1/4 cup extra-virgin olive oil
1 garlic clove, thinly sliced
3 shallots, sliced
2 lb shrimp (21/25 count), shelled and deveined
Kosher salt and freshly ground pepper
2 tbsp fresh lemon juice
2 tbsp butter
4 tbsp minced fresh dill, or 2 tsp dried dill weed, plus extra for garnish
2 to 4 cups steamed white or brown rice, kept warm

Steps:

  • In a very large skillet, heat the olive oil. Add the garlic and shallots and cook over medium-high heat until softened, about 1 minute. Add the shrimp and cook, stirring occasionally, until pink and opaque throughout, about 3 to 4 minutes. Season with salt and pepper. Using a slotted spoon, transfer shrimp to a bowl; set aside. Add lemon juice and butter and cook over low heat until the butter is melted and a sauce is developed. Sprinkle with 2 tbsp fresh dill and toss to distribute. Remove from the heat. Return shrimp to pan and toss to coat with the sauce. Cover and set aside while you get the serving dishes ready. Shrimp will be warmed through when you serve. Place a portion of rice into 4 warmed serving bowls. Spoon the shrimp and sauce over rice, sprinkle with additional fresh dill. Serve this dish with a side of steamed vegetables such as asparagus, carrots, or broccoli.

1 1/2 pounds medium-large shrimp, shelled, deveined and patted dry with a towel
Kosher salt and freshly ground pepper
4 teaspoons unsalted butter
1 teaspoon finely grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon minced fresh dill

Steps:

  • Divide the shrimp between two 8- or 9-inch pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
  • Heat 2 large skillets over medium heat. Season the shrimp with salt and pepper; add a teaspoon of butter to one of the pans and turn the heat to high. When the foam subsides, invert a pan of shrimp over the skillet so they fall into the pan all at once. Repeat with the other shrimp. Cook the shrimp, without moving them, until they turn golden brown on the bottom, about 2 minutes. Add a remaining teaspoon of butter to each pan and turn off the heat. Turn the shrimp over with tongs and cook for 1 minute in the residual heat of the pans. Add half the zest, juice, and dill to each pan, and shake the pan to combine.
  • Divide the shrimp among 4 plates or arrange on a platter. Serve hot or at room temperature.

5 medium leeks, white and light green parts only
1/4 cup butter
1 tablespoon lemon juice
1/4-1/2 teaspoon sugar
1 tablespoon chopped fresh dill, can use half the amount of dried dill
1/8 teaspoon white pepper
salt, to taste

Steps:

  • Slice leeks in half lengthwise and soak/rinse well to remove dirt and grit.
  • Cut the leeks into 2-inch pieces.
  • In a large skillet, melt butter over medium heat. Add the leeks and saute until fork-tender.
  • Reduce heat to low and stir in lemon juice, sugar, dill, white pepper and salt. Stir to combine well.
  • Serve.

2 lbs large shrimp, unpeeled
2 quarts ice water, with
2 tablespoons kosher salt, dissolved in it
1 1/2 cups mayonnaise
1/2 cup low-fat sour cream or 1/2 cup drained nonfat yogurt (I use my Yogurt Cheese, Yogurt Cheese - 'Labanee', in Arabic for a thicker consistency)
1/3 cup fresh lemon juice
1/4 cup sugar, less to taste (start with 1-2 Tbsp, and adjust to taste)
1/2 teaspoon salt, to taste
1/2 teaspoon fresh ground black pepper, plus additional to taste
1 large red onions or 1 large other sweet onion, thinly sliced
1/3 cup chopped fresh dill, more to taste (0.1 oz)

Steps:

  • Rinse shrimp well, soak in cold salted water for 30 minutes.
  • Transfer salted water to a large saucepan, and bring to a full rolling boil over high heat.
  • Add shrimp, and cook for only 4-5 minutes, just until pink and firm.
  • Drain immediately, and cool under cold running water.
  • Peel and devein when cool enough to handle, and refrigerate until needed.
  • In a medium bowl, whisk together all remaining ingredients until well combined.
  • Taste, and adjust seasonings.
  • Stir in shrimp until well coated, and season to taste with salt and pepper.
  • Refrigerate overnight, stirring several times, and serve chilled with toothpicks.

My favorite way to saute fresh shrimp. This is so quick and simple. Serve over rice or angel hair pasta (I usually saute a little more garlic in olive oil and toss it with the pasta before topping with the shrimp). Yum!

2 lemons
2 lbs large shrimp, peeled and deveined
2 cloves garlic, minced
1/4 cup olive oil, divided
1 teaspoon kosher salt
1/4 teaspoon pepper

Steps:

  • Peel, devein and rinse shrimp.
  • Set aside.
  • Grate the zest of both lemons, then juice both lemons.
  • Keep zest and juice separate.
  • In a large bowl, place shrimp then add lemon zest, garlic and half of the olive oil.
  • Toss well to coat evenly and season with the salt and pepper.
  • Heat remaining oil in a large saute pan over medium heat.
  • Saute shrimp in single layer for about 1 minute on each side until cooked through.
  • (You may have to work in batches).
  • After all shrimp is cooked and removed from pan, deglaze pan with 3 T of lemon juice, stirring up any browned bits.
  • Pour sauce over shrimp and serve.

  • Shrimp: Preheat cast iron or ceramic non-stick skillet on medium heat and swirl 1 tbsp of butter to coat. Add shrimp in a single layer, sprinkle with 1/4 tsp salt, ground black pepper and cook for 3 minutes. Turn, add remaining 1 tbsp of butter, sprinkle with 1/4 tsp salt, pepper and cook for another 3 minutes, not touching. Transfer to a bowl and set aside.
  • Zucchini and Peas: Return skillet to medium heat and swirl avocado oil to coat. Add garlic and cook for 10 seconds. Add zucchini and cook for 4-5 minutes or until cooked but firm, stirring occasionally. Turn off heat and add peas, lemon juice, salt and zest; stir gently. Sprinkle with dill and serve warm on its own or on top of a bed of quinoa, brown rice, farro, whole wheat pasta etc.
