QUICK CILANTRO CHICKEN

Steps:
- Sprinkle chicken with salt, cumin and pepper. In a large skillet over medium heat, cook and stir the chicken in 2 tablespoons butter until no longer pink. Remove and keep warm. , In the same skillet, saute onions in remaining butter until tender and golden brown. Return chicken to the pan. Stir in lemon juice and cilantro; bring to a boil. If desired, serve with rice.

SAUTE OF CHICKEN BREASTS WITH COCONUT MILK AND HERBS
Steps:
- Between sheets of plastic wrap pound the thicker side of the breast to make it overall more even in thickness and season lightly with salt.
- Heat the sesame oil in a skillet over moderate heat. Add the chicken breasts and tenderloins. Saute the chicken without disturbing the pieces for 4 to 5 minutes. You'll know to turn the chicken over when the top looks opaque (tenderloins may take only 2 to 3 minutes per side). Turn the chicken over to the other side and saute, undisturbed again for another 4 to 5 minutes or until the interior is cooked through.
- Remove the chicken to a plate and discard the fat from the skillet. Squeeze the juice from the lime into the skillet and scrape up any coagulated juices into the juice; add the coconut milk, bring it to a simmer. Remove the skillet from the heat and whisk in the scallions and cilantro; season to taste with salt and dried red pepper flakes.
SAUTEED CHICKEN WITH TOMATOES AND CILANTRO

- Heat olive oil in heavy large skillet over high heat. Add chicken and sauté until brown, about 4 minutes per side. Transfer chicken to platter.
- Reduce heat to medium. Add onion and garlic to skillet and sauté until onion is translucent, about 6 minutes. Add tomatoes, vinegar, cumin and hot pepper sauce. Bring mixture to boil. Return chicken to skillet. Cover and simmer until chicken is cooked through, about 30 minutes. Mix in parsley and cilantro. Season with salt and pepper.
CREAMY CILANTRO LIME CHICKEN

- Place chopped onion on bottom of slow cooker. In a small bowl combine garlic, cumin, salt, and pepper. Rub seasonings all over chicken breasts and place chicken on top of chopped onion.
- Sprinkle chicken with 1/4 cup cilantro and red pepper flakes. Pour in 1/2 cup chicken broth, lime juice, and lime zest. Cover and cook chicken on LOW for 3 hours.
- Remove lid and ladle out about 1/4 cup hot liquid into a small bowl. Whisk cornstarch into the small amount of liquid and stir back into the slow cooker. Cook for 30 additional minutes, until chicken temperature reaches 160ºF.
- Remove the lid to add cubed cream cheese and remaining chopped cilantro. Stir until smooth and creamy. Season sauce to taste with salt and pepper. Serve creamy sauce over chicken with rice, additional cilantro, and lime wedges.
- In a small bowl combine garlic, cumin, salt, and pepper. Rub seasonings all over chicken breasts and set aside.
- Turn instant pot onto SAUTE and heat 1/2 tablespoon olive oil. Brown 2 chicken breasts in heated oil 2-3 minutes per side, or until golden (but not cooked through). Set aside and repeat with remaining 2 chicken breasts, adding remaining oil. Remove browned chicken and set aside.
- Add onion to instant pot and sauté until tender, about 2 minutes. Add 1 cup of chicken broth to the pot, scraping up browned bits with silicone spoon. Add in 1/4 cup cilantro, lime juice, lime zest, and red pepper flakes.
- Place chicken back in pressure cooker. Close lid and seal valve. Cook on HIGH pressure for 5 minutes. Quick release pressure and transfer chicken to a clean plate. Cover with foil to keep warm.
- Remove lid and ladle out about 1/4 cup hot liquid into a small bowl. Whisk cornstarch into the small amount of liquid. Press SAUTE LOW and add cornstarch mixture back to pot, stirring constantly until thickened. Stir in remaining cilantro and cream cheese until smooth. Season sauce to taste with salt and pepper. Serve creamy sauce over chicken with rice, additional cilantro, and lime wedges.

LIME CILANTRO SAUTEED CHICKEN BREAST
This was a big hit with my son and other family members. Also works very well on sauteed shrimp and fish and the frozen breaded Clam Strips. I throw frozen Chicken Breast in the frying pan on medium heat for this one. They turn out just as well as if thawed. This is a great pairing.

- 1. Over medium heat place Chicken Breast un-thawed or thawed in frying pan to which you fave added a pat of butter and a teaspoon of olive oil. When first side has cooked somewhat, flip to other side. Continue flipping every 3 or 4 minutes. Cook 7 to 10 minutes.
- 2. When breast appears 2/3 to 3/4 done add 1/4 stick butter and 2 tablespoons of olive oil and the Lime Juice and Cilantro, to the pan. (Garlic is Optional)
- 3. I test that they are cooked through by slicing a little and checking.
- 4. Plate the Chicken Breasts and spoon on some of the sauce. Serve with rice, potatoes or your choice. Again -- This works very well for Shrimp, Fish, Breaded Clam sticks or other Sea Food. Margarita Anyone?
- 5. Hint: I sometimes prepare the sauce separately by heating in the microwave. You'll need some salt to bring out the lime juice and cilantro. I add some sauce to pan and reserve some for plating. It's What's for Supper? Really.

- Move broiler rack into position closest to flame. Set broiler to medium. Place tomatillos and chiles on a rimmed baking sheet; broil until soft and blackened in spots, about 5 minutes. Turn; broil other side 5 minutes. Remove from broiler and transfer to a food processor; blend. Increase broiler heat to high. Place chicken on same baking sheet and sprinkle with salt.
