- In a large frying pan or sauté pan set over medium-high heat, melt the coconut oil. Add the onions, garlic, and jalapeño, if using, and sauté for 5 minutes, or until golden.
- Add the chard stems and cook for another 3 to 4 minutes. Add the rest of the chard and the kale. Cover the pan with a lid to help the greens wilt, about 5 minutes. Once they have wilted a bit, add the hot and dark toasted sesame oils, stirring to coat.
- Add the sunflower, pumpkin, and sesame seeds and continue to sauté, uncovered, for 10 minutes, or until cooked through.

- Coat a large saute pan lightly with olive oil and add the diced bacon, garlic, and crushed red pepper. Bring the pan to medium-high heat. When the garlic has turned a lovely golden brown, remove from the pan and discard. At this point the bacon should start to become brown and crispy. Add the Swiss chard stems and the stock and cook until the stock has mostly evaporated. Add the Swiss chard leaves and saute until they are wilted. Season with salt.

- Cut out the tough, triangular inner core of each leaf of swiss chard and cut into 1/4- to 1/2-inch slices.
- Rinse the leaves and stems separately and reserve.
- In a large nonstick skillet, heat 1 tablespoon olive oil over medium heat.
- Add the garlic and cook until it turns golden brown; don't let the garlic get too brown or it will be bitter.
- Remove the garlic and set aside.
- Reserve the oil in the skillet.
- Add the remaining 1 tablespoon olive oil to the skillet and the onions.
- Saute over medium heat until tender, about 5 minutes.
- Add the chopped stems from the swiss chard and continue to cook over medium heat, stirring frequently, until the stems are very tender, 15 to 20 minutes.
- Add the swiss chard leaves, season with salt and pepper and cover.
- Cook 10 minutes, stirring often; you may need to add 1/2 cup chicken stock or water to keep the leaves moist.

I found this recipe in the Nov/2007 Gourmet magazine. Posted for my Thanksgiving meal this year. Chard can be washed, dried and cut 2 days ahead and chilled in sealed bags lined with paper towels. Chard can be cooked 4 hours ahead and reheated over low heat on stove or in a microwave oven.

- Preheat your skillet on low and add your cooking fat.
- Meanwhile, cut your onions in half and thinly slice all halves. When all the onions are sliced, add to the pan.
- Stir every few minutes, for the first 5-7 minutes or so, to ensure the onions are thoroughly coated with fat, are not sticking to the pan and are cooking. Adjust the heat if necessary, but keep it on low.
- Meanwhile, thoroughly wash the chard and dry completely. Then thinly slice the chard.
- When the onions begin to brown slightly and turn translucent, add the chard. Cook, stirring every few minutes, until the chard wilts and the onions turn brown and caramelize.
- Season to taste with granulated garlic, salt and pepper. Serve warm

- Wash chard and tear away leaves from centre vein and stems. Roughly chop leaves, and slice stems into 1/4-inch thick pieces.
- In a very large skillet or deep cast iron pot, heat olive oil over medium-low heat. Once oil is hot, add sliced onions and sauté 5-7 minutes, stirring frequently to ensure the onions are coated with oil. Ensure onions are evenly spread out in the pan and leave them to cook for another 5-7 minutes stirring only as needed. (You want to leave them alone enough to brown, but not burn).
- Once the onions have begun to caramelize, add crushed garlic and sauté an additional 1-2 minutes.
- Next, add in chard stems and chopped apple, and sauté 3-5 minutes.
- Add chard leaves in batches, stirring to coat with oil and allow to wilt slightly before adding more. Once all the chard is incorporated, add coconut aminos and balsamic vinegar and sauté another 2-3 minutes.
- Remove from heat, add fresh herbs and salt to taste.
- Enjoy warm.

- Tear Swiss chard leaves from thick white stalks; discard the stalks and coarsely chop leaves.
- Heat a large skillet over medium-high heat. Add the bacon and cook until golden brown and fat has rendered. Remove bacon to a plate with a slotted spoon. Add the onions and cook in the rendered fat until soft. Add the garlic and cook for an additional minute. Add the Swiss chard leaves, season with salt and pepper and stir to coat the leaves.
