CHOCOLATE CRINKLES

Chocolate Crinkles image

Although these aren't exactly the recipe we used at Cookies By Design (it would be wrong for me to give that out), it's very close and they taste exactly the same: absolutely wonderful! :) And so easy to make, too! My husband made these last year for his annual cookie tin gifts, and they were very popular. Makes about 72 cookies. These are different from most of the recipes you'll find for chocolate crinkles in that they use cocoa powder rather than baking chocolate or liquid forms of chocolate (kind of nice, actually... no messy melted chocolate all over the kitchen! *chuckle*).

CITRUS CRINKLE COOKIES

Citrus Crinkle Cookies image

These soft-and-chewy cookies are positively bursting with bright citrus flavor. We created this versatile recipe to highlight whatever citrus fruit you like the best-try tart lemon, zesty lime or sweet orange. A few drops of food coloring add a vibrant visual cue. These cookies are equally festive during the summer or winter months.

Provided by Food Network Kitchen

Categories     dessert

Time 3h40m

Yield 24 cookies

Number Of Ingredients 11

2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup packed light brown sugar
1 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
2 tablespoons finely grated citrus zest (lemon, lime or orange) plus 3 tablespoons juice
4 to 6 drops yellow, green or orange gel food coloring
1/2 cup confectioners' sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Combine the butter, brown sugar and 1/2 cup granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium-high speed until light and fluffy, scraping the sides of the bowl as needed, about 2 minutes.
  • Add the egg and beat until incorporated. Add the vanilla extract, citrus zest, citrus juice and food coloring and beat until incorporated. Decrease the mixer speed to low and add the flour mixture, beating until just combined. Cover the bowl and refrigerate until firm, at least 2 hours and up to overnight.
  • Put the confectioners' sugar in a small bowl and the remaining 1/2 cup granulated sugar in another small bowl. Scoop tablespoons of the chilled dough and roll into balls. Toss each ball in the granulated sugar first, then in the confectioners' sugar, coating them very generously and thoroughly. Arrange the balls about 1 inch apart on 2 baking sheets (you should have 24 balls). Refrigerate for 20 minutes.
  • Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
  • Bake until the cookies spread, the tops crack and the edges are firm, 14 to 16 minutes. Let cool on the baking sheets for a few minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.

LEMON CRINKLE COOKIES

Lemon Crinkle Cookies image

These cookies are bright with sweet lemony flavor, thanks to plenty of lemon zest, lemon juice and a generous coating of confectioners' sugar. The key to success with these cookies is chilling the dough before rolling it into balls. This helps slow down the spreading, giving the tops a chance to crinkle and crack during baking. Tossing the chilled dough balls in granulated sugar before coating in confectioners' sugar also helps the coating adhere, so the cookies are sweet and crunchy on the outside and soft and chewy inside.

Time 3h40m

Yield 24 cookies

Number Of Ingredients 9

2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg
2 tablespoons finely grated lemon zest, plus 1/4 cup lemon juice (about 2 medium lemons)
6 to 8 drops yellow food coloring, optional (for brighter yellow color)
1/2 cup confectioners' sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Beat 1 cup of the granulated sugar and the butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, scraping the sides of the bowl as needed, about 2 minutes.
  • Add the egg and beat until incorporated. Add the lemon zest, lemon juice and food coloring if using and beat until incorporated. Reduce the mixer speed to low and add the flour mixture, beating until just combined. Cover the bowl and refrigerate until firm, at least 2 hours and up to overnight.
  • Line 2 baking sheets with parchment. Put the confectioners' sugar in a small bowl and the remaining 1/2 cup granulated sugar in another small bowl. Using a 1-tablespoon scoop, portion the dough and roll into balls. Toss each ball in the granulated sugar, then in the confectioners' sugar, coating it generously and thoroughly. Arrange the balls about 1 inch apart on the prepared baking sheets (you should have 24 balls). Refrigerate for 20 minutes.
  • Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Bake until the cookies spread, the tops crack and the edges are firm, 14 to 16 minutes. Let cool on the baking sheets for 5 minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.

