CREAMY PARMESAN MUSHROOM TURKEY MEATBALLS
These Creamy Parmesan Mushroom Turkey Meatballs are so tender and tasty! Perfect for gameday, holiday parties, easy weeknight dinners and meal prepping! Low-carb and keto friendly.

Steps:
- Preheat oven to 400F, and line a baking sheet with parchment paper.
- Add the almond meal, Parmesan cheese, eggs, parsley, onion, garlic, salt, and pepper to a large mixing bowl and stir together.
- Add the ground turkey and mix together until everything is evenly combined.
- Use a 1 1/2-inch scoop to spoon the meatballs (be sure the meat mixture is firmly pressed into the scoop) then space them evenly on the parchment-lined sheet pan. (You can also use some water or cooking spray on your hands and roll them if you prefer. It takes a little longer so I don't bother.)
- Bake at 400 degrees for 13-15 minutes. You can broil them for 1-2 minutes at the end if you want to give them more color. (Always use a meat thermometer to be sure they reach 165 degrees at their center.)
- While the meatballs are baking, sauté the sliced mushrooms in a tablespoon of olive oil for 6-8 minutes, flipping to brown both sides, then set aside.
- Add another tablespoon of olive oil and the minced garlic, then sauté for 1-2 minutes on medium heat. Pour in the chicken stock and de-glaze the pan (just heat up the stock a bit, and use a spatula to loosen any of the cooked residue on the bottom of the pan).
- Stir in the Worcestershire sauce and onion powder. Whisk in the cream cheese and Parmesan cheese until it creates a creamy sauce. If the sauce is too thick add a little more chicken stock and if it's too thin simmer a bit longer.
- Add the parsley, cooked mushrooms, and the meatballs into the pan, combine and cook for 2-3 more minutes... then enjoy!

CREAMY MUSHROOM TURKEY MEATBALLS WITH EGG NOODLES

Steps:
- Pulse mushrooms, onion and garlic in food processor until very finely chopped; add breadcrumbs, cheese, thyme, salt and pepper. Pulse until well combined; add egg and turkey, pulsing just until incorporated (do not overmix). Transfer to bowl. Roll into 24 meatballs.
- In large, nonstick skillet, heat oil over medium heat; brown meatballs, in batches, for 3 to 5 minutes or until golden all over. Transfer to plate; tent with foil.
- Sauce: In same skillet, melt butter; cook onion, mushrooms, garlic, thyme, salt and pepper for 10 minutes or until very tender and lightly browned. Sprinkle flour into skillet; cook, stirring constantly, for 3 minutes.
- Slowly pour in broth, stirring constantly, until well combined and smooth. Add cream and cheese; bring to simmer (do not boil). Return meatballs to skillet; cook, partially covered, for 20 minutes or until sauce is thickened. Add spinach; toss gently until wilted. Serve over egg noodles.
QUICK MEATBALL STROGANOFF
This is a recipe I came up because my family loves stroganoff. It was a hit with everyone.

- Bring a large pot of lightly salted water to a boil. Add noodles and cook, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes. Drain.
- Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook and stir until onion is almost soft, about 3 minutes. Reduce heat to medium and pour in cream of mushroom soup, milk, and Worcestershire sauce; stir until blended.
- Stir meatballs into the skillet. Reduce heat to low and simmer, covered, until tender, 35 to 40 minutes. Stir in sour cream, salt, and pepper. Cook until flavors combine, about 2 minutes.
- Serve meatballs over noodles.

