My hubby and I love love love this recipe! If we are eating it as part of an Asian inspired meal we omit the parmean.

1/2 lb Brussels sprout, washed and thinly sliced
1 tablespoon olive oil
3 tablespoons butter
1/4 cup dry white wine or 1/4 cup cooking wine
1 tablespoon fresh grated gingerroot (or jar ginger)
1 teaspoon minced garlic
1/2 cup vegetable broth or 1/2 cup chicken broth
salt
pepper
1/4 cup grated parmesan cheese

Steps:

  • heat skillet over medium heat.
  • add oil then butter-warm for 1 minute.
  • add sprouts, stir to coat.
  • saute over HIGH heat about 3 minute.
  • add wine and lower temp slightly.
  • add ginger and garlic and saute 2 minute.
  • add broth, salt and pepper (if using canned broth salt might not be needed).
  • cook till tender crunchy.
  • sprinkle with cheese.

I LOVE Brussels sprouts! I usually roast them with garlic, olive oil and sea salt. This recipes sounds wonderful - from June 2007 GH. Haven't tried it yet but will this fall when they are back in season.

2 (10 ounce) containers Brussels sprouts
2 tablespoons soy sauce (they recommend low-sodium)
2 teaspoons fresh ginger, peeled & grated
1 teaspoon sesame oil
1 tablespoon olive oil
1 large onion, cut in half & thinly sliced
2 tablespoons water

Steps:

  • Trim stems and any yellow leaves from Brussels sprouts. Cut each sprout lengthwise into quarters.
  • In a cup, stir together soy sauce, grated ginger and sesame oil.
  • Meanwhile, in nonstick 12-inch skillet heat olive oil over medium heat until hot. Add onion and cook about 5 minutes or until it begins to soften, stirring occasionally.
  • Increase heat to medium high, add Brussels sprouts and water; cover and cook about 5 minutes or until sprouts are beginning to soften and brown, stirring once.
  • Remove cover from skillet and cook about 5 minutes longer or until sprouts are tender-crisp, stirring frequently. Remove skillet from heat; stir in soy sauce mixture.

2 lbs Brussels sprouts
2 tablespoons butter
1 garlic clove, crushed
1/4 cup freshly grated parmesan cheese

Steps:

  • Trim Brussels sprouts.
  • Cook in boiling water for about 8 minutes.
  • Drain well.
  • In saucepan, heat butter and garlic until bubbly.
  • Return Brussels sprouts to the saucepan and stir to coat with garlic butter.
  • Place in a serving dish and top with Parmesan cheese.

  • Heat a heavy bottom skillet (preferably cast iron). Add one tablespoon butter (and oil if using). Let it melt and coat the pan. Add brussel sprouts in pan in single layer. Let cook undisturbed until cut side is brown and caramelized. Once caramelized, cover and continue cook until brussel sprouts are fork tender. (4-5 minutes)
  • Transfer sprouts to a plate. Heat remaining butter in skillet, add minced garlic, and thyme sprig. Let garlic perfume butter. Deglaze pan with wine, let alcohol cook off (1-2 minutes). Add lemon juice, zest with cream. Cook for 1 more minute. Add parmesan cheese.
  • Return brussel sprouts back to the skillet. Cover and continue simmer for 2 minutes or until sauce thickens and perfumes brussel sprouts. Sprinkle with generous pinch of salt and black pepper. Remove from heat.