These cookies are always a part of cookie plates at our house! They also make a great hostess gift, wrapped with a ribbon!

Provided by Anna Olson

Categories     bake,birthday party,chocolate,christmas,dessert,kid-friendly,Party Favourites

Yield 36 servings

Number Of Ingredients 12

½ cup unsalted butter
10 oz bittersweet or semisweet chocolate, chopped
4 egg, room temperature
1 ½ cup sugar
2 tsp vanilla extract
1 tsp instant espresso powder
coffee extract
½ cup all purpose flour
½ tsp baking powder
¼ tsp salt
6 oz white chocolate, chopped
⅔ cup icing sugar

Steps:

  • Over a pot filled with 2 inches of simmering water, place a metal or glass bowl and add butter. Stir until melted halfway and add chopped bittersweet chocolate. Stir until just melted and remove from heat. Set aside.
  • Whip eggs with sugar, vanilla and espresso powder with electric beaters or in a mixer fitted with the whisk attachment, until pale and thick, about 5 minutes. In a separate bowl, combine flour, baking powder and salt.
  • Whisk melted chocolate into egg mixture until incorporated. Whisk in flour mixture and stir in white chocolate chunks. Cover batter with plastic and chill for at least 4 hours before baking.
  • Preheat oven to 325 F.
  • Spoon cookie dough by tablespoonfuls (or teaspoonfuls for dainty cookies) and roll gently to shape into a ball. Roll cookie in icing sugar and place on a parchment-lined or greased cookie sheet, leaving 2 inches between cookies.
  • Bake for 18-20 minutes. To test doneness, lift a cookie off the tray - if it comes off cleanly, then cookies are done.
  • Cool cookies before storing. Cookies will keep up to a week at room temperature in an airtight container. Batter also freezes well.

60g cocoa powder, sieved
200g caster sugar
60ml vegetable oil
2 large eggs
180g plain flour
1 tsp baking powder
2 oranges, zested
2 tsp mixed spice

Estimated Reading Time 7 mins
  • Sweet potato fries for french fries. French fries can hit the spot — both in the satisfaction department and the AGE production department, as they’re fried and salty.
  • Sprouted bread for white bread. When refined carbs integrate with protein, it causes the formation of AGEs. AGEs have a direct effect on chronic diseases as well as the aging process.
  • Honey or fruit for white sugar. Sugar is one of the infamous contenders to unwanted skin concerns like acne. As mentioned above, sugar contributes to the formation of collagen-damaging AGEs.
  • Olive oil or avocados for margarine. Take it easy with that butter knife. Older studies have shown that those who don’t consume margarine or butter have less skin damage and wrinkles than those who do.
  • Stick with poultry for processed meats. Hot dogs, pepperoni, bacon, and sausage are all examples of processed meats that can be harmful to the skin. These meats are high in sodium, saturated fats, and sulfite, which can all dehydrate the skin and weaken collagen by causing inflammation.
  • Feel out dairy. Got mixed feeling about dairy? Science does, too. Some have seen positive skin changes from dropping dairy. Others have seen no significant difference at all.
  • Think twice about soda and coffee. What soda and coffee do to your health have more to do with sleep than skin. First, both are high in caffeine, which, if you drink frequently throughout the day to night, may affect your sleep.
  • Drink alcohol in moderation. Alcohol can cause a host of problems when it comes to the skin, including redness, puffiness, loss of collagen, and wrinkles.
  • Avoid cooking in high heat. Some polyunsaturated oils high in omega-6 fatty acids, like corn or sunflower oil, can cause harmful free radicals and can increase inflammation levels.
  • Switch out rice cakes. While rice cakes are usually touted as a good snack, this isn’t the case for the skin. Rice cakes have a high glycemic index and can cause spikes in blood sugar levels.
