GARBANZO BEANS CHICKPEA SALAD



Garbanzo Beans Chickpea Salad image

Loaded with garbanzo beans, fresh vegetables, and feta cheese, Chickpea Salad is a healthy dish packed with proteins.

Number Of Ingredients 12

2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon minced garlic
salt and pepper or to taste
15 oz garbanzo beans (drained and rinsed)
1 cup arugula
1 cup cherry tomatoes (sliced)
1/2 cucumber (sliced)
1/2 medium red onion (thinly sliced)
1 avocado (sliced)
1/4 cup chopped cilantro
optional pomegranate

Steps:

  • In a medium bowl, mix together olive oil, lemon juice, garlic, salt and pepper.
  • In a large bowl, mix together the rest of the ingredients.
  • Add the salad dressing. Toss to coat. Serve and enjoy!

Posted in response to a request. This is a recipe from my dad's vegan cookbook. My sister used to be vegan, so he made it up for her and the rest of us, if we wanted to try the recipes.

3 tablespoons olive oil
1 (29 ounce) can garbanzo beans, drained, reserving 1/2 cup of bean juice
1/2 cup onion, diced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1 cup diced tomato, drained, juice reserved

Steps:

  • In a large skillet, heat oil and saute onions for 2 minutes, stirring.
  • Add garbanzo beans and saute 7 minutes more, stirring frequently.
  • Add reserved bean and tomato juices, cumin, chili powder, and salt and cook, uncovered, on low to medium heat for 5 minutes to reduce sauce to gravy consistency.
  • Add drained tomatoes, mix well, and serve.

These are a great and healthy snack. This gets you started. After the first batch, play with spicing them up to suit your taste. Don't tell you kids they are good for them, just put them out and watch them disappear.

15 ounces garbanzo beans, canned, drained, rinsed and dried with a towel (better still cook them from dry)
1 tablespoon olive oil
kosher salt

Steps:

  • Preheat oven to 400°F.
  • Add olive oil to garbanzos and mix until each is coated.
  • Spread on baking pad, 1 bean layer.
  • Bake 35-40 minutes, stirring and flipping about every 10 minutes.
  • Remove and toss with salt.

An adopted recipe from my dear friend Shelly: "From Mark Bittman's "How to Cook Everything." The beans tend to "pop" during cooking and a few may land on the bottom of your oven." Feel free to change the seasonings, and I have extended the cooking time due to reviews that they weren't Crispy enough.

3 tablespoons olive oil
1 (16 ounce) can chickpeas or 1 (16 ounce) can garbanzo beans
1 tablespoon finely chopped fresh garlic or 1 tablespoon garlic powder
salt and pepper

Steps:

  • Drain can of chickpeas/garbanzos. Rinse and drain very well again.
  • Toss drained chickpeas/garbanzos, garlic, oil and seasonings together in bowl.
  • Spread mixture onto large shallow pan so that the chickpeas/garbanzos are in a single layer.
  • Put into 400 degree oven for 30-45 minutes shaking occasionally. Watch carefully so they don't burn.
  • Remove from oven and let cool for a few minutes.
  • Enjoy!
