Here's a sweet side dish my family loves. It's wonderful on its own, but you can use it to top pancakes or french toast for breakfast, too. -Shirley Heston, Pickerington, Ohio

1/4 cup butter, cubed
5 medium Golden Delicious apples, peeled and thinly sliced
1/4 cup water
1/2 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute apples 1 minute. Add water; bring to a boil. Stir in sugar and cinnamon. Reduce heat; simmer, covered, until apples are tender, 10-12 minutes, stirring occasionally.

This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

¼ cup butter
4 large tart apples - peeled, cored and sliced 1/4 inch thick
2 teaspoons cornstarch
½ cup cold water
½ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
  • Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

4 granny smith apples, sliced
1 cup brown sugar, packed
1 teaspoon cinnamon
4 tablespoons butter

Steps:

  • In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
  • Add sliced, unpeeled apples, cover, and saute, stirring frequently.
  • In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
  • When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
  • Continue cooking until sugar has dissolved into syrup.
  • Serve with hot buttered biscuits and sausage on the side; or alongside ham or pork.

2 cups chopped dates
2/3 cup packed brown sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/3 cup cold butter, cubed
1 cup chopped nuts
Additional apple slices, optional

Steps:

  • In an ungreased 13-in. x 9-in. baking dish, combine apples and dates. In a small bowl, combine the sugar, flour and cinnamon; cut in butter until crumbly. Add nuts; sprinkle over apples. , Bake at 375° for 35-40 minutes or until the apples are tender. Serve warm. Garnish with apple slices if desired.

You'll want to have something to go with this that has some protein, like a garden burger or a brown rice packet, both of which you can microwave. Apples and onions only takes about 10 minutes, a few dollars and it's delicious as a topping for rice or even by itself for a light snack.

1 large sweet onion, cubed
⅛ teaspoon salt
⅛ teaspoon ground cumin
⅛ teaspoon balsamic vinegar
1 tablespoon butter

  • Melt butter in a saute pan over medium heat. Add apples and onions; saute in the hot pan, adding salt, cumin, and balsamic vinegar, until onions are translucent, 5 to 7 minutes.

1 refrigerated pie crust
2 tablespoons Smart Balance butter spread
1/4 cup sugar, divided
4 apples, peeled cored and sliced
3/4 teaspoon cinnamon
8 scoops low-fat vanilla frozen yogurt (optional)

Steps:

  • Preheat oven to 375.
  • Brush crust with one tablespoon melted smart balance; sprinkle lightly with 2 t sugar. Cut into 8 wedges.
  • Place pieces on baking sheet and bake until puffed and golden, about 7 minutes. Set aside.
  • Heat remaining smart balance over high heat; add apples and saute 4 minutes.
  • Reduce heat to medium high. Sprinkle apples with remaining sugar and cinnamon.
  • Cook 3 more minutes or until sugar dissolves and mixture thickens, stirring occasionally.
  • Place apple mixture into 8 serving dishes. Top each with one wedge of crust.
  • Serve topped with frozen yogurt.

3/4 cup granola cereal
1/4 cup dried cranberries

Steps:

  • Heat the oil in a medium skillet over medium heat.
  • Add the apples and cook, stirring often, until golden brown and beginning to soften, 3 to 5 minutes.
  • Add the maple or agave syrup and continue cooking until the apples are tender when pierced with a sharp knife, 3 to 5 minutes more.
  • Divide the hot apples among eight bowls. Sprinkle the granola and a few dried cranberries over the top of each serving.
