2 tablespoons olive oil
2 medium onions, chopped
6 garlic cloves, sliced
1/2 cup white balsamic vinegar
2 bunches Swiss chard, coarsely chopped (about 16 cups)
1/2 cup walnut halves, toasted
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 6-qt. stockpot, heat oil over medium-high heat. Add onions; cook and stir until tender. Add garlic; cook 1 minute longer., Add vinegar, stirring to loosen any browned bits from pot. Add remaining ingredients; cook 4-6 minutes or until chard is tender, stirring occasionally.

3 pounds red Swiss chard
1 tablespoon olive oil
4 thinly sliced garlic cloves
2 teaspoons sugar
1 tablespoon red-wine vinegar
Coarse salt and ground pepper

Steps:

  • Rinse Swiss chard well. Trim tough ends; slice stalks about 3/4 inch thick. Slice leaves about 1 inch thick.
  • In a Dutch oven over medium heat, warm olive oil. Cook garlic until fragrant, 1 to 2 minutes.
  • Stir in stalks; cook, stirring, until slightly soft, 5 to 6 minutes. Add half the leaves; sprinkle with 1 teaspoon sugar. Cover; cook until wilted, about 4 minutes. Add remaining leaves; sprinkle with another teaspoon sugar. Cover; cook, tossing occasionally, until leaves are tender, 8 to 10 minutes.
  • Uncover; cook until liquid has evaporated, about 2 minutes. Stir in red-wine vinegar; season with coarse salt and ground pepper.

1 ounce pitted green olives (about 10 medium sized), roughly chopped or sliced
1/2 teaspoon fresh rosemary, minced
1 green onion or shallot, chopped
1/2 teaspoon capers
Extra virgin olive oil
1 large bunch Swiss chard, rinsed and patted dry
Freshly ground black pepper to taste

Steps:

  • Make olive, rosemary, green onion, caper mixture: Mix together the olives, rosemary, green onion, and capers with a tablespoon of olive oil and let sit while you prep the chard.
  • Prep chard leaves and stems: Use a knife to cut along the edges of the main stem of each leaf of chard, remove the stems. Cut the stems into 1/2-inch slices and set aside. Cut the leaves separately into 1-inch thick crosswise ribbons. Keep the leaves and the stems separate as you will be cooking them separately.
  • Sauté chard stems: Heat a large, stick-free sauté pan on medium high heat. Coat the bottom of the pan with about a tablespoon of olive oil, just enough to coat. When the oil is hot, add the chard stems. Cook for a couple of minutes, stirring often, until they begin to soften.
  • Add olive mixture, then chard leaves: Stir in the olive mixture. Cook for a minute more, then add the chopped chard leaves to the pan. Use tongs or two large spoons to toss the chard leaves in with the rest of the mixture, so that the chard gets coated with olive oil.

Olive oil
1 clove garlic, smashed
Pinch crushed red pepper
1 slice bacon, cut into 1/2-inch lengths (lardons)
4 large Swiss chard leaves, stems removed and cut into 1/2-inch lengths, leaves cut into 1-inch lengths
1/4 cup chicken stock, divided
Salt
1 (6-ounce) halibut filet
1/2 cup Salsa Cruda, recipe follows
1/2 pound heirloom tomatoes (assorted colors preferred), stemmed, seeded and cut into 1/4-inch dice
1/4 small red onion, cut into 1/4-inch dice
1/2 small zucchini, green part only, cut into 1/4-inch dice
5 pitted Gaeta or kalamata olives, slivered
1 clove garlic, smashed and finely chopped
1 sprig fresh oregano, picked and leaves chopped
3 basil leaves, chiffonade
1 1/2 tablespoons red wine vinegar
Pinch crushed red pepper
1 1/2 tablespoons extra-virgin olive oil
Kosher salt

Steps:

