SAUTéED MUSHROOMS IN A WINE REDUCTION
Sautéed Mushrooms in a wine reduction are an easy recipe that comes together really quickly. They're a great way to use leftover wine!

Steps:
- In a large saute pan, melt butter and oil over medium heat.
- Add your mushrooms and let them brown about a 2-3 minutes per side.
- When mushrooms are nicely browned, add wine, salt and pepper and deglaze the pan.
- Let the wine simmer and reduce for 7-10 minutes or until most of the wine has evaporated. Serve immediately.

- Heat a large skillet to high heat and add the oil. Wait 1 or 2 minutes for it to come up to the smoking point. Add the onion and garlic and toss furiously so that the garlic doesn't burn. When the onions become translucent add the mushrooms and toss until all mushrooms are golden brown and caramelized. Remove from the heat. Add butter and thyme and season with salt and pepper, to taste. Serve immediately.
- Cook's Note: Never run mushrooms directly under water; they will absorb water like a sponge, and your saute will be far too soggy. Instead, using a slightly damp paper towel, wipe mushrooms down. Alternatively, use pastry brush and dust the dirt from the mushrooms.
SAUTéED MUSHROOMS WITH RED WINE
Excellent served as a side dish with steak, roast beef or even chicken. The lemon gives the mushrooms a nice tangy flavour which mixes well with the flavour of the red wine.

- Add sliced mushrooms and sauté over high heat until they squeak and sizzle and are nicely browned.
- Add salt, pepper and red wine.
- Simmer for 5 minutes.
- Add lemon juice and parsley.
- Toss well.

These go very well with Spaghetti & Meatballs or grilled steak. I usually saute the mushrooms until the butter clarifies. You may substitute the wine and Worcestershire Sauce with white wine and White Wine Worcestershire Sauce if you are serving with chicken or fish.

STEAK WITH RED WINE, MUSHROOM REDUCTION
This recipe is incredibly simple and delicious. I originally got this recipe from a Martha Stewart cookbook, but added a few things. It's a favorite in our home! We love to serve it with mashed potatoes and a nice glass of red wine.

- Rub both sides of the steak with salt, pepper, and savory. Heat oil in a large skillet over medium heat; add garlic cloves and steak. Cook steak 5 minutes on each side for medium rare. Transfer steaks to a cutting board. If you would like them cooked through a bit longer, cover with aluminum foil, they will continue to cook. Add mushrooms to the pan, leave heat on medium, and sauté until tender. Transfer mushrooms to a small bowl.
- Discard garlic from the pan. Add red wine and stock to the pan. Reduce over high heat, scraping bottom with a wooden spoon, until 1/2 cup of sauce remains. Combine with mushrooms.
- serve beef with mushroom sauce on the side.

PORT WINE MUSHROOM SAUCE
Drizzle this sauce over simple roast chicken, game, beef or vegetarian roasts and you have a gourmet meal. You can use one kind of mushroom or a blend of different varities. I like Shiitake mushrooms in this recipe. Remember the better quality wine and broth you use, the better the finished sauce.

- In a medium skillet, melt the butter and saute the mushrooms for about 3 minutes, then stir in flour, combining well.
- In another skillet, combine the wine, shallots and vinegar, boiling until thickk, about 3 minutes.
- Reduce heat to medium. Add broth, Worcestershire, tomato paste and rosemary, cooking for 1 minute.
- Add mushroom mixture and cook 3 minutes, stirring constantly, then add mustard to sauce.

- In a large non-stick skillet, melt ghee over medium-high heat.
- Saute onions and garlic until onion is clear and starting to caramelize.
- Add bacon and cook through.
- Add mushrooms, and saute until the oils in the pan have mostly been absorbed and the mushrooms start to give off moisture.

BALSAMIC SAUTEED MUSHROOMS

- Combine the balsamic vinegar, brown sugar, and 1 Tbs. water in a small dish and set near the stove. Set a shallow serving dish near the stove, too.
- Turn on the exhaust fan. In a 10-inch straight-sided sauté pan, heat 1 Tbs. of the butter with the olive oil over medium-high heat. When the butter is melted, add the mushrooms and 3/4 teaspoons salt and stir right away with a wooden spoon until the mushrooms have absorbed all the fat.
- Let the mushrooms cook undisturbed for 2 minutes and then stir once. The pan will look dry, but keep the heat at medium high and continue to cook, stirring infrequently, until the mushrooms are shrunken, glistening, and some sides have developed a deep orange-brown color, 6 to 7 minutes more (the bottom of the pan will be brown).
- Turn the heat to low, add the garlic and the remaining 1 Tbs. butter and cook, stirring, until the butter is melted and the garlic is fragrant, 15 to 20 seconds. Carefully add the balsamic mixture (you'll need to scrape the brown sugar into the pan with a rubber spatula). Cook, stirring, until the liquid reduces to a glazey consistency that coats the mushrooms, 15 to 20 seconds. Season with a few grinds of pepper.
- Immediately transfer the mushrooms to the serving dish, scraping the pan with a rubber spatula to get all of the garlicky sauce. Let sit for a few minutes and then serve warm.
