1 pound Italian sausage
1 (8 ounce) can tomato sauce
2 (10 ounce) packages frozen chopped spinach, thawed and drained
2 cups cottage cheese
½ cup grated Parmesan cheese
1 egg, beaten
2 cups shredded mozzarella cheese

Steps:

  • Brown sausage in skillet over medium high heat. Drain fat from skillet and stir in tomato sauce. Set mixture aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the spinach, cottage cheese, Parmesan cheese and egg. Mix well and spread mixture in the bottom of a 9x13 inch baking dish. Spoon sausage mixture over spinach mixture and top with mozzarella cheese.

1 pound Hot or Mild Italian Sausage
1/2 medium onion, chopped small, about 2/3 cup
3 cloves garlic
3 (14) ounce cans crushed tomatoes
20 ounces refrigerated tortellini
4 ounces baby spinach, roughly chopped
1/2 cup heavy cream
1/2 cup Parmesan or Pecorino Romano cheese, shredded ((optional))

Steps:

  • Cook and crumble the sausage in a large skillet over medium-high heat. When the sausage has almost browned, add the onion and garlic. Continue cooking for 2-3 minutes until the garlic is fragrant and the onion begins to soften.
  • Add the tomatoes and the tortellini to the skillet. Stir and reduce heat once the sauce comes to a simmer. Cover with lid and simmer softly until the tortellini is tender about 8-10 minutes.
  • Add the spinach and stir for 1-2 minutes until it wilts. Stir in the cream. Sprinkle each serving with cheese if desired. Enjoy!

  • Heat the olive oil in a frying pan. Fry the garlic until golden, then add the tomatoes. Season, then simmer for 10 mins. Stir in mascarpone, then cook for 2 mins more.

8 large fennel-flavored Italian-style link sausages, about 1 1/2 pounds total weight
1 tablespoon corn, peanut or vegetable oil
1 cup finely chopped onion
1 teaspoon finely minced garlic
1/2 pound plum tomatoes, cored and cut into 1/2-inch cubes
2 cups tomato puree
1/2 cup water
1/4 teaspoon dried hot red pepper flakes
1 teaspoon finely chopped fresh rosemary leaves
6 small mint leaves
1/2 pound fresh spinach, rinsed and picked over to remove any tough stems and blemished leaves

Steps:

  • Using a two-pronged fork, prick sausages in several places on all sides.
  • Heat oil in a heavy skillet large enough to hold sausages in one layer. Add sausages and cook, shaking skillet and turning sausages so they brown evenly, about 10 minutes. Remove sausages and pour off most of the fat from the skillet.
  • Add onion and garlic and cook briefly, stirring, until onion is wilted. Add tomatoes and stir to dissolve any brown particles that cling to bottom of the skillet. I have a weakness for pasta, but decided it was time to be more conscious of what I was eating. This is the product of that experimentation. The best part of this recipe is that you use the same pan for everything but the noodles. Who doesn't love easy clean up? This makes a good six to eight servings depending on how many big eaters you have in your family. If you half the recipe, keep the tomato, spinach and zucchini the same and half all other ingredients. Also, if you don't like spice omit the crushed red pepper.

2 tablespoons extra virgin olive oil (divided)
3 garlic cloves (minced)
5 ounces fresh spinach (I buy the pre-washed and ready to eat spinach)
1 medium zucchini (chopped)
salt (to taste)
pepper (to taste)
1 1/2 lbs Italian turkey sausage (casing removed)
1/2 teaspoon crushed red pepper flakes (1 teaspoon if you like it hot!)
1 (15 ounce) can Italian stewed tomatoes (drained and chopped)
1 1/2 cups fat-free half-and-half
12 ounces whole wheat penne (or pasta of your choice)

Steps:

  • In a large 12 inch deep fry pan or skillet, cook spinach and garlic in 1 tablespoon olive oil over medium heat. Cook until spinach is wilted (approximately 5 minutes).
  • Transfer spinach to cutting board to cool. When cool, chop spinach.
  • In hot skillet, add the other tablespoon olive oil.
  • Add chopped zucchini.
  • Salt and pepper, to taste.
  • Cook until lightly browned (about 3 minutes). Set zucchini aside.
  • Turn heat to medium high.
  • Add sausage and crushed red pepper.
  • Cook until browned (about 7 minutes). Drain if you like; I don't because turkey sausage is generally pretty lean.
  • Add tomatoes, zucchini, spinach, and half and half.
  • Cook on medium high for ten minutes; reduce heat to low.
  • Meanwhile, boil water and cook pasta.
  • Drain pasta (do not rinse) and add to sausage mixture.
  • Cook on low for about five minutes or until sauce is slightly thickened.