  • Coat a saute pan with olive oil. Toss in the garlic clove, crushed red pepper, bacon, and a couple drops of olive oil. Bring the pan to a medium heat. When the garlic is golden and very aromatic, remove it and discard. When the bacon has become crispy, toss in the Swiss chard stems, half of the chicken stock, and season with salt. When the chicken stock has reduced, toss in the Swiss chard leaves and season with salt. Cook the leaves until they are just wilted, about 3 to 4 minutes.
  • Coat another saute pan with olive oil and bring to a high heat. Pat the halibut fillet dry with a paper towel and season with salt.
  • When the oil in the pan is very hot but not yet smoking, place the fish flesh side down and cook for 3 to 4 minutes. As the fish cooks it will turn from translucent to opaque. Turn the fish over and cook for another 3 to 4 minutes. When the fish is done it should be golden and firm but still moist.
  • Place the Swiss chard in the center of the serving plate. Lay the fish directly on top. Top the fish with the Salsa Cruda.
  • Combine all the ingredients in a large bowl. Season generously with salt. Taste to make sure it is delicious. Adjust seasonings if needed.

3/4 teaspoon salt
3 tablespoons fresh lemon juice
4 tablespoons extra-virgin olive oil
2 1/2 to 3 pounds Swiss chard
1/2 cup chopped pitted mixed olives (Minot also added shiitake and bella mushrooms)

Steps:

  • Mash the garlic with salt to a paste using the side of knife or a mortar and pestle. Place in a bowl and whisk in lemon juice. Drizzle in oil while whisking until dressing is thickened. Set aside.
  • Cut off the leaves from stems of Swiss chard. Tear the leaves into large pieces. Wash well and drain. Place in a 3-quart saucepan, cover and steam over medium heat until wilted, about 3 minutes, stirring once while steaming. Drain and add to dressing. Toss to coat. Sprinkle with olives and serve.

500 g swiss chard
3 tablespoons extra virgin olive oil
1 fresh chili, roughly chopped
2 garlic cloves, roughly broken
1/2 lemon, juice only

Steps:

  • 1. Take the Swiss chard and separate the white stalks from the green leaves using a sharp knife. Chop both parts roughly into bite-size pieces, keeping the leaves separate from the stalks. Cook the stalks in plenty of boiling salted water for 5 minutes or until cooked through. Drain.
  • 2. In a large frying pan, heat the olive oil over a moderate heat. Add the chilli and garlic, and season with black pepper.
  • 3. Stir in the leaves, cover the pan and let them wilt for 5 minutes. Stir and cook uncovered for a further 5 minutes to reduce the juices in the pan.
  • 4. Add the stalks and a little more olive oil if necessary. Taste and adjust seasoning and squeeze over a little lemon juice.

Chard is one of the super leafy greens packed with minerals and vitamins as well as a healthy dose of fiber. It tastes a lot like spinach with a slightly stronger taste, depending on the cooking method. Use regular olive oil, not virgin, for best flavor. Reduce the amount of bacon if desired.

1 cup bacon, diced

1 large bunch swiss chard or rainbow chard
1 Tablespoon extra-virgin olive oil (divided)
1 Tablespoon salted butter
1 medium onion (chopped)
2 cloves garlic (finely chopped)

1/4 teaspoon freshly ground black pepper (or more to taste)
2 Tablespoons water
1 Tablespoon balsamic vinegar (optional)

Steps:

  • Clean the swiss chard thoroughly by rinsing well with cold water to remove any dirt or grit. Separating the leaves from the stems and chop the stems into small pieces, while cutting the leaves into roughly 1- to 2-inch pieces.
  • Heat the oil and butter in a large pan over medium-high heat. Add the swiss chard stems, chopped onion, garlic, salt, and pepper. Cook, stirring frequently, until the onions and swiss chard stems have softened and the onions start to slightly brown, about 6-7 minutes.
  • Add the swiss chard leaves and the water, then cover and continue to cook for 2-3 minutes until the leaves have wilted. Remove the lid and continue to cook for another 2-3 minutes, stirring occasionally, until everything is tender. Stir in the balsamic vinegar.

Then move everything out of the sauté pan and onto the cutting board for another quick chop. Run the knife through at 1/2-inch intervals first in one direction and then the other. Finally, add the chard mixture into the mashed potatoes, stir it in well and give it a final quick mash.
