Here is a good way to make a little meat go a long way. These are good enough to serve company! I found this recipe in a great little booklet called, Dinner on the Double, by Better Homes and Gardens.

32 large pasta shells
1 lb bulk pork sausage, cooked and drained
10 ounces chopped frozen spinach, thawed and drained
4 eggs, beaten
2 cups ricotta cheese
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
3 cups spaghetti sauce

Steps:

  • Cook pasta shells according to package directions.
  • Drain and rinse with cold water and drain again.
  • Combine remaining ingredients, except spaghetti sauce, in a large bowl and mix well.
  • Fill each pasta shell with 3 tablespoons of filling.
  • Place in a baking dish and top with spaghetti sauce.
  • Bake at 350 degrees until heated through, about 30 minutes.
  • To freeze: Freeze before baking.
  • You may freeze individually wrapped shells without sauce, or freeze sauce-topped shells in baking dish.

Believe it or not, I'm not a fan of cheese and try to avoid it whenever possible. So dishes that are stuffed with things like ricotta turn me off. I created this dish as a compromise to my cheese avoidance and my husband's love of Italian food. Serve this with garlic bread and a salad for a wonderful family dinner.

1 (16 ounce) package jumbo pasta shells
3 teaspoons vegetable oil, divided
1 pound bulk Italian sausage
1 (16 ounce) package finely shredded mozzarella cheese, divided
1 teaspoon dried Italian seasoning, plus more for garnish if desired
1 (24 ounce) jar prepared marinara sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13 baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook shells in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 to 12 minutes. Drain. Lightly oil a rimmed baking sheet; place drained pasta on baking sheet to cool.
  • Heat 2 teaspoons vegetable oil over medium-high heat in a heavy skillet. Cook and crumble sausage until it has lost its pink color and begins to brown. Remove from heat; drain off grease.
  • Stir half of the shredded cheese and the Italian seasoning into the browned sausage. Spoon mixture into the pasta shells (1 to 2 tablespoons per shell). Arrange stuffed shells in prepared baking dish. Pour marinara sauce evenly over the shells. Top with remaining shredded cheese. Cover tightly with aluminum foil.
  • Bake in preheated oven until heated through and bubbly, about 30 minutes. Remove foil; bake until browned, 5 to 10 more minutes. Sprinkle with a pinch of Italian seasoning, if desired.

1 spaghetti squash, halved and seeded
2 tablespoons olive oil, divided, or more as needed
1 clove garlic, diced, or more to taste
1 large red bell pepper, chopped
2 medium tomatoes, chopped
1 teaspoon dried basil
¾ cup chevre or other soft goat cheese, crumbled
salt and freshly ground black pepper to taste
3 tablespoons dry bread crumbs, or to taste
3 tablespoons butter, or to taste, cut into small cubes

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Brush the inside of the spaghetti squash with 1 tablespoon olive oil and place cut-side down on a baking sheet.
  • Bake in the preheated oven on the middle rack until squash is easily pierced with a fork, about 25 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-low heat and cook garlic until fragrant, about 1 minute. Add bell pepper. Cook and stir until softened, about 3 minutes. Stir in tomatoes and basil, cover, and cook, stirring occasionally, until soft, about 10 minutes.
  • Remove spaghetti squash from oven, cool slightly, and shred the cooked squash into spaghetti-like strands. Place strands in a bowl. Add bell pepper mixture, goat cheese, salt, and black pepper and mix until well combined. Spoon mixture back into the squash halves. Sprinkle with breadcrumbs and butter cubes.
  • Bake in the preheated oven until filling is bubbly and bread crumbs are browned, about 15 minutes.

1 lb mild Italian sausage
salt and pepper
1 large egg, beaten
3/4 cup Italian seasoned breadcrumbs
1 (30 ounce) jar spaghetti sauce
1/2 cup grated parmesan cheese

Steps:

  • Cook pasta shells according to package directions; drain and set aside.
  • Remove and discard casings from sausage.
  • Brown sausage in a large skillet, stirring until it crumbles; drain.
  • Combine sausage, salt, pepper, egg, and breadcrumbs in skillet; set aside.
  • Spread 1 cup spaghetti sauce in bottom of lightly greased 13x9 inch baking dish.
  • Spoon sausage mixture into shells, and place in baking dish.
  • Pour remaining sauce over shells.
  • Cover and bake at 350 degrees, for 15 minutes.

4 tablespoons extra-virgin olive oil, plus more for brushing
2 tablespoons all-purpose flour
2 cups milk
1 bunch spinach, roughly chopped
4 thin slices ham (about 3 ounces), cut into strips
Pinch of cayenne pepper
Pinch of freshly grated nutmeg
Kosher salt
4 ounces gruyere or gouda cheese, finely shredded (about 1 1/4 cups)

Steps:

  • Preheat the oven to 400 degrees. Pierce the potatoes with a fork; microwave for 15 minutes. Remove and brush with olive oil; transfer to the oven rack and bake until fully tender, about 15 minutes.
  • Meanwhile, heat 2 tablespoons oil in a medium skillet over medium heat. Stir in the flour with a wooden spoon and cook until slightly toasted, about 2 minutes. Whisk in the milk and bring to a boil. Reduce the heat and simmer, whisking occasionally, until the sauce begins to thicken, about 6 minutes. 12 ounces uncooked whole wheat penne pasta
1 pound lean ground chicken
1 small onion, finely chopped
1 teaspoon garlic powder, divided
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 ounces reduced-fat cream cheese
1/2 cup reduced-fat sour cream
1 cup shredded part-skim mozzarella cheese, divided
Optional: Minced fresh parsley and crushed red pepper flakes

Steps:

  • Preheat oven to 400°. Cook pasta according to package directions for al dente. Drain, reserving 1/3 cup pasta water; return all to pot., Meanwhile, in a large skillet, cook and crumble chicken with onion, 1/2 teaspoon garlic powder and remaining seasonings over medium-high heat until no longer pink, 5-7 minutes. Stir in tomatoes; bring to a boil. Add to pasta; toss to combine. Transfer to a 13x9-in. baking dish coated with cooking spray., Mix cream cheese, sour cream, 1/2 cup mozzarella cheese and remaining garlic powder. Drop mixture by tablespoonfuls over pasta.
