These sauteed green beans are the best way to cook green beans. It is a quick and easy method that makes perfectly tender and delicious garlic green beans. These make the perfect side dish for dinner and can be saved an reheated for another meal.

1 tbsp olive oil
12 oz green beans
2 cloves garlic (fresh )
1/8 tsp salt (- or to taste)
1/8 tsp pepper (- or to taste)
parmesan cheese
toasted pine nuts
crushed red pepper flakes
fresh chopped parsley

Steps:

  • Rinse and dry the green beans completely. Break or cut off the ends of each bean.
  • Heat 1 tbsp of olive oil in a large skillet over medium high heat. Once heated add the green beans and cook for 6-7 minutes for thin green beans, or 8-9 minutes for thick green beans, stirring regularly until they begin to soften and brown slightly on the outside.
  • Use a garlic press to press in the garlic. Then stir in the salt and pepper to taste and cook and additional 2 minutes. Remove from the heat.
  • Garnish as desired and serve.

Steps:

  • Use a microwavable steamer to steam your string beans for 3 minutes. You can also blanch them (see the post for details).
  • Heat the olive oil in a pan over medium-low heat.
  • Add the shallots and garlic. Sautee them until they are translucent.
  • Add the green beans and butter. Saute until they reach your desired level of tenderness (~5 minutes)
  • Season with Salt & Pepper to taste

2 tablespoons coarse salt
3 pounds green beans, ends trimmed
3 tablespoons extra-virgin olive oil
3 shallots, finely chopped (1/2 cup)
4 garlic cloves, minced (2 tablespoons)
Coarse salt, to taste
3 tablespoons extra-virgin olive oil
4 1/2 teaspoons chili bean paste or chili garlic paste
1 1/2 teaspoons granulated sugar
Coarse salt, to taste

Steps:

  • Fill a large bowl with ice water, and set aside. Bring a large pot of water to a boil, and add salt. Add half the beans, return to a boil, and cook until bright green and just tender, 3 to 4 minutes. Using a slotted spoon, plunge beans into ice water to stop the cooking. Transfer to paper towels to drain. Repeat with remaining green beans. (Blanched green beans can be refrigerated in an airtight container for up to 2 days.)
  • For shallot-garlic green beans: Heat oil in a large saute pan over medium heat. Add shallots and garlic, and cook, stirring frequently, until soft and caramelized, 8 to 10 minutes. Add green beans, raise heat to medium-high, and cook until heated through and beginning to brown in places, 3 to 4 minutes. Season with salt. Serve immediately.
  • For Asian-style green beans: Heat oil in a large saute pan over medium heat. Add green beans, and cook until heated through, about 2 minutes. Add chili paste and sugar, and stir until well coated. Season with salt. Serve immediately.

1 tablespoon red wine vinegar

We grow Italian Green Beans each year and I love to saute them in a pan with olive oil, onions and lots of garlic! Of course this recipe works with string beans or asparagus as well!

3 clove garlic, diced slightly thick
1/2 medium onion, diced
1 bunch fresh green beans (i used italian green beans in my picture)
1-2 Tbsp extra virgin olive oil
2 Tbsp butter
2 Tbsp garlic red wine vinegar (or balsamic vinegar), more or less to taste
1/2 tsp season to taste with coarse sea salt (or regular salt if that is all you have)
1/2 tsp coarse ground pepper (or regular ground pepper) to taste

Steps:

  • 1. Clean green beans and cut into 2-3 inch lengths. Chop onion and garlic and heat extra virgin olive oil (or vegetable oil if you don't have any) in a large skillet on medium heat. Place garlic and onion in pan and saute for a minute or two, just until they begin to turn translucent (I add some salt and pepper to the onions & garlic to season them also).
  • 2. Add the green beans to the pan, sprinkle some balsamic vinegar or Garlic Red Wine Vinegar on top, season to taste with sea salt and coarse ground pepper and toss to coat well.
  • 3. Cover with a lid, turn down heat to medium/low and continue to simmer for about 20-25 minutes, tossing occasionally to cook evenly.
  • 4. The green beans are done when they are tender. Top with dots of butter, toss and they are ready to serve. These are delicious when served alone as an appetizer or with just about anything else as a side dish!

2 tablespoons unsalted butter
2 cloves garlic (minced)
½ teaspoon kosher salt (+ more for seasoning the boiling water)

1 teaspoon lemon zest - Optional

Steps:

  • Place 6 cups of water and 2 tablespoons salt in a large pot over medium-high heat. Bring it to a boil.
  • Meanwhile, fill a large bowl with ice and water. Line a sheet pan with a few sheets of paper towel. Set them aside.
  • Carefully add the green beans into the boiling water. Cook until crisp and tender, 5 minutes.
  • Using a slotted spoon or a spider strainer, transfer the green beans into the ice water. Let them cool to room temperature completely for about 5 minutes. Drain and then transfer on to the sheet pan lined with paper towels. Dry as much as you can.