SWEDISH TURKEY MEATBALLS WITH EGG NOODLES

- Make meatballs:
- Into a blender tear 2 bread slices and grind into fine crumbs. Transfer crumbs to a large bowl. Make more bread crumbs in same manner and transfer to bowl. Finely chop enough onion to measure 3/4 cup and add to bread crumbs. In a small bowl whisk together egg, nutmeg, allspice, salt, and pepper and add to bread crumb mixture. Add turkey and with your hands mix mixture until just combined (do not overmix).
- Form turkey mixture into 1 1/4-inch balls (about 80) and arrange on a tray. Meatballs may be prepared up to this point 1 day ahead and chilled, covered.
- Preheat oven to 375°F.
- In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and brown meatballs in 2 batches, turning them occasionally, about 4 minutes for each batch. With a slotted spoon transfer meatballs as browned to a shallow baking pan and reserve any drippings in skillet. Bake meatballs, tightly covered with foil, in middle of oven until just cooked through, about 25 minutes.
- While meatballs are baking, fill a 6-quart kettle three fourths full with salted water and bring to a boil for noodles. Finely chop enough onion to measure 1/2 cup. In a small bowl whisk together cornstarch and 1/2 cup broth. To reserved drippings in skillet add Sherry and onion and simmer mixture, stirring and scraping up brown bits, until most of liquid is evaporated. Add remaining 2 1/2 cups broth and bring to a boil. Stir cornstarch mixture and whisk into broth mixture. Boil mixture, whisking, 1 minute and remove skillet from heat. Whisk in Worcestershire sauce, sour cream, and dill and keep sauce warm, covered, over low heat (do not let boil).
- Cook noodles in boiling water until al dente. Drain noodles well in a colander and transfer to a large serving dish. Gently toss noodles with sauce and meatballs and garnish with dill. Put 1 tablespoon preserves or cranberry sauce on top of each serving.
TURKEY MEATBALLS WITH MUSHROOM GRAVY
This is a yummy, easy and healthy recipe born out of the need for something flavorful but within my "cleanse" diet guidelines. Though I used the 85/15 ground turkey, you can use the leaner, and save some fat calories. The mushroom gravy sits great on top of the meatballs which you can serve over brown rice, (how I ate it) or over egg noodles, (how my husband ate it). I think this would be a real treat with portabella mushrooms for the gravy, but didn't have them on hand. Hope you enjoy it!

- Preheat oven to 350 degrees F.
- Chop celery and red onion thinly, nearly a mince. Mince the garlic. Reserve 1minced clove for mushroom gravy.
- Combine the ground turkey, onion, celery, (2) garlic cloves, spices and egg whites together in a medium sized mixing bowl.
- Add 2 tbs of the brown rice flour. (You could use about a 1/4 to 1/2 a cup of cooked brown rice in place of flour). After mixing all ingredients very well, shape meat mixture by hand into 8 - 2" to 2 1/2" meatballs.
- Coat a 9" x 12" casserole dish with vegetable oil spray and place the meatballs into the casserole. Place in the oven and bake for 1 hour.
- 15 minutes before the meatballs are finished baking, start the mushroom gravy by placing the 3rd minced clove of garlic into a saute' pan with the olive oil and saute' until tender. Add the mushrooms and saute' for a few minutes over medium heat and then gradually add the brown rice flour and stir until there is a coating on the mushrooms. Add the chicken broth and reduce heat. Stir until slightly thickened and let the broth reduce to a gravy at a simmer, about 5 minutes, stirring as necessary.
- Serve the meatballs and mushroom gravy over hot brown rice or egg noodles.

I make this with my recipe#69173 but you can use your own favorite meatball for this ;-) this is great served up on cooked hot egg noodles, or cooked rice, prep time does not include making and cooking the meatballs.

- In a skillet fry mushrooms in butter over medium heat for 5-7 minutes or until well browned (adding in the garlic the last few minutes of cooking) remove from skillet, set aside.
- In a bowl dissolve the cornstarch in a little of the half and half.
- Add the cornstarch mixture to the skillet with the remaining light cream; whisk and cook, until mixture comes to a boil,and has thickened.
- Add the remaining ingredients, meatballs and the mushrooms; return to a light boil, cover and simmer for 15-20 minutes.
- Sprinkle to with Parmesan cheese if desired, or pass the cheese at the table.
