Hellmann's Parmesan Crusted Chicken (Low-fat Version) image

This is an unbelievably simple recipe that tastes wonderful. The way I make this low-fat is by using Hellmann's "Just2Good" mayo instead of the regular.. unlike fat-free, I think it tastes JUST like light mayo and pretty close to the real thing. I also substitute low-fat Parmesan cheese, if possible. Enjoy!

1/2 cup hellmann mayonnaise
1/4 cup grated parmesan cheese
4 boneless skinless chicken breasts
4 teaspoons Italian seasoned breadcrumbs

Steps:

  • Combine mayonnaise and cheese.
  • Spread on chicken, then sprinkle with bread crumbs.
  • Bake at 425 degrees for 20 minutes.

2 slices bacon
1/2 lb lean Italian turkey sausage, casings removed
2 large russet potatoes, cut into 1/2-inch cubes (about 4 cups)
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
4 cups water
3 1/2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
4 cups chopped fresh kale or Swiss chard leaves
1 can (15 or 19 oz) cannellini beans, drained, rinsed
1 cup fat-free half-and-half or regular half-and-half

Steps:

  • In 4-quart nonstick saucepan or Dutch oven, cook bacon until crisp; drain on paper towel. Crumble bacon; set aside. Remove and discard drippings from saucepan.
  • In same saucepan, cook sausage over medium-high heat 6 to 8 minutes, stirring frequently, until no longer pink. Drain well on paper towels; set aside.
  • In same saucepan, mix potatoes, onion, garlic, Italian seasoning, salt, pepper, pepper flakes, water and broth. Heat to boiling. Reduce heat to low; cook uncovered about 10 minutes, stirring occasionally.
  • Stir in bacon, sausage, kale and beans. Cook 10 to 15 minutes, stirring occasionally, until potatoes and kale are tender. Stir in half-and-half; cook just until heated.

I love this casserole! Although it's called a supper dish, it works beautifully for breakfast, too. It freezes well and you can get a head start by using leftover rice.

1 cup corn flake crumbs
1/2 cup butter, softened
1 lb pork sausage
1 cup cooked rice
1/4 cup milk
1 (10 1/2 ounce) can cream of mushroom soup
3 eggs, slightly beaten
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350. Lightly grease a 9x9 casserole dish.
  • In a small bowl, combine crumbs and butter. Press half of mixture into bottom of dish.
  • Brown sausage in a skillet. Drain fat and layer over crumb crst. Spoon rice over sausage.
  • In small saucepan over medium heat, stir milk and soup until warm (not boiling!). Stir in egs and cheese and cook until cheese is melted. Pour into dish. Sprinkle remaining crumbs on top. Bake for 45 minutes.

1/4 cup skim milk

3/4 cup Egg Beaters egg substitute
1 1/2 cups low-fat cheddar cheese, shredded

Steps:

  • Preheat oven to 350. Lightly grease a 9x9 casserole dish.
  • Combine crumbs and broth. Press half into bottom of dish.
  • Brown sausage in skillet. Drain fat and place on crum crust. Spoon rice over sausage.
  • In small saucepan over medium heat, combine milk and soup. Stir in eggs and cheese and cook until cheese is just melted. Pour into dish. Sprinkle remaining crumbs on top.
