Steps:
- Rinse and dry the green beans completely. Break or cut off the ends of each bean.
- Heat 1 tbsp of olive oil in a large skillet over medium high heat. Once heated add the green beans and cook for 6-7 minutes for thin green beans, or 8-9 minutes for thick green beans, stirring regularly until they begin to soften and brown slightly on the outside.
- Use a garlic press to press in the garlic. Then stir in the salt and pepper to taste and cook and additional 2 minutes. Remove from the heat.
- Garnish as desired and serve.

- Fill a large bowl with ice water, and set aside. Bring a large pot of water to a boil, and add salt. Add half the beans, return to a boil, and cook until bright green and just tender, 3 to 4 minutes. Using a slotted spoon, plunge beans into ice water to stop the cooking. Transfer to paper towels to drain. Repeat with remaining green beans. (Blanched green beans can be refrigerated in an airtight container for up to 2 days.)
- For shallot-garlic green beans: Heat oil in a large saute pan over medium heat. Add shallots and garlic, and cook, stirring frequently, until soft and caramelized, 8 to 10 minutes. - 1. Clean green beans and cut into 2-3 inch lengths. Chop onion and garlic and heat extra virgin olive oil (or vegetable oil if you don't have any) in a large skillet on medium heat. Place garlic and onion in pan and saute for a minute or two, just until they begin to turn translucent (I add some salt and pepper to the onions & garlic to season them also).
- 2. Add the green beans to the pan, sprinkle some balsamic vinegar or Garlic Red Wine Vinegar on top, season to taste with sea salt and coarse ground pepper and toss to coat well.
- 3. Cover with a lid, turn down heat to medium/low and continue to simmer for about 20-25 minutes, tossing occasionally to cook evenly.
- 4. The green beans are done when they are tender. Top with dots of butter, toss and they are ready to serve. These are delicious when served alone as an appetizer or with just about anything else as a side dish!

- Place 6 cups of water and 2 tablespoons salt in a large pot over medium-high heat. Bring it to a boil.
- Meanwhile, fill a large bowl with ice and water. Line a sheet pan with a few sheets of paper towel. Set them aside.

- Trim off the stem edge of the beans. I did not trim both the ends, I left thin string side. It’s edible to eat and leaving it on the beans makes it look beautiful. With tender and crispy beans, the string ends wont really bother you. But if you are not a fan, go ahead and trim both ends.
