Steps:
- Place rice in a large bowl and cover with cold water; let stand for 30 minutes. Drain and rinse well under cold water.
- Place rice in a large saucepan and add boiling water and salt; bring to a boil over high heat. Reduce heat to medium, cover and cook for 3 minutes, then remove from heat.
- Keep covered and let rice steam for 10 minutes or until water is absorbed and rice is tender. Fluff with a fork.

BAKED BASMATI RICE
I do not like rice, but I love it this way! This is the only way I will eat it. This recipe is a spin from observing my mom's Iranian friend preparing Basmati on a stove, he added the chicken stock and I thought it added such a great flavour. My sister always prepares rice in the oven with chopped onions and green peppers, so I tried the Basmati that way. I usually serve it with Tikka Masala on top. *Note* This rice is supposed to be "al dente", that s why less water is used.

Steps:
- Grease a 9 x 13 baking pan with the olive oil.
- Pour in rice then cover with dry chicken stock.
- Pour water on top.
- Add onion and corn and stir.
- Place butter chunks in various spots around the dish.
- Cover with aluminum foil and bake at 350.
- Stir every once in a while so rice on bottom does not burn and rice is evenly crispy on top.

EASY NO-FAIL PERFECT FLUFFY BASMATI - TEXMATI RICE
This make fluffy basmati every time- easy and comes out perfect. I like the Texmati brand of basmati-its available in many supermarkets and no rinsing is required. You can double, triple or quadruple this for more servings.

Steps:
- If not using the Texmati brand, then rinse rice, in colander under cold running water, until the water runs clear.
- In non-stick pot, place rice and water together.
- Let soak at least 30 minutes.
- Bring to a boil and then turn heat to lowest level.
- Cover pot with tight-fitting foil.
- Cook for 30 minutes.
- Turn off heat and let set for at least 20 minutes.
- Take off foil and enjoy.

- Put the rice in your ricemaker ( or saucepan ) and rinse several times with cold water swishing gently with your hand to release excess starch. Drain.
- Add the 2 1/4 cups cold water to the ricemaker ( saucepan ) and the salt.
- Turn the ricemaker on and leave until done. ( Or bring the saucepan to a boil, cover and simmer on low for 20 mins ).

- Place the rice in medium bowl and add enough water to cover by 2 inches. Using your hands, gently swish the grains to release any excess starch. Carefully pour off the water, leaving the rice in the bowl. Repeat four times, or until the water runs almost clear. Using a fine mesh strainer, drain the rice.
- In a medium pot, bring the water, butter, salt, and rice to a boil. Cover the pot with a tight fitting lid, then turn the heat down to a simmer and cook for 15 to 20 minutes, until all of the water is absorbed and the rice is tender. If the rice is still too firm, add a few more tablespoons of water and continue cooking for a few minutes more. Remove the pan from the heat and allow it to sit covered for 5 minutes. Fluff the rice with a fork and serve.
