EASY CHICKEN IN TOMATO SAUCE
This one skillet 30 minute dinner will become one of your go to week night meals! Made with quick cooking chicken breasts and store bought canned tomatoes with just a hint of cream!

Steps:
- Heat large skillet on medium high heat.
- While skillet heats, rub chicken breasts with olive oil and sprinkle liberally with salt and pepper.
- Place prepared chicken into skillet and do not touch for 3-4 minutes or until chicken releases easily from the pan and forms a nice crust.
- Remove seared to chicken and set aside. (the chicken will not be fully cooked but will continue to cook in the tomato sauce later).
- Reduce heat of skillet to medium. Add one tablespoon of olive oil. Add onion and saute until translucence. 3-4 minutes. Add chopped garlic and cook an additional minutes.
- Add crushed tomatoes, drained diced roasted tomatoes, heavy cream and italian seasoning to skillet. Bring to a simmer. Add chicken back to pan and simmer for 20 minutes or until chicken reaches 165 degrees.
- Prepare pasta or rice according to package directions and serve with sauce and chicken. Sprinkle with grated parmesan if desired.

CHICKEN BREASTS WITH TOMATO-BASIL SAUCE
This quick, easy and delicious dish is perfect for after-work or any busy day. This goes really well with garlic mashed potatoes. Adapted from The Marshall Field's Cookbook.

Steps:
- Season the chicken breasts on both sides with salt and pepper. Dredge in the flour and shake off any excess.
- Combine the oil and 1 T. of the butter in a large saute pan over medium-high heat. When the oil is hot, place the chicken in the pan and cook, turning once, for 4 to 5 minutes on each side, until golden brown and cooked through. Remove from the pan and keep warm.
- Add the shallot and garlic to the hot pan; saute for 1 minute, then add the vinegar to deglaze the pan, using a wooden spoon to scrape up all the browned bits on the bottom. Add the chicken broth and tomatoes and cook for 1 to 2 minutes, until reduced by half. Remove the pan from the heat. Stirring constantly, add the basil, remaining 2 T. butter and salt and pepper to taste. Stir until the butter is incorporated into the sauce.
- Place a chicken breast on each plate and pour the sauce over. Serve at once.
CHICKEN BREASTS WITH TOMATOES AND CAPERS
This recipe was originally developed by Pierre Franey in 1991 for the 60-Minute Gourmet column, a weekly feature dedicated to Times-worthy dishes that were easy, quick and inexpensive. This recipe fit the bill perfectly, and it still does. Just sauté the chicken breasts until they are lightly browned. Then add shallots and garlic, tarragon, tomatoes, vinegar, capers, white wine and tomato paste. Stir well and cook for about 9 minutes more. That's it.

SAUTEED CHICKEN BREASTS WITH FRESH HERBS AND GINGER

- Heat the oil in a medium skillet over medium-high heat until shimmering. Season both sides of the chicken breasts with salt and pepper, and place them skin side down in the pan. Cook, turning once, until firm to the touch, about 5 minutes per side. Transfer the chicken breasts to a plate.
- Add the lime juice to the skillet, and scrape up any browned bits that cling to the pan with a wooden spoon. Add the chicken broth and ginger, and bring to a boil. Off the heat, add the basil and mint to the pan and swirl the pan to combine.
- Divide the chicken between the 2 plates and spoon the herb sauce over the chicken. Serve.

- For chicken: Mix oregano, garlic powder, cayenne and black pepper in a small bowl.
- Rub spice mixture on both sides of chicken breasts.
- Cover and let stand 30 minutes.
- Melt butter with olive oil in large skillet over high heat.
- Add chicken and saute until golden-brown and just springy to touch, about 5 minutes per side.
- Transfer chicken to large platter, tent with foil to keep warm.
- For sauce: Melt 3 tblsps butter in medium skillet over medium-high heat.
- Add onion and saute until softened, about 5 minutes.
- Add garlic and tomatoes and saute 2 minutes.
- Add stock and olives and cook 5 minutes, stirring frequently.

CHICKEN BREAST WITH ROASTED TOMATILLO SAUCE

Steps:
- Lightly oil a rimmed baking sheet or baking pan and roast tomatillos and jalapeno or chilies under a hot broiler, 4 inches or so from the heat source, 3 to 4 minutes, or until they are blistered and splotchy brown with, maybe, a few black spots. Turn them and roast on the other side. Cool, then transfer tomatillos and chilies to a food processor fitted with the metal blade or blender along with any of the juices on the pan. Process or puree until smooth.
- Meanwhile, over medium heat in a heavy-bottomed saucepan, heat 2 tablespoons olive oil. Add onions and garlic and cook, stirring, about 6 minutes until golden brown. Raise heat to medium high, add tomatillo puree and cook 3 minutes until sauce darkens and is very thick. Add broth, brown sugar and 1/4 cup cilantro. Stir, reduce heat and simmer, uncovered, 10 minutes or until sauce thickens. Season with salt and pepper. Set sauce aside.
- Season chicken liberally with salt and pepper. Heat 3 tablespoons olive oil over medium-high heat in an oven-proof skillet large enough to hold chicken in one layer. Add chicken, skin side down, and cook 5 minutes until skin is richly browned. Turn and cook on bone side 2 minutes or so. Remove chicken from pan and pour out all but 1 tablespoon fat. Add tomatillo sauce and bring to a simmer. Nestle chicken pieces, skin side up, in the sauce, place in preheated 375-degree oven and bake 15 minutes, or until chicken is cooked. (Check with point of a small knife near the bone to make sure chicken is cooked through.)
- Place one piece of chicken in each of four shallow bowls, spoon sauce around, top with crema or queso fresco and sprinkle remaining cilantro over.

- Heat the oil and butter in a heavy-bottomed skillet. Add the chickenbreasts and sauté over medium-high heat, turning the pieces often until lightly browned, about 5 minutes.

SAUTEED CHICKEN BREASTS WITH CAPERS

- Pat chicken dry and season with salt and pepper. In a 12-inch nonstick skillet heat oil over moderately high heat until hot but not smoking and sauté chicken, skin or skinned sides down, 3 minutes, or until golden. Turn chicken over and sauté 1 minute more. Reduce heat to moderately low and cook chicken, covered, until just cooked through, about 10 minutes. - Chicken: 1. Put flour, seasoned with salt and pepper into a pie plate. Coat chicken pieces. Heat butter and olive oil in a skillet to medium-high heat (fragrant, but not yet smoking). 2. Cook for 4 minutes on the first side, turn over, and cook 3-5 minutes on second side, until just done. Sauce: 1. Prepare Sauteed chicken breasts and keep warm 2. Remove all but 2 tablespoons of the fat from skillet. Add minced shallots and cook one minute. Add white wine and cook until mostly evaporated. Add chopped tomatoes, capers and garlic. Stir until tomatoes have given up their juice, creating a chunky pure, about two minutes. Remove from heat and stir in shredded basil, and salt and pepper to taste. 3. Spoon sauce over chicken and serve immediately.
