BLACK SEA BASS WITH CORN AND JUMBO LUMP CRAB SAUTE
Steps:
- Score the skin side of the sea bass fillet (make a few small slit marks in the skin with a sharp knife). Season the fish with salt and pepper.
- Preheat a medium saute pan over high heat and add 2 ounces of olive oil. When the oil is smoking, add the fish, skin side down. Reduce heat to medium and press fillet with a spatula to crisp the skin. When the skin is browned, flip fish. (The total cooking time for the fish should be 5 minutes). Remove from pan and keep warm.
- Add the remaining 2 ounces olive oil to the saute pan. Add the corn, onion, red pepper, and poblano pepper and saute for 1 minute. Add the crabmeat, chives, and chopped thyme, stirring to blend. Adjust seasoning to taste. Add the chicken stock and whisk in the butter to form a sauce. Reduce until sauce consistency.
- Arrange the sauteed vegetable mixture in a large serving bowl. Top with the warm bass fillet and roasted fingerling potatoes. Garnish with a sprig of thyme.
REASONABLE CRABMEAT SAUTE

- Lightly toast the bread and brush both sides with melted butter; divide each slice in half diagonally and set on a dinner plate. Heat the butter in a skillet. When the foaming subsides, add the carrots and saute for a couple of minutes or until the carrots just begin to soften. Add the crabmeat and stir for a minute just to heat up. Add the lemon zest and juice and herbs; saute for 30 seconds and remove from heat. Season to taste with salt and pepper.

- Grits:.
- Melt 2 Tbs unsalted butter in skillet.
- Add 6 cloves minced garlic and saute until garlic is barely soft-do not burn.
- In a heavy saucepan heat 4 cups water and 1/2 cup heavy cream but do not boil.
- Slowly add 1 cup grits and 1/2 tsp salt, stirring constantly.
- Reduce heat and simmer, stiring often for 15-20 minutes or until thick.
- Add 2 cups shredded sharp white cheddar cheese and sauteed garlic and stir until cheese melts.
- Season with salt, pepper, hot sauce.
- Crab Topping:.
- In a large saute pan, melt 1 stick unsalted butter over medium heat. Just as butter begins to sizzle, add 1 large leek cut in 1/4 inch slices.
- Add 1/2 cup coarsely copped green bell pepper and 1/2 cup coarsley chopped yellow bell pepper and cook for 2 minutes.
- Add 1 large peeled, chopped tomato and cook for 2 more minutes.
- Add 3/4 cup good white wine, 1 1/2 teaspoons kosher salt and 1 teaspoons black pepper. Mix well and cover.
- When liquid is bubbling, gently add 1 Lb. crabmeat. Shake the pan rather than stirring to avoid breaking crab lumps. Cover and cook for 1 minute or until nixture is bubbling and crab is warm.
- Add 1 large handful of fresh basil leaves, cut into slices and 1 cup shredded parmesan cheese.
- Cook for 1 minute and serve immediately over grits.

Steps:
- Preheat oven to 350 degrees.
- Microwave spinach according to package directions.
- Drain liquid and set aside.
- Melt butter in medium skillet.
- Add crab meat and saute for 3 minutes on medium heat being careful not to break up crab meat too much.
- Remove crab meat, leaving liquid in skillet.
- In same skillet, stir in flour and cook on low heat until well blended.
- Add Monterey Jack cheese and cream cheese, stirring on low heat until completely melted.
- Add Half and Half and seasonings, stirring continuously on medium heat until mixture begins to boil.
- Remove from heat immediately.
- Add spinach and crab meat and carefully fold into sauce.
- Pour into a 9x9 shallow casserole dish or 6 individual ramekins.
- Sprinikle shredded cheese on top and bake for 10 minutes or until is melted.

- In a large stockpot, sauté onions and celery in olive oil until softened, about 10 minutes, stir in garlic granules.
- Combine chicken broth and flour and stir until smooth. Add to celery mixture and bring to a boil. Reduce heat and simmer until thickened, about 30 minutes.
- Add lemon juice, cayenne and Tabasco sauce. Add shrimp and cook about 5 minutes.
