SAUTéED FILLET OF SKATE WITH CARAMELIZED APPLES AND CHICKEN LIVER

- Make the sauce:
- Heat a saucepan over high heat. Add 3 tablespoons of the butter and swirl. Add the onion and lower the heat to medium. Cook, stirring occasionally, until golden brown. Add the brandy, then the stock, and bring to a boil. Cook until reduced by one third, then swirl in the remaining 1 1/2 tablespoons butter. Season with the salt and pepper and keep warm.
- Make the apples:
- Heat a sauté pan over high heat and add the oil. When just smoking, add the butter and apples and sauté for about a minute. Add the sugar and salt and cook until caramelized. Remove to a warm plate.
- Make the chicken livers and skate:
- Heat two large sauté pans over high heat. Add 1 tablespoon oil and the butter to one pan and 3 tablespoons oil to the other. On a plate, season the livers and skate with salt and pepper and dust lightly with Wondra. When the oil in the pans is smoking, add the livers to the pan with the butter and the skate, whitest side down, to the other pan. Lower the heat to medium-high and cook until golden brown. Turn the skate and finish cooking on the other side. Squeeze lemon juice over the fish.
- To serve:
- Pour some sauce in the center of a serving plate, followed by the skate. Top with the chicken livers, apples, and chives.
SAUTEED GALA APPLES

- Set a large saute pan over medium-high heat. Add the olive oil and half of the peeled and sliced apples. Cook, stirring constantly, until the apples are wilted and slightly caramelized, 5 to 6 minutes. Add the maple syrup, apple cider, and salt. Bring to a simmer, and then reduce the heat and cook until the apples start to fall apart and the texture becomes like applesauce, 6 to 8 minutes.
- Fold in the remaining raw apple slices so you have the crisp texture combined with the cooked apples. Fold together and set aside to cool before serving. Serve with fresh ricotta and popovers.
SAUTE OF CHICKEN LIVERS, BACON AND APPLES
My favorite chicken liver recipe. I serve with thin egg noodles. The recipe notes: do not stir the chicken livers around as you saute them; that prevents the development of the crisp, firm outside crust which is an agreeable characteristic of this dish. Recommended side dish: some kind of spinach or other preferred greens.

Steps:
- Pat livers dry.
- Saute the bacon with 1 T butter in a 10-inch skillet, until the bacon fat has rendered out.
- With a slotted spoon, remove the bacon bits and reserve until later. In the remaining bacon fat, saute the chicken livers over medium-high heat (in a couple of batches, if necessary). Remove livers and reserve.
- Remove all but 1 T of the fat in the skillet; in the remaining fat, saute the shallots until soft. Then add the apples, Calvados and heavy cream. With a wooden spoon, scrape up the browned particles in the bottom of the pan and incorporate.
- Return the chicken livers and bacon to the simmering cream and cook them about 3 minutes more, keeping the heat low so they do not toughen.
- Taste and adjust seasonings. Whisk in the last tablespoon of btuter. Dust with parsley. Serve.

CARAMELIZED APPLE AND CHICKEN SAUTE
Apples, chicken, onions.....WOW, this is a great combo, served with mashed potatoes and green beans.

Steps:
- In a shallow dish, combine flour, cinnamon, thyme and pepper.
- Coat both sides of chicken with flour mixture; shake off excess flour.
- Spray a non-stick skillet with no-stick cooking spray.
- Melt 1-1/2 teaspoons of butter in skillet over medium heat.
- Add chicken; brown 5 to 6 minutes on each side or until chicken is tender.
- Remove from skillet and keep warm.
- Melt remaining 1-1/2 teaspoons butter in skillet.
- Add onions; saute 3 to 4 minutes or until golden brown.
- Stir in apples and juice; bring to a boil. Reduce heat and simmer 4 to 5 minutes or until apples are tender.
- Add apple jelly; stir until melted.
- Add chicken back to skillet and heat through.

SAUTéED LIVER WITH APPLES AND ONIONS

- Rinse liver place in a shallow pan. Add milk and turn slices to coat well. Refrigerate for 1/2 hour.In a large skillet melt butter or margarine. Add onions and sprinkle with salt. Cook over low heat, turning as needed, for 15 minutes or until onions begin to brown. Transfer onions to a small pan cover and keep warm. Set skillet aside.Trim ends of apples and cut each crosswise into three slices. In a medium skillet over medium heat cook apples in butter or margarine for 5 minutes. Sprinkle with brown sugar and cook 5 minutes longer, turning apples to coat with melted sugar. Cover and keep warm.Drain liver and pat dry. In a plastic bag combine flour, salt and pepper add liver and shake until well coated.In the skillet used for onions sauté liver over medium heat for 3 to 4 minutes on each side, adding butter or margarine as needed. Cooking time will depend on thickness of liver and desired doneness.Serve liver on a heated platter topped with onions and apples. Garnish with parsley.

SAUTEED CALF'S LIVER WITH ONIONS AND APPLES

Steps:
- Heat two tablespoons of olive oil in a large frying pan. Add onion and cook it slowly over low heat, uncovered, with garlic, thyme, rosemary, salt and pepper. The onion should take about 45 minutes to become tender and almost caramelized. Do not let it burn.
- Meanwhile, saute apples in butter until lightly brown. Set aside and keep warm.
- Remove the onion from frying pan and keep warm. Add remaining olive oil (a little more if necessary) and saute liver quickly on both sides (about three minutes altogether) in order for it to be pink. Add the wine and over high heat scrape up the cooking juices. Put liver onto a serving dish with onions and top with apple. Serve immediately.
