entertaining Quartet Distinctive Crackers

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry to within 2 inches of the edge. Sprinkle with the cranberries and almonds. Place the cheese in the center of the pastry. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. My husband and I love to entertain. I love brie, he loves mushrooms so I was trying to create a new recipe including both to share with our friends. Everyone loves this recipe so I wanted to share it.

8 oz baby brie
1 puff pastry sheet, thawed
8 oz fresh sliced mushrooms
1/2 large yellow onion, diced fine
1 Tbsp minced garlic
2 Tbsp butter, unsalted
1 Tbsp olive oil, extra virgin
2 tsp thyme leaves, chopped fine
2 tsp rosemary sprigs, chopped fine
1/2 tsp garlic pepper
1/2 tsp lawry's seasoning salt
1/2 tsp mrs dash original seasoning
1 egg, beaten (use for egg wash)
1 sourdough baguette bread
swanson's chicken broth

Steps:

  • 1. Defrost puff pastry just until you are able unfold easily. Sprinkle just enough flour on work surface so pastry doesn't stick Preheat oven to 400 degrees Slice baguette of sourdough bread into thin slices.
  • 2. Heat skillet, add olive oil and butter. Add onion, and saute until transparent. Add garlic, mix well. Continue cooking couple minutes. Add the mushrooms making sure not to crowd pan while sauteing. Stir frequently so they cook evenly, add more butter if mixture is too dry. Add seasonings, more or less according to your taste, and continue till mixture is softened and mushrooms are browned. Add just enough of Swanson's chicken broth to cover mixture. Continue until liquid is reduced and mixture is thickened and done. Remove from heat and cool.
  • 3. Roll pastry out, just enough for brie to fit in center and pastry to wrap over it Slice brie in half horizontally. Lay half (cut side up) the brie on pastry, place cooled mushroom mixture on top. Place 2nd half(cut side down) brie on top. Cover with pastry, starting with opposite corners and wrap. Make like a bundle by twisting pieces of pastry; or turn over and decorate top with pieces of pastry. Brush top and sides with egg wash. Place on ungreased cookie sheet lined with parchment paper. Refrigerate 30 minutes before baking to prevent cheese melting too much; it will still be soft and spreadable. Bake @ 400 for 30 minutes, or until pastry is browned and cheese is soft.

  • Carefully slice the rind off the top of the brie round (it's OK if there is some left on). In a small bowl, make the egg wash by beating the egg with 1 tablespoon water with a fork or whisk until it's very smooth. Set aside.
  • Lay the puff pastry sheet out on a piece of parchment paper. Use a rolling pin to roll out the seams and make it as square as possible (but don't roll it out much bigger than it already is). Use a sharp knife or pizza cutter to cut the corners off so it's a circle (reserve the scraps). Place the cranberry sauce (1/3 cup) in the center of the circle and spread out so it's about 4.5-5 inches in diameter. Place the 8 oz. Brie round cut side down on top of the cranberry sauce. Fold the sides of the circle up to meet in the center, going around in one direction, until the brie is completely covered. Press the seam together as best you can (don't worry if it doesn't stick together perfectly and if it looks a little messy!) and flip over so the smooth side is up in the center of the parchment paper. Transfer the whole piece of parchment paper onto a rimmed baking sheet, lifting from each side so the brie is in the center of the baking sheet.
  • Use a pastry brush to brush the top and sides of the puff pastry wrapped brie with the egg wash. Optional: Use a sharp knife to cut leaves and roll berries out of the scraps of puff pastry. If you like, you can score lines for the veins of the leaves. Place them on top of the wrapped brie and press down gently to adhere them to the egg on top. Brush the tops of the leaves and berries with egg wash.

  • In a medium bowl, combine the flour and salt for the puff pastry. Drop in the cubes of butter and use a pastry blender (or two knives, or your hands, or a food processor), to cut the butter into the flour and create pea-size clumps of dough.
  • Stream in a tablespoon of water at a time and stir the dough with a wooden spoon. Once the dough is no longer shaggy, and instead forms a large mass, turn out the dough onto a floured counter/board.
  • Sprinkle a little flour on the dough before rolling the dough out into a rectangular strip. Fold the dough into thirds before turning the dough so that the open end faces you. Again, roll out into a strip and fold into thirds. Repeat this step two mores times so that you've rolled and folded your dough 4 times in total. Place the puff pastry dough on a plate and cover with a sheet of plastic wrap. Refrigerate for 30 minutes to chill.
  • Preheat the oven to 400°F. After 30 minutes, turn out the dough onto your floured surface and roll into a 1/8” to 1/4” thick square. Place your wheel of brie in the center of the dough. Gather the ends of the dough and bunch together over the top of the brie, so that the brie is enveloped inside the puff pastry. Pinch the seams together.
