SAUTéED GREEN BEANS WITH GARLIC
This is a wonderful,classic preparation for a green beans side dish - simmer beans until bright green then toss with garlic until golden and crispy. Serve as a side with everything, any cuisine, from Western to Italian, Middle Eastern to French!If serving with Asian food, I like to add the tiniest drizzle of sesame oil at the end and sometimes a sprinkle of sesame seeds. Steps:
- Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
- Sauté: Heat oil in a large skillet over medium high heat. Add green beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
- Serve: Transfer beans to serving dish. Serve warm!
- Prepare ahead: Blanch beans per step 1, cool and dry, store in fridge until required. When ready to serve, just toss with garlic. It's an instant on-demand side!

SAUTEED GREEN BEANS WITH SHALLOTS AND GARLIC
Crisp-tender green beans are elevated with sweet sauteed shallots and a bit of garlic.

Steps:
- Bring a medium saucepot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water until the beans are cool. Drain well.
- Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until lightly browned and tender, about 2 minutes. Add the green beans and garlic and increase the heat to medium-high. Cook, stirring occasionally, until the garlic has softened and the beans are heated through, about 4 minutes. Season with salt and pepper.

SAUTEED GREEN BEANS WITH GARLIC AND PEPPER
Steps:
- Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.
- Add the stock, then bring to a simmer and cover the skillet. Cook until the green beans are bright green and just slightly tender, about 5 minutes. Uncover the skillet and cook until the liquid evaporates and the green beans are tender, 10 minutes more. Stir in the lemon juice and remaining tablespoon butter and season with additional salt and pepper.

- drop garlic into large pot of boiling water and cook until very tender(8minutes). using slotted spoon transfer garlic to plate. pat dry. add salt and green beans to same pot of boiling water. cokk until beans are just tender about 6 minutes. drain beans and rinse under cold water. pat dry.place beans in large bowl. heat 2 tbl oil in heavy pot over med-high heat.add ham and saute until crisp about 4 minutes. transfer ham to bowl with green beans.(can be prepared one day ahead.cover garlic and bean mixture seperately and refridgerate.) melt butter and remaining oil in large skillet over medium high heat.add cooked garlic and mash with back of wooden spoon.add green beans and ham and toss until heated through and coated with garlic. season with salt and peeper and mound on serving platter.
GREEN BEANS WITH GARLIC AND HAM
We always had these beans with our Christmas dinner. They are very flavorful and a family favorite. Most of the work can be done in advance. Although there is alot of garlic, the cooking process mellows it considerably.

Steps:
- Bring a large pot of water to a boil.
- Add garlic; cook 8 minutes until very tender.
- Transfer to a paper towel using a slotted spoon.
- Pat dry.
- Add salt to pot; return water to boil and add green beans.
- Cook beans until just tender, about 6 minutes.
- Drain beans, rinse under cold water, pat dry and set aside.
- Heat 2 T oil in heavy nonstick skillet over medium-high heat.
- Add ham and saute until crisp, 6 or 7 minutes depending on the moisture content of the ham.
- Set aside.
- Can be prepared 1 day ahead.
- Keep garlic separate from beans and ham.
- Melt butter with remaining oil in a large heavy skillet over medium high heat.
- Add garlic and mash with a fork or the back of a spoon.
- Add green beans and ham.
- Toss until heated through and coated with garlic.
- Season to your taste with salt and pepper.
- Serve.
COUNTRY GREEN BEANS AND HAM
Steps:
- In a large saucepan, with a lid, over medium heat, add the oil. Season the ham with black pepper. Add the ham and cook for 2 minutes on each side. Remove and set aside. Add the onions. Season with salt and pepper. Saute for 2 minutes. Add the reserved ham and beans back to the pan. Cover the beans completely with water. Bring the liquid to a boil, reduce heat to medium low, partially cover and cook for 2 hours. Remove from the heat and reseason if necessary
SAUTEED GARDEN FRESH GREEN BEANS
This is a great way to cook fresh green beans. This recipe is very basic, but can easily be jazzed up with some onions, fresh garlic, mushrooms - let your imagination run wild! This recipe also is very good for fresh asparagus.
