My favorite way to saute fresh shrimp. This is so quick and simple. Serve over rice or angel hair pasta (I usually saute a little more garlic in olive oil and toss it with the pasta before topping with the shrimp). Yum!

2 lemons
2 lbs large shrimp, peeled and deveined
2 cloves garlic, minced
1/4 cup olive oil, divided
1 teaspoon kosher salt
1/4 teaspoon pepper

Steps:

  • Peel, devein and rinse shrimp.
  • Set aside.
  • Grate the zest of both lemons, then juice both lemons.
  • Keep zest and juice separate.
  • In a large bowl, place shrimp then add lemon zest, garlic and half of the olive oil.
  • Toss well to coat evenly and season with the salt and pepper.
  • Heat remaining oil in a large saute pan over medium heat.
  • Saute shrimp in single layer for about 1 minute on each side until cooked through.
  • (You may have to work in batches).
  • After all shrimp is cooked and removed from pan, deglaze pan with 3 T of lemon juice, stirring up any browned bits.
  • Pour sauce over shrimp and serve.

Steps:

  • Stir together garlic, pepper, salt and lemon zest.
  • Blend in lemon juice and olive oil.
  • Set aside.
  • Heat 1 tablespoon olive oil in skillet over medium-high heat.
  • Add the shrimp, and cook for 2 minutes.
  • Stir in the spinach and cook just until the greens are wilted and shrimp turn pink (about 2-3 minutes).
  • Stir in the lemon-olive oil mixture.
  • Toss well.
  • Serve immediately.

1 1/2 pounds shrimp, peeled and deveined (16 to 20 shrimp)
1 teaspoon ground cumin
Kosher salt

Steps:

  • In a large bowl, toss together the shrimp and the cumin until well coated. Season with kosher salt and toss again.
  • Heat the olive oil in a 12-inch skillet over medium heat. Add half the shrimp to the pan in one layer and cook undisturbed until they just start turning pink, about 1 minute. Steps:

  • make the masala: Heat the oil over a large sauté over medium-high heat. Carefully add the tomatoes, so the oil doesn't splatter. Stir the tomatoes around and allow them to cook for several minutes until they cook down into a thick paste, about 8-10 minutes. Add the garlic paste, ginger paste, and jalapenos and let cook for 1 minute or until nice and fragrant. Add the seasonings: coriander, turmeric, red pepper flakes, and cumin. Stir the masala and add the water so it doesn't burn.
  • cook the shrimp: Allow the water to dry up, about 5 minutes and add the shrimp. Let cook for 2-3 minutes stirring so the shrimp are coated with the tomato masala. Season with 1/2 teaspoon salt, fenugreek leaves, garam masala, chaat masala, turn the stove off and add the lemon juice. Stir the shrimp masala and decorate with chopped cilantro. Steps:

  • In a small bowl, combine oyster sauce, soy sauce and cilantro and set aside.
  • Pat the shrimp very dry with paper towels. In a medium bowl, add shrimp and cornstarch and toss to coat.

Steps:

  • Gather the ingredients.
  • In a bowl, combine oyster sauce, soy sauce, fish sauce, brown sugar, garlic, lime juice, and chili pepper. Stir until the sugar has dissolved.
  • Place shrimp in the marinade and stir well to coat.
  • In a wok or frying pan, heat the oil over medium-high heat. Once hot, add the shrimp along with the marinade.

  • Place the shrimp shells in a saucepan, along with the thyme, bay leaves and peppercorns. Add 3 cups of water, bring to a boil, reduce the heat and simmer until reduced by a third, about 30 minutes. Strain the liquid (you should have about 1 cup) and discard the shells.
  • Heat the oil in a large skillet over moderate heat. Add the onion, scallions, salt and pepper and saute until soft, about 3 to 5 minutes. Add the garlic, tomatoes, aji and reserved shrimp stock and simmer until thickened, about 5 minutes. Stir in the coconut milk, shrimp, lime juice and peas, and cook until the shrimp are pink and just cooked, turning the shrimp once as they cook, about 3 minutes. Serve over white rice.
