My sauteed shrimp with spinach, tomatoes, and spaghetti squash is a great meal to prepare together with your kids, friends, or spouse. The beautiful colors and flavors make this a perfect lunch or dinner!

2 tablespoons olive oil, or to taste, divided
1 large spaghetti squash, halved and seeded, or to taste
3 cups fresh spinach
1 clove garlic, minced
1 pound large shrimp, peeled and deveined
1 cup cherry tomatoes
1 teaspoon sea salt
½ teaspoon ground black pepper
1 tablespoon chopped fresh parsley
¾ cup chicken broth
1 tablespoon fresh lemon juice
1 teaspoon lemon zest

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Brush 1 tablespoon olive oil over spaghetti squash halves. Place on a baking sheet.
  • Bake squash in the preheated oven until easily pierced with a knife, about 30 minutes. Remove from oven and cool until easily handled. Scrape insides of squash into spaghetti strands with a fork.
  • Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Cook spinach until mostly wilted, about 2 minutes. Add garlic; cook for 30 seconds. Add shrimp and tomatoes; cook and stir until shrimp is almost opaque throughout, about 4 minutes. Season with salt and pepper. Add parsley; toss to combine. Pour in chicken broth; cook until heated through, 4 to 5 minutes. Add the spaghetti squash strands; mix in lemon juice and zest.

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

Steps:

  • Stir together garlic, pepper, salt and lemon zest.

  • Add the shrimp, and cook for 2 minutes.
  • Stir in the spinach and cook just until the greens are wilted and shrimp turn pink (about 2-3 minutes).

  • Toss well.

  • In a medium skillet, add 1 tablespoon of olive oil and heat until a slight shimmer occurs on the surface. In a separate bowl combine the shrimp, 1 tablespoon of olive oil and the sweet ginger garlic seasoning, tossing lightly until shrimp are thoroughly coated. Add the shrimp to the hot skillet, quickly sautééing until they are cooked and turn opaque. 1 tsp dried basil
Salt and freshly ground black pepper
2 Tbsp butter, (divided)
1 Tbsp minced garlic ((3 cloves))
3/4 cup low-sodium chicken broth
1/2 cup heavy cream
2 tsp cornstarch mixed with 1 Tbsp chicken broth
3 oz baby spinach, (chopped (2 packed cups))
1/2 cup (1.5 oz) shredded parmesan cheese

Steps:

  • Sprinkle shrimp with basil, season lightly with salt and pepper and toss.
  • Melt 1 Tbsp butter in a 12-inch non-stick skillet over medium-high heat.
  • Add shrimp in a single layer and cook until bottom is pink, then flip and cook opposite side of shrimp until cooked through and pink, about 3 minutes total.
  • Transfer shrimp to a plate then melt remaining 1 Tbsp butter in same skillet over medium heat.
  • Add garlic and saute until just lightly golden brown, about 30 seconds then pour in chicken broth.
  • Add spinach and stir and cook until it starts to wilt, about 1 minute.
  • Stir in cream and cornstarch mixture and cook, stirring constantly, until mixture starts to simmer and thicken slightly, about 2 minutes.
  • Stir in parmesan cheese and cook until cheese has melted, season lightly with salt if needed.

Steps:

  • Heat one tablespoon of olive oil in a large non-stick saut pan. Add half of the garlic along with a pinch of salt. One the garlic is fragrant, add the spinach and toss until all of the spinach is shiny and beginning to wilt down. Shut off the heat and place pan on the back burner (the residual heat in the pan will finish cooking the spinach while you make the shrimp).
  • Heat the rest of the olive oil in a medium non-stick skillet and add in the rest of the garlic along with a pinch of salt and the red pepper flakes. Once the garlic is fragrant toss in the shrimp.
  • Stir periodically as the shrimp begins to turn opaque. They cook quickly and will be done in about three minutes once they all turn opaque, turn off the heat and finish them with lemon zest, lemon juice, and parsley.