5 links Italian sausage, cut into bite size pieces (I used chicken mozzarella sausage from Sam's Club)

1/2 cup rose wine (or whatever you prefer)
8 ounces cream cheese
1 cup Italian cheese blend
1 tablespoon dried basil
1 tablespoon garlic powder

Steps:

  • Prepare pasta according to package directions. Meanwhile, brown sausage over medium-high heat in a large skillet with garlic and basil. Add spinach and stir until wilted. Spicy Tomato Sauce
1 15-ounce container ricotta cheese
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1 3/4 cups grated Parmesan cheese
2 large eggs
3 tablespoons whipping cream
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
9 uncooked lasagna noodles
3 cups shredded provolone cheese (about 12 ounces)

Steps:

  • Heat oil in large skillet over medium heat. Add sausages; sauté until brown, using fork to break up meat into coarse pieces, about 7 minutes. Add Spicy Tomato Sauce. Simmer 5 minutes.
  • Position rack in center of oven; preheat to 375°F. Whisk ricotta, spinach, 1 cup Parmesan, eggs, cream, basil, oregano and pepper in large bowl. Set aside. Spoon 1 cup sauce over bottom of 13 x 9 x 2-inch glass baking dish. Place 3 noodles over sauce in single layer. Spread 1 cup sauce over noodles. Spoon 1 cup ricotta mixture over sauce. Sprinkle 1/4 cup Parmesan and 1 cup provolone over ricotta mixture. Repeat layering with 3 noodles, 1 cup sauce, 1 cup ricotta mixture, 1/4 cup Parmesan and 1 cup provolone. Arrange remaining 3 noodles over cheese. Spoon 1 cup sauce over noodles. Sprinkle remaining 1/4 cup Parmesan and 1 cup provolone over lasagna. Dollop remaining ricotta mixture atop lasagna. Spoon 2 1/2 cups sauce around ricotta dollops. Tightly cover baking dish with foil.
  • Bake lasagna 50 minutes; uncover and continue baking until noodles are tender and lasagna is hot and bubbly, about 25 minutes longer. Let lasagna stand 15 minutes before serving. (Can be prepared 1 day ahead. Cool slightly. Cover and refrigerate. Rewarm, covered with foil, in 350°F. oven about 45 minutes.)
  • Meanwhile, rewarm remaining sauce in small saucepan over medium heat. Serve lasagna, passing remaining sauce.

ONE-POT PASTA WITH SAUSAGE AND SPINACH



One-Pot Pasta With Sausage and Spinach image

This is the one-pot recipe to make when chopping an onion feels like too much work. Cooking the pasta in a combination of passata (puréed raw tomatoes) and water seasoned with cumin and red-pepper flakes infuses it with flavor all the way through. Cumin adds a subtle earthiness to the dish, but you can also use the same seasonings as those in the sausage you've chosen, like dried oregano, thyme, basil, paprika, fennel seeds or garlic. (Check the ingredients list on the package, if you're not sure.) Baby arugula, kale or other leafy greens could be substituted for the spinach, just make sure to tear or cut them into small, bite-size pieces. To make a vegetarian version, you could use mushrooms in place of the sausage at the start of the recipe, then continue with the rest.

2 sweet or hot Italian sausages (5 to 6 ounces), casings removed
1 (24-ounce) jar passata or (28-ounce) can crushed tomatoes
1/2 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
Kosher salt
1 pound cavatappi, fusilli or other small, tubular pasta
5 packed cups baby spinach (about 5 ounces)
1/2 cup grated Parmesan

Steps:

  • Heat the oil in a 12-inch, deep skillet with a tight-fitting lid or a Dutch oven over medium-high until shimmering. Use your hands to pull the sausages apart into small pieces; add to the skillet and cook untouched for 1 minute.
  • Continue to cook for another 4 to 6 minutes, stirring at 1-minute intervals and breaking up the sausage into 1/2-inch chunks, until browned and crispy on the outside with no pink remaining. If you have more than 1 tablespoon of fat in the pan, drain the excess.
  • Carefully pour in the passata (it may splatter), then add the cumin, red-pepper flakes and 2 cups water, stirring to combine. Season with salt and increase the heat to bring to a boil.
  • Add the pasta, coating it with the liquid. (It won't be fully submerged, and that's OK.) Adjust the heat to maintain an active simmer with small bubbles forming on the surface. Cover and let cook, stirring every few minutes to make sure nothing is sticking at the bottom of the pan, until the pasta is al dente, about 1 minute less than the package instructions. If the pasta is still hard at this point, add a few tablespoons of warm water at a time and cook until just al dente. Depending on your pasta size and shape, you may need to add several tablespoons of water.
  • When the pasta is just al dente, reduce the heat to low and season to taste with salt. Stir in the spinach in batches, and cook, uncovered, until most of the spinach is wilted, about 1 minute more. (It will continue to wilt in the heat of the pasta after you serve it.) If the pasta seems too dry, add 1 tablespoon warm water at a time until it reaches your desired consistency.
  • Divide pasta among serving bowls and top with Parmesan.
